<p style="text-align: justify;">Boasting the highest concentration of rice plantations and accounting for a majority of the country’s rice exports, there really is no wondering why Niigata is well-known for their excellent quality rice, rice wine (sake) and other rice-based products. Located close to the Japan Sea, fresh fish and seafood are often in abundance and of exceptional quality too.</p>
<p style="text-align: justify;">Yet, as far as gastronomy goes, Niigata’s vast array of food choices come second only to the prefecture&#8217;s rich culture and a plethora of scenic views. Like lines in a sketch, the terraced rice paddies littered all over present a view like no place else. Each season brings with it a different ambience and having visited in Autumn, we were treated to stunning spectacles of technicoloured leaves and marvellous views wherever we were brought.</p>

<p style="text-align: justify;">The journey toward Niigata prefecture takes about 2 hours via the Joetsu high-speed bullet train from Tokyo station—located 30 minutes from Haneda Airport. Our journey started at Murakami City, a castle township located just slightly north of Niigata City.</p>
<p style="text-align: justify;">Located right outside Murakami Station, the Nippon Rental Car Depot is where you should first visit to kick-start your Niigata road trip proper. The staff may not be able to communicate in English effectively but they do have pamphlets available in multiple languages. Renting a car for a day is not very expensive either with a decent, standard car costing as little as 7000 yen (approx. S$85) for a day. It comes in mint condition with a navigational device in English.</p>

<p style="text-align: justify;">Once you’ve gotten your car settled, you could probably do with some grub and located just a short 5-minute drive away is Yururi Restaurant. Off their lunch set menu, you can find anything from rice bowls to soba, each of which features seasonal meat, fish and vegetables—a great way to taste a good variety of what Niigata can offer in terms of its products in just one meal.</p>
<p style="text-align: justify;">We got ourselves the Tendon and Kaisen set, both of which came with a bowl of soba noodles in addition to rice. Fresh-tasting and decently priced, our first meal in Niigata kicked off pretty darn well at Yururi.</p>

<p style="text-align: justify;">If you’re a sucker for salmon, you’ll be thrilled to know that Murakami is famous for the stuff due to its proximity to Miomote River—a salmon hotspot basically. In fact, salmon has been a key element in sustaining the city’s financial backbone ever since the Edo period which explains why the people there are insanely proud of it.</p>
<p style="text-align: justify;">Here in Murakami, there are over 100 different ways that the natives prepare salmon with the most common being salting and dry-curing, relying on the natural wind from the coastal breeze.</p>
<p style="text-align: justify;">Don’t be alarmed at the number of salted salmon hanging in and around the houses here because it’s a norm, and scattered everywhere are little salmon speciality stores where you can find heaps of salmon-based products. Kikkawa is one such store and it truly is massive, selling anything and everything salmon-related from snacks, condiments to even salmon burgers which they make fresh daily</p>

<p style="text-align: justify;">The Murakami township is popular for their green tea and black tea varieties and you’re more than likely going to have no trouble finding a tea shop tucked in a corner somewhere. It might seem intimidating from the outside but don’t be shy and just waltz right in, the locals are extremely friendly and will do their utmost to serve you well despite the language barrier.</p>
<p style="text-align: justify;">You can get the full tea-drinking experience with the added bonus of having your tea brewed over charcoal and an expert to prepare, serve and educate you about traditional Japanese tea and the art of tea-drinking.</p>

<p style="text-align: justify;">This is a proper as farm-to-table dining goes with all of the restaurant’s menu offerings coming straight from the farm. The experience starts off with a tour of the vegetable garden, of which guests will be educated on the different varieties of vegetables and herbs they grow, before letting you indulge in them all back at the restaurant.</p>
<p style="text-align: justify;">Every recipe is designed specifically to the taste of each individual vegetable so depending on which season you visit, you just might have a different menu every other day.</p>
<p style="text-align: justify;">As history has shown, the people of Tsuruoka have been and are, until today, incredibly reliant on vegetables for sustenance, largely because of their historical ascetic practice of Buddhism which disallows them to indulge in meat-based food.</p>

<p style="text-align: justify;">The lush greenery and the still, tranquil atmosphere is a pleasure to take in and is definitely a spot we recommend if you’re looking to get some solid portrait shots of yourself taken. The spiritual charm of the place comes in the form of shrines and little totems scattered all around the forest with a massive 5-tier pagoda located slightly deeper within.</p>

