<p>Popular cake shop, Cake Spade has just announced that it will be closing in a few months&#8217; time. This news came as a surprise as it only opened its 2-Storey Flagship Cafe at Ann Siang Hill/Chinatown in April earlier this year.</p>

<p>Cake Spade started as a small cake shop at Orchid Hotel along Tras Link almost 10 years ago before moving to 83 Tanjong Pagar Road. They opened their Flagship Pink Cafe in a shop house at 283 South Bridge Road at Ann Siang Hill/Chinatown.</p>

<p>From Strawbery Tofu Cheesecake, Lychee Rose Cake, Red Velvet Cake to Hummingbird Cake, the cake selection at Cake Spade will make you go weak in the knees.</p>

<p>The team behind Cake Spade gave a teaser &#8220;Goodbyes are not forever&#8221; on their Instagram, so there is a possibility that they are looking to move to another location or rebrand to a new concept in the future.</p>
<p>Until then, you have a few more months to enjoy your favourite cakes at Cake Spade before they put up the shutters at their current location.</p>

<p>Pâtisserie CLÉ is opening a second outlet at Lucky Heights neighbourhood near Siglap and Bedok.</p>
<p>First established as an online pâtisserie in 2018 by local pastry chefs Germaine Li and Joy Chiam, Pâtisserie CLÉ (clé is French for ‘key’) specialises in French cakes, tarts, and bakes.</p>

<p>The local brand opened its first physical space in Paya Lebar Office and the second outlet will be located in Lucky Heights neighbourhood where fans can get a range of tarts and<br />
entremets as well as a new selection of viennoiseries.</p>
<p>The star highlights are unique creations that pay homage to the Lucky Heights neighbourhood and they include The Lucky Clover—a twist on puff pastry swirls with generous sprinkles of fragrant spring onion, garlic and bacon—and the Truffle Ziggy, a savoury bite filled with truffle cream, wild mushrooms, arugula, cherry tomatoes and feta cheese, which is inspired by the iconic zig-zag stairway in the Lucky Heights neighbourhood.</p>

<p>Pâtisserie CLÉ is perhaps best known for its Tart Gift Box with a choice of eight tarts and you have to try the signature Orh Blanc Tart which is an interesting fusion of the French Mont Blanc dessert and the local orh nee flavour.</p>
<p>Do note that Pâtisserie CLÉ Paya Lebar will be closed momentarily for renovations. It will be re-opened in April with a refreshed look.</p>

<p style="text-align: justify;">The layered cake was decadent and satisfying with every bite. You know how some cakes look way better than they taste? Not for this. This looked every bit photogenic and Instagram-worthy, and tasted legit. We are already dreaming of our next customised cake by them!</p>

<p dir="ltr" style="text-align: justify">Cake lovers, rejoice! A new parlour has opened. Located in the heart of Toa Payoh, The Twisted Trio is currently in its soft launch stage, but it is set for a grand opening this Sunday. It is a 5 to 10-minute walk from the MRT.</p>
<p dir="ltr">This new, modern cafe is founded by 3 pastry chefs (with 3 different personalities, thus the name!) who initially worked together before deciding to open their own dessert shop with cakes that cater to all tastebuds.</p>

<p dir="ltr">The chilled desserts include the Watermelon Rose ($8) and Burnt Cheesecake ($7). As the founders wish to accommodate to the tastebuds of the local elderly in the neighbourhood, the cakes are not too overwhelmingly rich and sweet, with lesser cream. So you don’t have to feel sinful while enjoying the treats here.</p>
<p dir="ltr">We definitely recommend the Watermelon Rose due to its unique floral taste. The pastry cream is fluffy and not too rich. The fruits on top and the watermelon layer add a refreshing bite to the cake. Put these two together, and you have a modern, novel take to the usual cake.</p>
<p dir="ltr">However, we feel that the Burnt Cheesecake could have been more charred. Nevertheless, it was still light, spongy, and not extremely sweet. Perfect for a not-so-heavy dessert after a hearty dinner.</p>

<p dir="ltr">As for the desserts that were displayed out in room temperature, we tried the Dark &amp; Milk Choc Brownie ($4). The brownie was crumbly and delicious, with a special blend of both dark and milk chocolate. This definitely goes on our <a title="best brownies in Singapore" href="http://www.ladyironchef.com/2020/03/best-brownies-singapore/">best brownie spots in Singapore</a> list.</p>

<p dir="ltr">We spotted a variety of room-temperature desserts, including Pound Cakes ($12) with flavours such as Earl Grey, Banana, and Matcha. Banana Muffins ($2.50), Scones ($3), and Orange Yogurt cakes ($4) are also displayed. This cafe really leaves you spoiled for choice. And if that isn&#8217;t enough, you can also place an order for your very own customized cakes in this cafe.</p>
<p dir="ltr">Feast your eyes and tastebuds on the various desserts offered at this mini parlour, and you will not be disappointed. Pair your dessert of choice with a coffee, and your sweet tooth cravings will definitely be satisfied.</p>

