It is also believed that eating duck in Autumn helped to expel pathogenic heat to restore the balance of yin and yang in the body, hence enhancing one’s health.</p>

<p dir="ltr" style="text-align: justify;">Still, there’s more to mooncakes than just a yearly fad. It can be considered the hallmark tradition of the festival, as sharing and eating mooncakes signifies completeness and unity. If there are kids in the family, or you’re looking for something fun to do, gather around some family members to make your own mooncakes to make the gathering more special.</p>

However, during Mid-Autumn, it’s encouraged to consume more pears as a display of your desire for unification and to stay together with your loved ones.</p>
<p dir="ltr" style="text-align: justify;">While Chinese pears are already sweet and enjoyable as they are, pear soups with pork ribs and snow fungus make for a gut-warming comforting drink to have with your main dishes.</p>

<p dir="ltr" style="text-align: justify;">The origins for why exactly pumpkins became popular to have during Mid-Autumn isn’t exactly clear. Some believed it was due to poorer people being unable to afford mooncakes, substituted it with pumpkins instead. Others believed that the pumpkin’s golden and round appearance brought good health to those who ate it.</p>
<p dir="ltr" style="text-align: justify;">Either way, Mid-Autumn falls during the mature period for pumpkins, and like any seasonal fruit, they are freshest and the best tasting during this time. Be it in stews, braised dishes or in desserts, they make for the perfect addition to the dinner table.</p>

Due to the warm wet climate and abundance of food in the form of rice paddies, river snails are plentiful in southern China.</p>
<p dir="ltr" style="text-align: justify;">While they’re eaten due to their abundance, they also bring about health benefits such as brightening the eyes. As long as they’re cooked properly with plenty of medicinal herbs, there’s no worry about any unpleasant odour.</p>

It’s rather surprising; really, how long it took for our first distillery to appear, considering how much of Singapore’s nightlife centres around drinking?</p>

Of course, it’s impossible to have gin without juniper berries, with a twist in the form of Indian Amchoor—unripe green mango in a powdered form—which adds an extra citrus note to it, and of course, what really makes it Singaporean, Orchid flowers.</p>
<p dir="ltr" style="text-align: justify;">To be more specific, it’s the dried stems of the Dendrobium Orchid—more commonly known as the Chinese immortality herb, Shi Hu, and the vanilla beans extracted from the fruit of the Vanilla Orchid.</p>

<p dir="ltr" style="text-align: justify;">The resultant taste is unlike your regular varieties. It’s sweet from the vanilla and liquorice while giving a full-bodied creamy mouthful that goes even further with a dash of tonic and a squeeze of orange for a citrusy lift.</p>

<p dir="ltr" style="text-align: justify;">Specialising in delectable Sichuan cuisine, they cater to caters to meat-lovers with their Northern-style grilled meat and vegetable skewers, but we felt the real star of the shop was definitely their la mian.</p>

<p dir="ltr" style="text-align: justify;">There are over 10 different varieties of noodles to choose from, all of which were specially put together by the owner. While like any other eatery, you can pick whatever you want from the menu, your orders are customisable to your own liking—spice level, soup base, you name it, they’ll do it.</p>

<p dir="ltr" style="text-align: justify;">The signature dish is, aptly named, their Signature Beef Combination Noodle (S$16.50) that comes with ribeye, tendon and shank, served with a Mala soup base. The soup had a strong, robust, full body flavour from the broth alone, with an added kick from the spice without the painful choking sensation normally associated with Sichuan spice. While normally soups tend to play second fiddle to most other components, here it’s plain as day that the soups themselves are what brings each bowl to life.</p>
<p dir="ltr" style="text-align: justify;">They’re also generous with their portion sizes. There’s no hiding the small mound of meat in the bowl. The ribeye was so tender that it was just falling apart, while the tendons were the perfect complement to the soup.</p>

<p dir="ltr" style="text-align: justify;">It’s not hard to understand why the Sichuan Crispy Chicken Noodle (S$12.50) is one of the most popular dishes amongst regulars at Chuan Grill &amp; Noodle Bar.</p>
<p dir="ltr" style="text-align: justify;">Crispy, juicy and satisfying, it’s a bowl of comfort food that’s been elevated by the chef’s personal touch. It’s also a much lighter bowl that makes it easier to eat, though while it’s not as heavy, it’s just as hearty as the rest.</p>

<p dir="ltr" style="text-align: justify;">Other innards also include Air Flown Beef Tripe (S$15.90) and Fresh Aorta (S$16.90) — pig arteries, for the uninitiated — all of which are freshly sourced and painstakingly prepared before being air-flown over to best maintain quality and freshness.</p>

Fortunately, Uncle Kiisu in Novena Square 2 offers up an affordable yet impressive plethora of dishes that seeks to please all sorts of foodies.</p>
<p dir="ltr" style="text-align: justify;">This relatively new establishment serves up fusion food where West meets modern Asian cuisine. <p dir="ltr" style="text-align: justify;">Next was a plate of KiiWings (S$7.80), which was the furthest thing from your regular fried chicken. The wings are tossed in a mixture of soy and sambal and sprinkled with Japanese seasoning and fried garlic shards.</p>
<p dir="ltr" style="text-align: justify;">It’s really hard not to suck the meat off the bones because of how well seasoned the wings were. Crispy, juicy and succulent, the flavours oozed out with every single crunch of the fried exterior.<br />