Peculiar yet beautiful creatures nonetheless, a trip here will not be wasted. However, do note that the aquarium closes at 5pm so plan your time carefully if you do not want the drive down to be in vain.</p>

<p style="text-align: justify;">If you’ve always had a fascination for Japan’s ancient warriors, the samurai, then perhaps a tour through the Uesugi Shinto Shrine should be right up your alley. Upon arrival, we were greeted by a quartet of samurai role-players, who, not only looked the part but also sounded and behaved like the proud samurai warriors of Edo-period Japan.</p>
<p style="text-align: justify;">From learning to purify your body, to submit an offering to the Gods, the tour covers it all—if you dare to ask, they’ll probably even let you hold their weapons. The tour ends off with a 15-minute-long skit featuring the samurai warriors.</p>

<p style="text-align: justify;">Craving something authentic and exclusive to the Niigata prefecture, we were brought to try a local delicacy called Wappa Meshi at Inakaya Restaurant at Furumachi Old Town (basically the restaurant where the dish was born).</p>
<p style="text-align: justify;">Wappa Meshi is a steamed dish consisting of steamed rice cooked using dashi that is topped with meat, or seafood cooked. It is steamed in a wooden box, similar to Chinese dim sum and the beauty of it is that the process allows for allows for the flavours of every component to marry well with one another.</p>
<p style="text-align: justify;">The box itself, otherwise known as the ‘Mage-Wappa’ is a kind of container which was used as a lunch box by the folks who worked high up in the mountains and has been a tool of transporting food for over 600 years now.</p>
<p style="text-align: justify;">We had a variety with some comprising chicken, salmon, ikura (salmon roe), local ebi and more. Every Wappa Moshi was cooked to utmost perfection and albeit looking simple, they each boasted incredible flavour.</p>

<p style="text-align: justify;">Anyone who’s anyone in the food industry would know of Japan’s highly acclaimed Tsukiji Fish Market—the home of some of the world’s best seafood. Well, in Niigata city, they have one similar called Pia Bandai.</p>
<p style="text-align: justify;">The market stocks a considerable amount of Niigata speciality products such as rice, vegetables, fruits, sake, local fish, tidbits and more but its main appeal would be its wide array of fresh fish and seafood offerings. From unbelievably affordable uni (sea urchin) to thickly cut sashimi prepared fresh upon order, any seafood lover would be excited.</p>

<p style="text-align: justify;">The Northern Culture Museum once belonged to one of the wealthiest family of landowners or ‘farmer lords’—as the local people refer to them as—in the Echigo area. However, it has long changed and while the massive complex astounds with its rustic, well-kept furnishings, perhaps one of the more interesting facts to note is that it is the only one in Japan that still stands.</p>
<p style="text-align: justify;">You’d have to go on a tour for the full explanation but we promise you this is far more interesting than some mere museum walkthrough. The owners of the house were huge in the rice farming industry and provided rice of exceptional quality to all parts of Japan.</p>

The prefecture is known for their rice, so it is only natural that they’d be home to outstanding sake as well. Skilfully brewed with high-quality rice and spring water from the mountains, much of their sake take on a clean and refreshing taste.</p>

<p style="text-align: justify;">With grapes in the summer, pears in the fall, strawberries and more during winter through spring, this lovely fruit orchard allows you to enjoy fruit-picking all-year round. Their popular gelato is made using the seasonal fruits that they grow onsite too and if you&#8217;re a fan of Japan’s esteemed Kyoho grapes, you’ll be glad to know that you can pick those here too (or have them in gelato form).</p>

From their pasta to their mains, all of their food nicely tie together the best of both cuisine’s culinary disciplines and flair.</p>

At the Yahikoyama Rope Way, not only were we treated to a gorgeous 360-degree view of the land below, but the sunset—coupled with the mountain breeze—marked one heck of a solid end to our 5D4N adventure in the Niigata prefecture of Japan.</p>

