<p dir="ltr" style="text-align: justify;">As we celebrate our Nation’s 51st birthday this year, let us go back to our roots and reflect on the times when the pioneer generation painstakingly build this beautiful Garden City we live in today.</p>
<p dir="ltr" style="text-align: justify;">What was once a wasteland has transformed into a first-world city with majestic skyscrapers and prospering economy, and a rich culinary landscape shaped by the multi racial and religious groups residing here.</p>
<p dir="ltr" style="text-align: justify;">Today, we will be looking at some significant events that took place since the colonial era and <strong>Remember The Years of Nation Building</strong>.<span id="more-103065"></span></p>
<p style="text-align: justify;"><span style="font-size: x-large;">Pre 1960s: Colonial Times</span></p>
<p dir="ltr" style="text-align: justify;">Unlike the tall HDB flats that most of us are living in today, shophouses proliferated the streets under the British rule. Above the shops are usually two stories of living accommodation which you can still find in present Chinatown.</p>
<p dir="ltr" style="text-align: justify;">In a country made up of migrants coming from all over the world to make a living, there is a need to cater for their religious beliefs. Some of the oldest places of worship that are still around in Singapore are the Armenian Church, Sultan Mosque and Sri Mariamman Temple.</p>

<p dir="ltr" style="text-align: justify;">The iconic Cathay building was designed by a British architect, Frank Brewer, and used to be the tallest skyscraper in the city! It was the first air-conditioned cinema opened to public and was used as a landmark for landing at Singapore’s first civilian airport, Kallang airport.</p>
<p dir="ltr" style="text-align: justify;">It is hard to imagine that in today’s context when most buildings are much taller than The Cathay.</p>
<p style="text-align: justify;"><span style="font-size: x-large;">1960s: The Birth of A Nation</span></p>
<p style="text-align: justify;">What was once a former post office located at the side of Singapore River has been replaced today with five-star hotel, The Fullerton Singapore.</p>
<p style="text-align: justify;">Its grand architecture and spectacular view draws crowds every day today, and it is a very popular accommodation among tourists. Locals love a good afternoon tea in the lobby lounge too.</p>

<p dir="ltr" style="text-align: justify;">Just around the corner is the Padang stadium where our Founding Prime Minister broke the news of Singapore’s independence on that very platform itself in 1965.</p>

<p dir="ltr" style="text-align: justify;">Another important event that happened in the 1960s is the formation of the Housing Development Board. In less than three years, the HDB built 21,000 high rise buildings that most Singaporeans are living in today.</p>
<p style="text-align: justify;"><span style="font-size: x-large;">1970s: Industrial Town</span></p>
<p dir="ltr" style="text-align: justify;">Part of the plan in moving Singapore higher up in economic status involved putting more effort into manufacturing and industrial development. Although it did work in turning Singapore into a business hub, there was a price to pay.</p>
<p dir="ltr" style="text-align: justify;">Back in the 1970s, hawkers and manufacturing industries crowded the Singapore River, polluting it with wastes and oil spills. As a result, the river was severely polluted. The leaders of Singapore felt that something had to be done, and so the large-scale Singapore River clean-up happened.</p>

<p dir="ltr" style="text-align: justify;">With that, the tourism and hospitality industries saw a huge growth in terms of profits and also an expansion in job openings.</p>

<p dir="ltr" style="text-align: justify;">Apart from air transport, our Mass Rapid Transport system for the East West Line (EWL) officially started in the 1990s. The one-hour ride on the EWL brings you to many neighbourhoods in Singapore, as well as key areas in the city centre.</p>

<p dir="ltr" style="text-align: justify;">It is difficult to imagine how Singapore used to be a fishing village just a few decades back. Fast forward 51 years, and this is the Garden City we are all proud of. Yet, that is not all.</p>
<p dir="ltr" style="text-align: justify;">Throughout the past few years, Singaporeans have been kept busy with new attractions springing up. And we are now a first world city and a popular tourist destination with a thriving economy.</p>

<p dir="ltr" style="text-align: justify;">The Marina Barrage dam opened in 2008 and became a place for locals to go to for picnics, kite flying and family bonding sessions.</p>

