Very soon after, they became our favourite ramen shop in Singapore and we are hopelessly hooked to those marvellous bowls of ramen.</p>
<p style="text-align: justify;">Founded by Chef Raymond Tan—the Chef Owner of renown omakase restaurant, Hiryu—Shinsho Ramen is an <a href="https://www.ladyironchef.com/2022/04/shinsho-ramen-omurice/" target="_blank">affordable ramen joint</a> with a carefully-thought menu of interesting appetizers and side dishes, and a very stellar ramen selection that will leave even the connoisseurs mind-boggled.</p>

<p style="text-align: justify;">But let&#8217;s first talk about the star of Shinsho—which is the paitan ramen. The broth is standardized and they are all paitan-tonkotsu. Boiled for more than 24hrs with chicken carcasses and pork bones, look forward to a full-bodied milky white broth that is creamy, sweet and extremely satisfying. We&#8217;ve always been more drawn to pork bone broth, but Shinsho&#8217;s version is a really impressive balance of chicken and pork, with neither being overpowering; it&#8217;s a really smooth flavour that will please anyone.</p>
<p style="text-align: justify;">The ramen menu consists of the regular options such as the Aged Soy Sauce (S$14.90), Spicy Red Miso (S$16.90), Homemade Black Garlic (S$15.90) and Special Black Truffle (S$17.90). All are very affordable and comes in a reasonable portion for one, with an assortment of toppings such as cha siu, bamboo shoots, grilled baby corn, spring onion and hanjuku egg.</p>

<p style="text-align: justify;">Shinsho Ramen also has other unique and fusion flavours such as Mala Ramen and Chashu Curry Tsukemen. Be warned, though. The Mala Ramen is super spicy and it is not for the faint-hearted.</p>

<p style="text-align: justify;">Want a more leveled-up version? There is a special ramen menu which comprises some pretty lavish versions: Half Rock Lobster (S$48), Pork Ribs with Teriyaki (S$19.90, and our favourite Kuroge Wagyu A4 (S$54).</p>
<p style="text-align: justify;">The wagyu ramen was the highlight of our meal and it deserves another trip down. 2 slices of A4 wagyu (~110g) are added to the bowl raw, and the boiling broth will cook the wagyu slices lightly, giving it a tender texture with every bite melting in your mouth.</p>

<p style="text-align: justify;">The marriage of paitan-tonkotsu broth and premium wagyu slices is brilliant, and this Kuroge Wagyu A4 ramen is definitely the best bowl of ramen we&#8217;ve had in Singapore.</p>
<p style="text-align: justify;">Who needs cha siu in your ramen when you can have wagyu slices?! Trust Chef Raymond and his team to always take things up a notch.</p>

<p style="text-align: justify;">Instead of your usual tortilla wrap, Chef Raymond sourced for good seaweed slices, coated them with a housemade batter, then deep-fried the seaweed which will then become the shells for the taco.</p>
<p style="text-align: justify;">And the fillings are nothing you would expect: mala crayfish, crab tobiko, salmon avocado, wagyu cheese curry, torched mentaiko prawn and scallop with caviar. They are nothing like your usual tacos; these modern fusion tacos both photogenic and unbelievably delicious. Extra points for creativity!</p>

Mantou is being deep-fried, and tucked with a choice of fried pork loin, sliced roasted pork belly and fried bread crumbs chicken—all at only S$4.90 each. If ramen isn&#8217;t for you, perhaps you can go for one of each buns. The kids will love this too!</p>
<p style="text-align: justify;">Shinsho Ramen has plans to open more outlets in 2022 and we are definitely keeping our fingers crossed that they will open an outlet nearer to our home. Until then, you can find them at SingPost Centre or GR.ID Mall.</p>

<p>Shinsho&#8217;s paitan ramen is made from boiling and simmering a large amount of whole chicken, pork bones, chicken legs, and several kinds of vegetables over more than 8 hours. The result? A creamy, collagen-rich consistency with deep, savoury flavours.</p>
<p>There are 8 ramen on Shinsho Ramen&#8217;s menu:</p>