They specialise in a variety of Swiss rolls that come in several flavours from chocolate, mango, green tea to blueberry and even durian.</p>
<p style="text-align: justify;">The two flavours, however, responsible for their claim to fame are their Kaya Swiss roll and Durian Swiss roll. Perhaps it’s due to the sense of nostalgia that these classic flavours evoke, but one thing’s for sure, they taste mighty darnn good.<br />

<p style="text-align: justify;">Swirled with pandan-infused kaya, the Kaya Swiss roll is, without a doubt, one of our all-time favourites. The sweet aroma of pandan, coupled by the semi-sweet coconut jam filling makes this modest-looking Swiss roll just the best tea time snack.</p>
<p style="text-align: justify;">We love that it isn’t overly sweet nor laden with insane amounts of filling but still hits the spot nonetheless, and the pillowy exterior also does well to give the roll a nice texture.</p>
<p style="text-align: justify;">Encased within a soft, durian-accented roll is a cream filling mixed with creamy durian. The ratio between durian cream to sponge cake is perfect, such that neither of them overwhelms the other. The roll is sweet but is nicely balanced out by a subtle saltiness in the cream itself. A hit among durian lovers, this is must if you’re thinking of bringing a dessert over to a house party—provided they’re fans of durian as well.</p>

<p style="text-align: justify;">The flavours and creamy texture of their Chocolate Swiss roll resemble the humble chocolate cake sold in many heartland bakeries. This is by no means comparable if you’re talking about the best chocolate cake around but it does sing of nostalgia, giving us a blast to the past to a time when being able to indulge in a decadent chocolate cake could only happen during birthday celebrations.</p>

<p style="text-align: justify;">The one thing that makes their cakes stand out—and we’re sure most of their fans would agree too—is that their Swiss rolls are incredibly fresh-tasting and will never, ever give you a sense that it was prepared days prior. Take their Strawberry Swiss roll for instance.</p>
<p style="text-align: justify;">Wrapped in between the sponge cake lies swirls of sweet strawberry cream that is nicely underscored by a tinge of sourness—a particular quality that could only be achieved by using fresh strawberries. Their Swiss rolls are all made fresh daily and the benefits include a stronger aroma and fresher flavour.</p>

Made with coconut and Jasmine rice mousse, the cake is filled slightly with mango gelatin and it sits above a base made of puffed rice and crushed cookies that is laced with white chocolate.</p>

<p style="text-align: justify;">The aromatic mousse went really well with the mango filling but it was the crunchy texture from the base that brought the entire dessert together and made it simply addictive.</p>
<p style="text-align: justify;">Apart from what we have tried, Purist Patisserie also offers a selection of single cakes and French bakes such as madeleines, financiers and chouquettes.</p>

<p style="text-align: justify;">For those who have not been keeping up with this craze, Castella cakes are actually extremely soft and bouncy Japanese sponge cakes that are moist on the inside. These cakes are usually made from simple ingredients such as flour, eggs, sugar and starch syrup. Put the ingredients to bake and the result is one fluffy, jiggly Castella cake.</p>
<p style="text-align: justify;">While the waiting time may sound totally absurd to some (be prepared to queue more than an hour), there are many who are willing to queue for hours just to have a taste of the sponge cakes. We braved the crowd and tried them personally in search for the <strong>best Castella cake in Singapore</strong>.</p>

The Ondeh Ondeh flavour comes close, though it resembles a Pandan Cake more and we almost couldn&#8217;t taste the gula melaka.</p>

<p>The Original Castella cake from Le Castella boasts a fluffy and moist texture that is further accentuated by a strong aroma of freshly cooked eggs. In terms of taste, we felt that it resembled that of a steamed egg cake you would typically find at dim sum restaurants—nothing spectacular.</p>

<p style="text-align: justify;">No matter which Castella cake you are trying, do eat it while it is still fresh and warm as this bouncy baked treat tends to deflate and become rather dry if left to sit for too long.</p>
<p style="text-align: justify;">Would this be the start of a Castella cake trend in Singapore? Well, we wouldn&#8217;t be too surprised if other local players jump on the bandwagon to introduce their own versions of Castella cakes in the near future.</p>

<p style="text-align: justify;">Le Castella’s cakes—or Castella cakes in general—should be enjoyed fresh out of the oven when it is still warm and fluffy. The textural experience transcends all other cakes out there but you would have to try it for yourself to understand why.</p>

The former comprises octagon-shaped delightfully crisp red velvet waffles that are pillowy inside, while the latter is a sinfully rich chocolate cake alternated with generous amounts of chocolatey mousse.Surprise, surprise! They range from chocolate coated sunflower seeds, hundreds and thousands, sliced fresh fruits, Oreo biscuits, marshmallows, strawberry sauce, Thai milk tea ice cream and wafer rolls&#8230; Pretty much everything sweet.</p>
<p style="text-align: justify">While we definitely would not proclaim Sugar Lips as a destination worth making a special trip for, we reckon it makes a great hangout spot to unwind over desserts if you already happen to be in town.</p>