This was, hands down, the single best bite we’ve taken, and perhaps in ever too. From the beautiful crackling skin to the fragrant fat and the soft tender meat, everything was melty and oozy and just absolutely divine.</p>
<p dir="ltr" style="text-align: justify;">Touted as their number one signature dish, we definitely understand why.</p>

A simple and classic pun for a dish name, it was also the dish that we were most looking forward to. With cold matcha noodles served in truffle soba sauce alongside hotate and ikura, what more could we have asked for?</p>
<p style="text-align: justify;">When it arrived, the smell of truffle wafted through the air and was definitely not hiding. We took a couple of generous slurps and fully enjoyed the way the delicate flavours played off one another.</p>

Linked with<em> yumcha</em><em>,</em> it’s normally the act of getting together with friends and family over breakfast or brunch.</p>
<p dir="ltr" style="text-align: justify;">Though it’s not so much a fine dining affair, here in Singapore dim sum has morphed into a casual, on-the-go munchie or a late-night supper option, so dining in a <em>chalau</em> might seem intimidating. Fear not, here are some basic dim sum etiquette to save you from receiving death stares from locals in Hong Kong.</p>
<p dir="ltr" style="text-align: justify;"><span id="more-168102"></span></p>
<p style="text-align: justify;"><span style="font-size: x-large;">CHOPSTICKS</span></p>
<p dir="ltr" style="text-align: justify;">Perhaps though this seems like common sense, accidental faux pass still happens. From basic things to not leaving your chopsticks sticking out of your bowl, to leaving little bits of food stuck to your chopsticks before taking food from the general plate, these are all considered extremely impolite.</p>
<p dir="ltr" style="text-align: justify;">As much as possible, using serving chopsticks and spoons is preferred. Should chopsticks prove to be a hassle to use, it’s perfectly alright to request for a fork, rather than to spear your food with a chopstick.</p>

<p dir="ltr" style="text-align: justify;">As tempting as it is to order a lot of food, the name “dim sum” means to touch the heart, therefore portion sizes are small to better appreciate the flavour, rather than to spoil the appetite. It’s also much better to enjoy the food while it’s still hot, and rest assured should you still feel hungry, chances are there’s a dim sum trolley nearby.</p>
<p style="text-align: justify;"><span style="font-size: x-large;">HIERARCHY</span></p>
<p dir="ltr" style="text-align: justify;">Like any other Chinese setting, the elders take priority. When it comes to serving tea, it’s done so in the order of age before finally helping yourself to it, whereas when it comes to food, allow the turntable to turn towards the eldest first, before it rotates back to you.</p>

<p dir="ltr" style="text-align: justify;">When it comes to dim sum, there are many variations and whether you do it traditionally or with a little twist, no one can truly fault you. The Cantonese version focuses more on the freshness of the ingredients used, and how best to bring out the natural flavours.</p>
<p dir="ltr" style="text-align: justify;">Do try to reserve the need to add chilli and appreciate the flavour as the chef intended it to be. Only should you really need a kick, ask for their XO chilli instead of the regular sweet chilli.</p>

It’s not a sign to tell the pourer to hurry up, but rather represents the bent knees of a kowtow, and this practice dates back to olden Chinese dynasties.</p>
<p style="text-align: justify;"><span style="font-size: x-large;">TEA</span></p>
<p dir="ltr" style="text-align: justify;">If you’re out of tea, signal to the waters to top up on water by placing the lid on the handle and the side of the teapot. Should you find it difficult to balance the lid, feel free to place it on the plate the teapot is served on.</p>

<p dir="ltr" style="text-align: justify;">In certain places, orders are taken through dim sum trolleys, but in others, they’re very much like western restaurants where a server attends to your table. What’s different is that every table has their assigned waiter, and it’s best to keep track of who they are so you know who to turn to, rather than to call the manager over for a simple request of ice water.</p>
<p style="text-align: justify;"><span style="font-size: x-large;">WASHING UTENSILS</span></p>
<p dir="ltr" style="text-align: justify;">Though less so in Singapore, it’s very much prominent in Hong Kong to wash your utensils before you begin your meal. Cheap tea is provided for you to rinse and scrub your utensils with.</p>
<p dir="ltr" style="text-align: justify;">You do so by pouring a bit of tea over your chopsticks and spoon into your bowl and rubbing them a little, followed by turning your teacup on its side and scrubbing it in the bowl. A shared basin is provided to discard the used tea in.</p>

<p dir="ltr" style="text-align: justify;">Thanks to a collaboration with between Haidilao International Holding Ltd. and Panasonic Corporation, this joint venture sees to the world’s first eatery with a fully automated kitchen and staff. That’s right; from taking orders, preparations and delivering raw meat and vegetables to the table, the robots do it all.</p>