<p>For delivery, you can opt for Shinsho Ramen&#8217;s raw noodle pack and cook the ramen yourself. The ramen ingredients, noodles and paitan soup broth will be packed separately and all you have to do is to cook the noodles in boiling water and heat up the soup broth which comes in a vacuum-packed bag. It&#8217;s a great way to enjoy piping hot ramen at the comfort of your place.</p>
<p>There are also premium ramen options including Half Rock Lobster Ramen and Kuroge Wagyu Ramen.</p>

<p>We absolutely loved the spicy aioli dip which came with the fried chicken skin.</p>
<p>While we didn&#8217;t quite like the roasted pork belly which was too lean and dry, we thoroughly enjoyed the Homemade Wagyu Gzoya.</p>

<p style="text-align: justify;">We first tried Kanada-ya&#8217;s ramen in London back in 2016 and it is our must-visit restaurant in London ever since. For the uninitiated, Kanada-ya specialises in Tonkotsu ramen. Their rendition is aromatic, authentic and very very satisfying.</p>

<p style="text-align: justify;">Sadly, ramen isn&#8217;t the cheapest. One bowl could easily set you back by S$15 or more. But, finding one that&#8217;s both affordable and good isn&#8217;t an impossible task. In fact, we&#8217;ve found 10!</p>

<p style="text-align: justify;">Singapore actually has quite a number of eateries and stalls that do great ramen priced below S$10. Some of these places are even run by Japan-trained cooks, so you can expect ramen of superb quality.</p>

<p style="text-align: justify;">One of the OG stalls to sell ramen in a hawker centre, Buta Kin is one of the reasons people flock to <a href="https://tidbitsmag.com/beauty-world-food-centre/">Beauty World Food Centre</a>. This stall serves up a range of Japanese dishes, from ramen to curry rice.</p>
<p style="text-align: justify;">Their Special Tonkotsu Ramen (S$6.90) sees straight, doughy noodles drowned in broth made from pork &amp; chicken bones and chicken feet. The bowl comes with three tender slices of cha shu, a hanjuku egg and black fungus.</p>
<p style="text-align: justify;">They also offer Tonkotsu Black Ramen (S$6), which is infused with aromatic black garlic oil.</p>

<p style="text-align: justify;">If we were to do a blindfolded taste test, we probably wouldn&#8217;t be able to differentiate Ramen Taisho&#8217;s ramen from the ones churned out at a restaurant. This hawker stall in Maxwell is run by a married couple, Hock Soon and Kalene.</p>
<p style="text-align: justify;">With years of travelling around Japan to learn the art of ramen up his sleeve, Hock Soon is certainly not afraid to show off what he&#8217;s learnt.</p>
<p style="text-align: justify;">The Black Garlic Ramen (S$7.80) is spiked with robust black garlic oil while the Salted Egg Tonkotsu Ramen (S$8.80) sees an intriguing blend of briny essence and creaminess.</p>

<p style="text-align: justify;">Ang Mo Kio may not be the first to come to mind when one thinks of authentic ramen, but little did we realise—having chanced upon this humble hole-in-a-wall—that it is indeed very possible to find great food (that doesn’t cost an arm and a leg) in even the most unassuming of places.<br />

<p style="text-align: justify;">Feeling in the mood for something a little more unusual, we opted for the Butashoga Ramen (S$8.90) which essentially consists of everything you would typically expect in a bowl of pork-based ramen—except with pulled pork instead of the usual chashu.</p>
<p style="text-align: justify;">Supposedly healthier due to the lack of fat, what we particularly enjoyed was the fact that the pork was incredibly well flavoured and seasoned. The shreds of pork were tender and brimmed with a robust and deep pork taste.</p>

<p style="text-align: justify;">Paired with the rich pork broth, the Butashoga Ramen was just a delight to have. Takagi Ramen succeeded in ensuring that the pork broth was neither overwhelmingly rich nor salty, and we were pleasantly surprised with how the distinct flavours of the pulled pork and pork broth blended well together.</p>