<p style="text-align: justify;">Nearby the dam is Gardens by the Bay which brings to life Singapore’s vision of being a Garden City.</p>
<p style="text-align: justify;">The Gardens boasts three waterfront gardens and two glass conservatories keeping plants from all over the world. No efforts has been spared in achieving suitable climatic conditions for the plants that come from tropical highlands and 2,000 metre high peaks.</p>
<p style="text-align: justify;">Of course, we cannot forget to include the Marina Bay Sands. Taking up a prominent part of Singapore’s skyline, there has been much attention on the world’s largest rooftop infinity pool. Peaking at 57 stories high, there is nowhere better to catch a panoramic view of Singapore.</p>
<p dir="ltr" style="text-align: justify;">It has been an incredible 50 years of independence, and in 2015, we celebrated the SG50 milestone.</p>
<p dir="ltr" style="text-align: justify;">Moving forward as a nation, we should think of what lies ahead by embracing this year’s National Day theme ‘Building Our Singapore of Tomorrow’. We all have our parts to play &#8211; and we contribute to the Singapore we all call Home. There shall be many more 50 years, and as quoted by U.S President Obama, &#8220;Singapore may be a little red dot but it has great impact on the world.&#8221;</p>

<p style="text-align: justify;">I love travelling. I think it is the best thing you can do for yourself. But at the end of the day, Singapore will always be my home. Today is our nation&#8217;s birthday, and on this special occasion, I would like to share with you why I love Singapore.</p>
<p><span id="more-24219"></span><strong>Singapore is one of the safest, if not the safest country in the world.</strong></p>
<p style="text-align: justify;">In Singapore, we can walk around alone in the wee hours without fear of getting robbed. This speak volumes about how safe Singapore is.</p>
<p><strong>Singapore is a multi-racial society. </strong></p>
<p style="text-align: justify;">Not many countries in the world can claim that they are a multi-racial society, which makes Singapore even more special. We celebrate Chinese New Year, Hari Raya Haji, Deepavali, Christmas; we eat chicken rice, nasi lemak, Indian curry, and fish &amp; chips; we live as one big family in Singapore.</p>
<p><strong>Everything works in Singapore, literally.</strong></p>
<p style="text-align: justify;">There  have been many complaints about our public transport system, but I think  it is ridiculous for people to complain about a slight train delay.  Having been to many big cities like New York, London, and Paris where  public transport systems do not work efficiently, I dare say we are very  lucky in Singapore.</p>
<p style="text-align: justify;">Transportation aside, everything else in Singapore works, literally. Singapore is extremely efficient: you don&#8217;t have to worry about people going on strikes; it is easy to apply for things; and bureaucracy rarely keeps us waiting.</p>

<p><strong>Natural disasters-free. </strong></p>
<p style="text-align: justify;">One of the main reasons why Singapore is among the greatest cities in the world is because we are blessed to be from natural disasters. No earthquake, no typhoon, no hurricane, no tsuanmi.</p>
<p><strong>This is home, truly. </strong></p>
<p style="text-align: justify;">I can go on and on about justifications &#8211; best airport in the world; our passport allows us to visit many places without the need of Visa; no racial discrimination; a society where you can integrate and blend in without much fuss; one of the cleanest and greenest cities; potable tap water &#8211; on why I love Singapore, but above all, I love Singapore because this is home.</p>

Since we will be celebrating National day in a month&#8217;s time, I thought it would be nice to write about some of the <strong>must-eats in Singapore</strong>.</p>
<p>Here&#8217;s my list of <span style="text-decoration: underline;">10 Things to Eat in Singapore</span>.</p>
<p style="text-align: justify;"><span id="more-16891"></span>For first time visitors, it is a must to try all the popular hawker food from places like <a href="http://www.ladyironchef.com/2010/10/chomp-chomp-hawker-centre-singapore/">Chomp Chomp Hawker Centre</a> and <a href="http://www.ladyironchef.com/2010/12/old-airport-road-food-hawker-centre-singapore/">Old Airport Road Market</a>. If you are willing to spend more on food, Singapore has many excellent fine dining restaurants, like Les Amis and Iggy&#8217;s. And of course, we mustn&#8217;t forget about the <a href="http://www.ladyironchef.com/2010/07/marina-bay-sands-restaurants-celebrity-chefs/">Celebrity Chefs Restaurants</a> like Waku Ghin, Santi, CUT at the swanky Marina Bay Sands; Osia and L&#8217;Atelier de Joel Robuchon at Resorts World Sentosa.</p>
<p style="text-align: justify;">However, I&#8217;ll not be including <em>Singapore&#8217;s best restaurants</em> in this post. Instead, I want to share about some of the food that I miss whenever I am out of town. For non-food recommendations, please read my list of <a href="../2011/01/things-to-do-in-singapore/">10 Things to do in Singapore</a>.</p>