<p style="text-align: justify;">He&#8217;s never without the local phrasebook in hand and has a genuine interest in languages so he&#8217;s really put in the effort to learn how to converse. A super useful chap for obvious reasons.</p>
<p><strong> Often heard saying:</strong> Practising phrases by himself.</p>
<p style="text-align: justify;"><strong> When it gets annoying&#8230;</strong> When he turns every excursion into a lesson, by telling you what the local words are for the things around you, then quizzing you. Don&#8217;t turn the trip into a language course we didn&#8217;t sign up for!</p>
<p><span style="font-size: large;">5. THE LIGHT PACKER</span></p>
<p style="text-align: justify;">He&#8217;ll bring half the amount of clothes required for the entire trip and use the sink to do laundry. Don&#8217;t bother borrowing toiletries from him as well as he&#8217;s likely to depend on the ones provided by the hotel. Either that or he&#8217;s got one soap to cover him from head to toe. Bare minimum, is the motto he lives by. The great thing is – if you&#8217;ve shopped too much, you can hop on his baggage allowance since he&#8217;s most likely to have excess space.</p>
<p><strong> Often heard saying:</strong> “Yeah you can put it in my bag, I have space.”</p>
<p style="text-align: justify;"><strong> When it gets annoying&#8230;</strong> Um, when he&#8217;s too knackered for laundry and a reused shirt leaves an unpleasant scent trail.</p>

Hidden alley leading to a speakeasy with amazing Happy Hour prices? He&#8217;s got a picture of their nondescript entrance stored on his Evernote app. With The Hipster in your travel group, you&#8217;ll get to experience off-the-beaten track stuff. He&#8217;s probably a bit of a coffee snob too so you&#8217;ll never have to settle for a subpar cuppa.</p>

<p style="text-align: justify;">Forget flashy shopping centres, follow this guy to the street markets or outlet stores. His bargaining skills are so unrivalled, you&#8217;re really paying the lowest price possible. He&#8217;s already trawled through forums to find out the ballpark figure of things – whether it&#8217;s material goods, food, tours or hotel rooms – so you&#8217;ll never be ripped off. With this guy around, you&#8217;ll be saving major bucks on your trip.</p>
<p><strong> Often heard saying:</strong> “Give me a discount” in the local language – which is often the first phrase he learns, even before “hello”.</p>
<p style="text-align: justify;"><strong> When it gets annoying&#8230;</strong> When he sacrifices quality for low prices. Bed bug bites from a cheap hostel room and a tummy ache from eating at the dodgy-looking food stall isn&#8217;t worth the savings, no matter how substantial.</p>

<p style="text-align: justify;">He&#8217;s got a reaaal appetite. This guy&#8217;s good to take along because you can order whatever you want to try, and you don&#8217;t have to worry about not finishing it. He&#8217;ll inhale the leftovers in a flash. The difference between this guy and The Foodie is that the former doesn&#8217;t care about where, when or what you eat – he&#8217;ll lap it all up.</p>
<p><strong> Often heard saying:</strong> “Just order, don&#8217;t worry – I can help you eat.”</p>
<p style="text-align: justify;"><strong> When it gets annoying:</strong> When you actually want the last piece, but it&#8217;s already in his mouth. Sigh. Never mind, less calories taken in, I guess.</p>
<p><span style="font-size: large;">9. THE GUNG-HO ONE</span></p>
<p>He&#8217;s the one who pushes you to do things you would have never found the guts to do, but be glad you did it afterwards. Whether it&#8217;s skydiving, eating something weird or dancing in public to a busker&#8217;s tune – he puts the YOLO in your trip.</p>
<p><strong> Often heard saying:</strong> “Don&#8217;t think so much! Just do it!”</p>

<p>Y&#8217;know, the one who just never seems to get lost, and remembers the route after going through it once. With him around, you&#8217;ll always find your way back to the hotel or to the landmarks – no time wasted. He can even easily locate the street market stall you want to visit again, which, as the rest of us average folk know, is no mean feat.</p>
<p><strong> Often heard saying:</strong> “It&#8217;s this way guys. Confirm.”</p>
<p style="text-align: justify;"><strong> When it gets annoying:</strong> Actually, I can&#8217;t think of a downside to this guy&#8230; Even if you were to choose a wrong turn on purpose to explore, he can lead you right back to where you wanted to be in the first place.</p>

From visiting nice cafes in <a href="http://www.ladyironchef.com/2013/08/taipei-yong-kang-street-guide/">Yong Kang Street</a> to eating your way through the well-known <a href="http://www.ladyironchef.com/2012/09/taipei-night-markets-street-food/">Taipei&#8217;s night markets</a>, there is something for everyone in this city which is known for its delicious food and friendly locals.</p>