As for the Chashu, you may feel slightly disappointed when you see a singular piece but throw away all of such judgment because the meat was tender and had a melt-in-the-mouth texture.</p>

Like the Tonkotsu, it had the same ingredient makeup except for the addition of chilli oil, Ajitamago and a scoop of spicy minced pork. For us, we did not feel that the broth was particularly spicy but it further enriched the taste of the broth.</p>

On top of warm Koshihikari rice is pan-seared foie gras, succulent house-made luncheon from Nagano pork and fried quail egg.</p>
<p style="text-align: justify;">Guests also have alternatives such as Oxtail Ramen (S$21++), Mini Chirashi Don (S$18++) and a range of sides including Beef Tayaki Sliders (S$15++) and Pork Trotter Korokke (S$12++).</p>

<p style="text-align: justify;">But now, you do not need to make a trip all the way to Japan just to have a taste of this famed ramen, for they are opening a stall right here in sunny Singapore come October 2016. We can foresee snaking lines and instant popularity for Tsuta Ramen.</p>

<p style="text-align: justify;">The quiet little stall in Tokyo sees queues from 6am daily, and we are pretty sure it won’t be any less here in Singapore.</p>
<p style="text-align: justify;">Founded by Chef Yuki Onishi, Tsuta Ramen&#8217;s signature firm noodles are made with four types of whole wheat flour. The base of the soy broth is made with three types of shoyu: shoyu soba; shio soba; and miso.</p>
<p style="text-align: justify;">One of the signature dishes from Tsuta Ramen is their Yakibuta Shoyu Soba, which incorporates soy sauce and a mix of seafood and chicken broth. It is then topped with classic slices of chashu pork and bamboo shoots. There are other various shoyu and shio varieties on the menu as well.</p>

<p style="text-align: justify;">It is said that the chefs who will helm the Singapore outlet will be using the same special soy sauce and premium ingredients that its Japanese counterpart uses, hence upholding the high standards.</p>
<p style="text-align: justify;">Tsuta Ramen is also said to be the cheapest Michelin-starred restaurant you can dine in. In Japan, a bowl of their ramen goes for ¥1,100; that’s approximately S$14. And we are hoping it won&#8217;t be crazily marked up here.</p>

<p style="text-align: justify;"><span id="more-30944"></span>Menya offers three different types of ramen &#8211; &#8216;White&#8217;, &#8216;Red&#8217; and &#8216;Black. The classic is the &#8216;White&#8217; Ramen, a hearty bowl of springy noodles in a thick and rich tonkatsu broth. My favourite &#8211; and what I would go back to enjoy time and time again &#8211; is the &#8217;Red&#8217; Ramen which comes with a spicy and intense broth. The &#8216;Black&#8217; Ramen with garlic and onions, on the other hand, is a little too oily for my liking.</p>

<p style="text-align: justify;">Every branch has the same ramen soup bases, but they serve different toppings. The aburi duck is good, but it pales in comparison when the toothsome kakuni (braised pork belly) comes into the picture. The same goes for the chashu. It is good, but I have had better ones elsewhere, so whenever I dine at Menya Musashi, I always make sure to have the Red Ramen with Kakuni.</p>
<p>One of the reasons why Menya Musashi&#8217;s ramen is so special is because of the broth. It is boiled for more than nine hours, and the chef has to stir it every half an hour to prevent the bottom from being burned.</p>

<p style="text-align: justify;">There are mixed reviews about Menya Musashi. There are many supporters who would rave about the ramen and go as far as to say that it is one of the best ramen in Singapore. There are also others who find it over-hyped and do not understand why it is so popular. I appreciate Menya Musashi because the ramen is always consistently good. And now that it is available in Singapore, I am glad that we no longer need to fly to Tokyo just to satisfy our ramen cravings.</p>