<p><span style="font-size: large;">Chicken Rice</span></p>

<p style="text-align: justify;">If you ask around which is the <strong>most famous Singapore food</strong>, chances are, people will reply with either chilli crab or chicken rice.</p>
<p style="text-align: justify;">Amongst the many good chicken rice stalls in Singapore, I&#8217;d suggest going to either Tian Tian Hainanese chicken rice or Boon Tong Kee. I like Tian Tian&#8217;s chicken rice, but I hate the queue. If you are lazy to queue like me, go to Maxwell market before or after lunch hour. Tian Tian is definitely one of the best chicken rice in Singapore.</p>
<p style="text-align: justify;">Boon Tong Kee, on the other hand, is a tricky one. Many people would argue that it is a commercialised restaurant, and there are probably lots of places that have better chicken rice. Let me explain. With six branches around the island, Boon Tong Kee is much more accessible, and you can have your chicken rice in a clean environment (not everyone is willing to brave the heat in hawker centre). It is a relatively <em>safe</em> option to bring your overseas  visitors there for their first taste of our famous Singapore  chicken rice.</p>

<p style="text-align: justify;">As mentioned, Chilli Crab is probably the most famous Singapore food. It is the face of <strong>Singapore Cuisine</strong>, the must-try food for tourists. You <span style="text-decoration: underline;">cannot</span> visit Singapore without having Chili Crab. There are many Chinese seafood restaurants in Singapore serving this popular dish, but my favourite is No Signboard at Geylang.</p>
<p style="text-align: justify;">Fresh meaty crabs in a spicy-sweet chili sauce with deep-fried mantou &#8211; this is one of the most satisfying experiences in life.</p>

<p style="text-align: justify;">Kaya is a coconut jam made from coconut milk, eggs which are flavoured by pandan leaf and sweetened with sugar. It is easily one of the best jam spread ever created.</p>
<p style="text-align: justify;">Spread the kaya on the toast with a generous slab of butter &#8211; this is a very delicious thing for breakfast, tea, or supper. All you need is kaya toast, soft-boiled eggs and a cup of coffee. This is the <a href="http://www.ladyironchef.com/2010/02/breakfast-places-singapore/">best local breakfast</a>.</p>

<p style="text-align: justify;">There are plenty of <strong>tropical fruits to eat in Singapore</strong>, so it is a good idea to head to the markets if you are not from the region. Some of the must-try fruits are: rambutans, mangosteen, longan, lychee, durian, and mango.</p>
<p>Even though I hate durian, I think it’s a pretty cool experience to visit Geylang and sit by the roadside to try the king of fruits.</p>

<p style="text-align: justify;">Fish Head Curry is a dish created by Singapore’s <em>Malayalee</em>. Cooked in a hot and spicy Indian curry, the large fish head is usually eaten with white rice or bread. Try the one from Muthu&#8217;s Curry at Race Course road.</p>

<p>Laksa has a rich coconut-based curry soup with rice noodles alongside ingredients like cockles, shrimp, <em>tau pok</em> and fish cake.</p>
<p style="text-align: justify;">The first time I had a bowl of laksa (many years ago) was a total revelation. It was like taking a plane for the first time; the first sip of champagne, or having the first ever taste of foie gras. It was something very special.</p>
<p style="text-align: justify;">Without a doubt, Laksa is one of the <em>Singapore&#8217;s must-eats</em>.</p>

<p style="text-align: justify;"><strong>Zi Char</strong> (also known as Zhi Char/Cze Char/Tze Char)  is a Chinese stall (in a coffee shop) that serves a variety of ala carte  dishes at affordable prices. Different &#8216;restaurants&#8217; have their own unique signature dishes, but a typical zi char place will usually has the following: meat items &#8211; pork ribs, har cheong gai ($8 &#8211; $20); vegetables &#8211; sambal kangkong, kailan ($6 &#8211; $12), side dishes &#8211; beancurd, noodles, rice ($4 &#8211; $20) ; and seafood &#8211; prawn, fish, crabs ($15 upwards).</p>
<p style="text-align: justify;">There are many good <em>zi char places in Singapore</em>, but I&#8217;d recommend Holland Village XO Fish Head Bee Hoon (for har cheong gai), Keng Eng Kee Seafood and for a slightly more upmarket option, Ming Kee Live Seafood.</p>

For me, the <strong>best char kway teow in Singapore</strong> will be the one from <a href="http://www.ladyironchef.com/2009/12/zion-road-char-kuay-teow/">Zion Road</a>. You MUST EAT it!</p>