<p style="text-align: justify;">Kaohsiung is located in the south of Taiwan. I spent a few days in the city. Highlights include visiting Liuhe tourist night market and Ruifeng Night Market, and going to Cijin for cheap and delicious seafood.</p>

<p style="text-align: justify;">After Kaohsiung, I dropped by Tainan, the food capital and the oldest city in Taiwan. Most of the famous Taiwanese street food originated from Tainan, and it was an eye-opening experience to explore the city and learn more about the story behind the local food.</p>

<p style="text-align: justify;">In March, we had the chance to go on a press trip by KLM to visit Amsterdam. Amsterdam is more than just the Red Light District or for dope-selling “coffee shops”, there are plenty of things that you can see, do and eat.</p>
<p style="text-align: justify;">The city is somewhat mysteriously ambiguous, with a mixture of extremely warm and fierce-looking local. The slight medieval setting also feels ancient, and quite oddly, every street at every turn looks identical — low-rise brick buildings with conspicuous signs, withered trees line canals after canals, and sporadically random shops. But after spending a few days exploring the city, it grew on us.</p>

<p style="text-align: justify;">After Amsterdam, we flew to London for a week. Everything in London is almost all too familiar &#8211; the food, the renown shopping streets, the areas that we see on Monopoly, the hallmark musicals, the language, the London Bus, the Big Ben&#8230; everything in London is so close to heart. London will always be one of our favourite cities in the world, and we are already planning a trip back this year.</p>

<p style="text-align: justify;">Some people feel that Paris is too touristy and over-hyped. But for me, it is, and always will be, one of my favourite places. It has that magical feel in the air which you cannot find elsewhere. Je t&#8217;aime Paris.</p>

<p style="text-align: justify;">In April, we went to Seoul for the very first time. Seoul is a very fascinating city with many things to do. In the day, you can go sight-seeing at palaces, visit one of the many museums, drop by N Seoul Tower for a glimpse of the city, or cafe-hop at hip areas like Garosu-gil, and Samcheong-dong. And at night, Hongdae – an area near the Hongik University known for its urban arts and indie music culture, clubs and entertainment – comes alive.</p>

<p style="text-align: justify;">Most visitors usually only go to Taipei, and it is a shame because there are many other cities that are worth visiting. Taichung, for instance, is a wonderful holiday destination. So when the Taiwan Tourism Bureau kindly invited me to visit Taichung, I said yes immediately. The main draw for tourists is definitely Feng Chia Night Market – one of the biggest, if not the biggest, night markets in Taiwan. There are many things to see, do and eat in Taichung. The next time you plan a trip to Taiwan, you have to include Taichung in your itinerary.</p>

<p style="text-align: justify;">To be frank, I never knew much about Darwin before, but my trip there in July gave me an unexpectedly memorable impression of the otherwise underrated city.</p>
<p style="text-align: justify;">Darwin is the last frontier of Australia, and it is the closest you can get to wildlife. If you are the type who enjoy outdoor adventures, and want something different from the usual city holidays, Darwin is certainly the place for you.</p>

This time, we stayed at <a href="http://www.ladyironchef.com/2013/10/sri-panwa-resort-villa-phuket/">Sri Panwa Villa</a> located at Cape Panwa – the southern tip of Phuket. We have been to many hotels and resorts around the world, but after staying at Sri Panwa, it has immediately rocketed to our all-time favourite list – we are head over heels in love with this gem of Phuket.</p>

<p style="text-align: justify;">During the last week of September, I planned a surprise trip to Japan &#8211; the land of all things kawaii and oishii - to celebrate our anniversary.</p>
<p style="text-align: justify;">Kyoto, Japan&#8217;s capital for over 1000 years, is one of the most beautiful cities in the country. There are so many things to do and see, that it is impossible to cover everything in a trip. It is a place you will go back again and again. If you have been to Kyoto, I&#8217;m sure you will understand what I&#8217;m saying. If you haven&#8217;t been, make sure you include Kyoto in your itinerary when you are going to Japan.</p>

<p style="text-align: justify;">After bidding farewell to Kyoto, we had another week in Tokyo. Everything in Japan seems possible &#8211; the most creative architecture, the freshest food, the cutest toys and the most remarkable fashion. We ate, and ate, and ate. Everything that we ate in Tokyo was utterly delicious.</p>