<p style="text-align: justify;"><strong>Ippudo</strong> is one of Japan&#8217;s top ramen shops and there was a hype when it opened in 2009. Even till today, there are often long queues during lunch and dinner.</p>
<p style="text-align: justify;">The founder of Ippudo, Shigemi Kawahara, is known as the Ramen King after three consecutive first place wins on a nationwide ramen-making competition where the top ramen chefs compete to create the best ramen.</p>
<p>Does Ippudo ramen at Mandarin Gallery live up to the hype?</p>
<p style="text-align: justify;"><span id="more-19502"></span><a href="http://cumidanciki.com/">Ciki</a> and I were there for dinner on a weekday, and it was fortunate that we went early as there was a long queue waiting outside shortly after. Upon entering Ippudo, I was pleasantly surprised by the interior. Unlike the usual ramen places, the dimly lit restaurant at Mandarin Gallery, <a href="http://www.ladyironchef.com/2010/09/singapore-orchard-restaurants/">Orchard road</a> has a modern and classy vibe.</p>
<p style="text-align: justify;">Besides ramen, Ippudo&#8217;s menu also has other side dishes like Agedashi Tofu ($10), Gyoza ($6), Chashu Hotplate ($8) and Tonkotsu Croquette ($12). After a quick glance at the menu, we ordered the classic Shiromaru Motoaji ($15) &#8211; original recipe tonkatsu soup served with Hakata-style thin noodles, rosu chashu, cabbage and spring onion; and Karaka-Men ($17) &#8211; Ippudo pork broth with special spicy miso and ground pork.</p>
<p style="text-align: justify;">The chashu, oh the chashu.</p>
<p style="text-align: justify;">At Ippudo, the Shiromaru Motoaji ($15) comes with a gorgeous piece of rosu chashu (pork loin). The Hakata-style noodles are springy and delightful, while the broth is refreshing and very addictive.</p>
<p style="text-align: justify;">It is one of those moments where you find it hard to explain how something so simple can taste so delicious.</p>

<p style="text-align: justify;">The Karaka-Men ($17), on the other hand, has a spicy kick to it and is no less addictive than the Shiromaru.</p>
<p style="text-align: justify;">Like other ramen shops, Ippudo has its own regulars who swear by it and visit on a regular basis to satisfy their ramen cravings. While there are also others who felt that it is overrated and not as good as the one in Japan.</p>
<p style="text-align: justify;">I think it all boils down to knowing how to manage your expectations. Ippudo has always been known as one of the best ramen shops in Japan, and this probably explains why some people go there with ridiculously high expectations and end up being disappointed.</p>
<p style="text-align: justify;">For me, there is no doubt that <strong>Ippudo at Mandarin Gallery</strong> is one of the <em>best ramen restaurants in Singapore</em>. The question is, are you willing to queue up for it?</p>

<p style="text-align: justify;">I first knew of <strong>Keisuke Tokyo Ramen at Parco Marina Bay</strong> when I went to <a href="http://www.ladyironchef.com/2010/08/nantsuttei-ramen-best-ramen-singapore/">Nantsuttei Ramen</a> for lunch. One of my favourite hobbies is to read restaurants&#8217; menu, and I remember that they had an ebi-based broth (not Shio, not tonkatsu, not shoyu) ramen when I took a glance at their menu.</p>
<p style="text-align: justify;">A while back, I went to Keisuke Tokyo for lunch, specifically for their award-winning ebi ramen, only to find out that they&#8217;ve removed it from the menu late last year.</p>
<p style="text-align: justify;">Is Keisuke Tokyo <em>still</em> worth going? Is Keisuke Tokyo the <span style="text-decoration: underline;">best ramen restaurant in Singapore</span>? Just how good exactly is Keisuke Tokyo to win the prestigious title of Ramen King in TV Tokyo&#8217;s Ramen Champion Series?</p>
<p style="text-align: justify;"><span id="more-18010"></span>Maybe it&#8217;s just me, but I don&#8217;t think so.</p>
<p style="text-align: justify;">The only ramen that shouted &#8220;EAT-ME&#8221; was the Kani ramen (crab stock), but we thought that it was unremarkable. While it was interesting to try the crab stock, the Watarikani Ramen ($15.8) wasn&#8217;t out-of-this-world good. The Tonkatsu Ramen ($13) &#8211; see the next picture &#8211; was decent, but not enough to make me go all the way to Parco Marina Bay just to eat this.</p>