This automation will also lower labour cost and boost efficiency, boosting Haidilao’s plan to expand worldwide. It is, after all, difficult to expand to that size in terms of manpower alone, so this shift away from manual labour is really just part and parcel to reach their goal of 5,000 outlets worldwide.</p>
<p dir="ltr" style="text-align: justify;">What do you think about it? Sooner or later, the only other human faces you’d see in Haidilao are just your fellow diners. Not going to lie though, we’d love to see a robot fling around some hand-stretched noodles too.</p>

<p dir="ltr" style="text-align: justify;">If you haven’t already heard about Indomie’s latest salted egg flavour by now, where have you been?</p>
<p dir="ltr" style="text-align: justify;">It’s no surprise that everyone’s been going gaga over it, doing their best to snag one of these elusive packets of curly fried noodles. Released under the Premium Collection, it was originally available only in Indonesia, but now you can find it in 22 Fairprice Finest across the country at S$1 per packet.</p>
<p dir="ltr" style="text-align: justify;">Still though, is it still worth that calorie quota? We did a quick taste test and here&#8217;s what we think.</p>

<p dir="ltr" style="text-align: justify;">Upon opening a packet of regular Indomie and the special salted egg version side by side, we noticed the difference in the type of noodles used. While regular Indomie has thinner noodles, the salted egg version has thicker flat noodles, which we felt was much more suited for sopping up all that salted egg sauce.</p>
<p dir="ltr" style="text-align: justify;">It comes along with a packet of dry seasoning as well as what we assumed to be the salted egg sauce itself, which was supposedly made up of salted egg and synthetic salted egg flavouring.</p>
<p dir="ltr" style="text-align: justify;">It smelt incredibly odd, almost foul in the way boiled eggs do when they’ve been left out for too long, though thankfully after mixing in the noodles the smell went away.</p>

<p dir="ltr" style="text-align: justify;">Instead, the salted egg fragrance became a little more prominent, but “a little” was as far a superlative we could use to describe it.</p>
<p dir="ltr" style="text-align: justify;">Taste wise, we could only say that we were disappointed. If you were expecting any of the luscious silk rich salted egg sauce normally found in zi char restaurants, sorry but you won&#8217;t find that here.</p>
<p style="text-align: justify;">While the sauce did make for a much creamier texture and had an added fragrance not found in regular Indomie, there was a distinct artificial aftertaste that grew more foul as you ate more of it. The only other flavour we could taste was the copious amount of MSG that’s signature to any one of Indomie’s instant noodles.</p>

<p style="text-align: justify;">A couple of bites in, we decided to give up. Though the regular Indomie is equally if not saltier and MSG loaded, we’d rather have that over this salted egg version any day.</p>
<p dir="ltr" style="text-align: justify;">If you still want to try it, it’s now available across 22 Fairprice Finest outlets so you don’t have to haggle on Carousell nor do you have to pay a premium for Airfrov because as premium as it claims to be, we all know better than that.</p>

<p>Taking a scoop of the creamy avocado cheesecake mousse revealed the chocolate sponge cake underneath. The addition of the &#8220;seed&#8221;—a macadamia nut praline—brought the cake to a whole new level, adding an element of savoury to it. This is the kind of cake you bring home to mama.</p>

<p dir="ltr" style="text-align: justify;">Perhaps one of the most popular, as well as the most innovative dish, their Smoked Duck Lemak Chilli Padi Pasta (S$18.90) pays homage to the traditional Ayam Masak Lemak Cili Padi. Just like the original, this dish is fiery, much so that the waiters even warned us as we ordered it.</p>
<p dir="ltr" style="text-align: justify;">This dish is a super savoury coconut-based gravy, with warm pasta neatly twirled in the middle, and generously topped with smoked duck, arugula and cherry tomatoes. Don’t be so quick to dismiss the vegetables. The gravy is packed full of heat that’s only quelled by the fresh tart vegetables. The smoked duck meat was tender and juicy, though the smoked flavour was a little overwhelmed by the gravy.</p>

It was one of the more highly anticipated dishes online, and needless to say, we were pretty excited about it too. However, the appearance of the dish was rather underwhelming, with most of the ingredients hidden under the soup.</p>
<p dir="ltr" style="text-align: justify;">We weren’t too impressed by the taste either. While the noodles were firm and al dente, and the eggs lusciously soft and creamy, the soup itself was much saltier than the usual chicken based broth with little else to it.</p>

<p dir="ltr" style="text-align: justify;">Despite being a noodle-focused restaurant, their rice dishes delivered fairly well too. The last dish we ordered was their Noosh Bulgogi Chicken (S$14.90). It’s a classic bowl of stir-fried chicken in teriyaki sauce served over rice. Unpretentious and simple, the warm bowl of rice was nothing short of comforting and soothing.</p>
<p style="text-align: justify;">The sauce to rice ratio was also just right, and made for a moist savoury bite, with honest chunks of chicken and sticky caramelised onions.</p>