<p style="text-align: justify;">Hong Kong is another place that I visit annually to visit friends, check out some of the newest restaurants, and do some shopping. November is the best month to go as it is a transitional season from autumn to winter and that is when the weather is perfect &#8211; cool and breezy and you won&#8217;t perspire a bit when you are out on the street.</p>

<p style="text-align: justify;">Our third trip to Bali in 2013. This time, we went there as guests of Kayumanis Private Villa &amp; Spa. After landing at the airport, we checked in to the Jimbaran property and had two lovely nights there. Following which, we travelled North and went to their Ubud&#8217;s property. It was the perfect base to explore the arts and cultural centre of Bali.</p>

<p style="text-align: justify;">At the start of December, we took up an impromptu adventure to Boracay with Tiger Air. Boracay is truly a paradise. The sand is so white and the water has an amazing gradient of blues. Snorkelling, island-hopping, cliff-jumping, para-sailing, jet-skiing&#8230;</p>

<p style="text-align: justify;">For the last trip of the year, we went back to Bali again. We revisited some of our favourite places like Ultimo, Naughty Nuri&#8217;s, The Bistrot, Metis; and also spent a day doing water sports at Tanjong Benoa. Life is always good in Bali.</p>

<p style="text-align: justify;">Henry Rollins famously wrote that he begs young people to travel to “have your mind blown, eat interesting food, dig some interesting people, (and) have an adventure.”  I couldn’t agree more with him.  However, travelling seems to be a luxurious and expensive thing to do for some people.  Really?  Well, it doesn’t have to be that way.</p>
<p style="text-align: justify;">Here are <strong>5 tips on budget travelling</strong> &#8211; let us show you how to get the best deals and save the dollar notes on your travel.</p>
<p style="text-align: justify;"><span id="more-23648"></span><strong>1. Plan early</strong></p>
<p style="text-align: justify;">Planning early for your travel will give you a lot of advantages, from flights to accommodations.  Get your travel dates and number of friends travelling with you confirmed, and you can book your tickets way in advance.</p>
<p style="text-align: justify;">Booking your flights early will give you a much cheaper price than booking it on the last minute &#8211; it can save you hundreds of dollars.  The same goes for hotel accommodations.  So try to plan about 6 months to 1 year in advance.</p>

<p style="text-align: justify;">Airline sites, hotel sites, booking sites… Go to these sites everyday and check out the prices daily.  You’ve got to do your homework if you want to get the best deals online.  Look out for sales on special days where sites have huge promotions.</p>
<p style="text-align: justify;">For example, I got my hotel at Waikiki strip at 70% off during booking.com’s Leap Day sale this year. So the point is to stalk these sites as much as you stalk your eye candy on Facebook.</p>
<p style="text-align: justify;"><strong>3. Sign up for deals</strong></p>
<p style="text-align: justify;">There are lots of fantastic deals for restaurants, day tours, beauty and wellness, getaways, shopping and many more on the Internet that can give you up to 70% off the regular prices.  But you would have to sign up (it’s all free, by the way) to get the insider news on the exclusive deals.  Some of my favorite sites are Google Marketplace, Groupon, Bloomspot, MuchOnMe, and Gilt.</p>

<p style="text-align: justify;"><strong>4. Walk, walk, and walk</strong></p>
<p style="text-align: justify;">Minimize the number of times you take public transportation and maximize the chances for walking.  I find that walking around the city as a tourist is always a good idea, because not only that you can save money on transportation, walking can help you burn off those calories that you ate from all the gastronomic delights and discover many more sights of the city that you could have missed.</p>

<p style="text-align: justify;"><strong>5. Make (international) friends</strong></p>
<p style="text-align: justify;">It’s not as hard as it sounds!  Especially with the social media era now, there are many sites online that allow you to connect with people from all over the world who are very kind enough to host tourists in their humble abode.</p>
<p style="text-align: justify;">Check out Couch Surfing (for bunking in at people’s house at no charge) and Airbnb (people renting out their apartments for short period of time and usually the rate is cheaper than hotels’) for some of these.</p>
<p style="text-align: justify;">Another plus point for Couch Surfing and Airbnb is your hosts who are the locals will be able to recommend cheap and good restaurants in the area, or sometimes even offer to be your tour guide for a day or two.  But especially for Couch Surfing, you would need to plan well in advance to introduce yourself to the couch surf community and find the right people to host you.  And it brings us back to the first point again &#8211; plan early.</p>