<p style="text-align: justify;">There are only a few things in the kitchen&#8217;s arsenal, but it does a pretty good job of accessorising them with different toppings and soup bases to make the menu appear bigger than it is. That&#8217;s not to say that there aren&#8217;t things to order. Besides the many variations of ramen ($11-15), Keisuke Tokyo also has side dishes like Karaage ($6), Yaki Gyoza ($1 each), Tonkatsu ($9) and Tori Teriyaki ($6) on the menu.</p>
<p style="text-align: justify;">Would I go back to <strong>Keisuke Tokyo</strong> for their ramen? I&#8217;m not sure. There are after-all many <a href="http://www.ladyironchef.com/2010/04/best-japanese-restaurant-singapore/">Japanese restaurants</a> in Parco Marina Bay at Millenia Walk to try.</p>
<p style="text-align: justify;">That said, Keisuke Tokyo remains one of the more <em>popular ramen places in Singapore</em>, so if you haven&#8217;t been there before, maybe you would like to drop by for a visit and let me know if I missed out on anything.</p>

<p style="text-align: justify;">It has been a while since my last visit to Holland Village, and I was pleasantly surprised to see a couple of new faces. My list of <a href="http://www.ladyironchef.com/2010/07/18/guide-to-holland-village-restaurants-singapore/">restaurants in Holland Village</a> is slightly outdated now, I will be updating it soon.</p>
<p style="text-align: justify;">Anyway, our main objective that night was <em>2am Dessert Bar</em>, so we decided to have a light dinner at <strong>Yoshimaru Ramen Bar</strong>.</p>
<p style="text-align: justify;"><span id="more-13793"></span><span style="text-decoration: underline;">Yoshimaru Ramen Bar</span> is famous for their <em>Hakata Ramen</em>, or known as Tonkotsu (pork bone) Ramen. I don&#8217;t really know much about ramen, but from what I understand, the broth for Tonkotsu ramen is made from boiling pork bones over high heat for many hours. The result is hearty pork flavoured soup with ultra thin ramen.</p>
<p style="text-align: justify;">I had the Traditional Hakata Ramen ($11), and it was excellent. With a gorgeous runny boiled egg and the mouth-watering char siu, the bowl of rich and flavourful ramen was the perfect thing for a rainy night.</p>

<p style="text-align: justify;">We also had the Shabu-shabu Pork Ramen ($14), which came with thin pork slices instead of char siu. There are a few choices on <strong>Yoshimaru Ramen Bar&#8217;s</strong> menu, you can also go for the Moridakusen Ramen ($15) which has all the toppings, or the spicy Yoshimaru Tan Tan Mian with peanut sauce and chilli oil.</p>

<p style="text-align: justify;">My favourite <em>ramen places in Singapore</em> are still <a href="http://www.ladyironchef.com/2010/04/23/tampopo-japanese-ramen-restaurant-singapore-takashimaya/">Tampopo restaurant</a> and <a href="http://www.ladyironchef.com/2010/09/28/ramen-santouka-best-ramen-singapore/">Ramen Santouka</a>, but <strong>Yoshimaru Ramen Bar</strong> is a pretty decent place to have a quick dinner if you are at <a href="http://www.ladyironchef.com/2010/07/18/guide-to-holland-village-restaurants-singapore/">Holland Village</a>. And oh yes, just in case you are interested, the <a href="http://www.ladyironchef.com/2010/04/19/best-japanese-restaurant-singapore/">Japanese Ramen Bar</a> is under the same management as Jumbo Seafood Restaurant.</p>
