Being one of Singapore’s most highly-anticipated cultural celebrations, the Lunar New Year is a remarkable one that sees the coming together of family, friends and loved ones. Whether you observe the festivities, we can all agree on one thing; that it’s always a feast.

This year, leave no room for hiccups by taking the celebration outside instead. Over at award-winning Racines, perched on the fifth floor of Sofitel Singapore City Centre, look forward to a medley of sumptuous festive offerings along with a variety of set menus, curated, designed and crafted by a veteran in the art of traditional Chinese cooking, Executive Chef Andrew Chong himself.

Be wowed by the artistry that is the Malaysian born chef’s elaborate fortune-enhancing creations, from his extravagant and exquisitely assembled Seafood Abalone Treasure Pot with Braised Cabbage and Black Moss (Pen Cai) to his signature Clay Pot Royale Braised Duck with Sea Cucumber.

Our readers can get 15% OFF Racine’s CNY takeaway orders using our code’ LADYIRONCNY’ on Sofitel Singapore City Centre’s website.

CHEF ANDREW CHONG

Armed with over 20 years of culinary experience and a firm knowledge of traditional Chinese cuisine, Malaysian-born Chef Andrew Chong helms Racines Chinese culinary brigade, leading a team of passionate chefs, who all share the same passion for gastronomy and authentic Chinese cooking.

With an aptitude in presenting memorable culinary experience to all who dine at the restaurant, Chef Andrew maintains a hunger for elevating his skills and delving deeper, exploring new elements and ingredients so as to keep his dishes contemporary and exciting yet true to its humble heritage.

CLAYPOT RICE WITH SELECTION OF PREMIUM WAXED MEATS AND CHINESE SAUSAGE

Lap Mei Fun, or Chinese waxed meat rice, is a simple and delicious one-pot meal that’s commonly had during the festive season. Chef Andrew’s version, his Claypot Rice with Selection of Premium Waxed Meats and Chinese Sausage (S$98++), comprises a mixture of waxed and cured meats such as Lup Cheong (Sausage), Lup Yoke (Pork-belly) and Yun Cheong (Goose Liver Sausage).

The secret to this dish, albeit simple in its ingredient list, lies in the flavourful fats of each individual meat product which imparts all its aromatic goodness onto the rice during cooking. This dish yields a fragrant, meaty savouriness sans the smoky element and comes with generous slices of sausages, neatly arranged over top.

A dish that’s hugely popular in Hong Kong and one that has become synonymous with Chinese New Year celebratory feasts here in Singapore is pen cai. Pen cai is a traditional Chinese dish that consists of several premium ingredients such as seafood and meat that is typically eaten during important occasions.

While purists may argue that this dish is merely a big pot of fancy ingredients thrown together and topped with sauce, Chef Andrew takes it up a notch by preparing each and every component—from the seared Hokkaido scallops to the blanched napa cabbage—separately, treating every ingredient with the respect that it deserves.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins> <ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins> <ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins> <ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins> <ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

The Prosperity Delights I is a set menu for two (or more), and it is priced at S$128+ per person. It is also a menu with most of our favourites. In this menu, you get 6 items, ranging from soup to rice & noodles to desserts.

We were so won over by the soup. You may be puzzled; of all items, soup? Yes, soup—the Fish Maw Soup with Pumpkin, Bamboo Pith & Chicken Soup. With all that premium ingredients, the soup is naturally thickened and it was smooth and sweet in every sip.

Mains include Tea-smoked Duck, Braised Sea Bass with Roasted Pork Belly & Mushrooms and Stir-fried Scallops with Dried Oyster & Asparagus.

And then, we have the Lobster Fried Rice with Pork Liver & Preserved Sausage. As if it does not sound interesting enough, the real surprise comes when you take your first mouthful of rice. The brilliant chef added rice krispies for a textural crunch!

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

The dessert is a beautiful Dual Cream of Sweet Potato Served with Golden Pineapple Bag. The cream is similar to our usual almond cream (but better), with bits of sweet potato in between bites. And the pineapple bag is just so befitting of Chinese New Year; it is every bit tasty as it is auspicious. Your mum will be pleased.

AUSPICIOUS HARVEST MENU

Moving on to the big menu if you have a bigger dining group, we are looking at the Fortune Feast I at S$688++ per table (for 5) and S$1,288++ per table (for 10). Ready for what’s in?

It starts off with Mitzo’s signature Pearls of Prosperity Kanpachi Kingfish Yu Sheng. This is not your regular yu sheng; it is an elevated version with luxurious kingfish (chewy clear flesh) and the addition of lychee pearls that burst with sweetness.

This menu comes with the same Fish Maw Soup that we loved, and the much awaited pen cai. Luxuriate in the Superior Fortune Pot that is made up of abalone, dried scallop, flower mushroom, deep-fried fish maw, sea cucumber, roast duck, dried oyster, “hua diao” prawn, cabbage, white radish, lotus root, roasted pork belly and fa cai. That was a mouthful, but in other words, LOTS OF SUPERIOR INGREDIENTS.

Fortune Feast I also comes with a steamed live Soon Hock and Steamed Rice with Chinese Sausage, and the Dual Cream of Sweet Potato.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

Another variation is Fortune Feast II (S$788++ for table of 5 and S$1,388++ for table of 10), which has the same yu sheng, soup and pen cai, as well as the Lobster Fried Rice that we really enjoyed. The desserts are the Dual Cream of Sweet Potato, as well as a Homemade Koi Fish Nian Gao.

FORTUNE FEAST MENU

Looking for an even bigger menu for big families and/or corporate dinners? Mitzo has several menus that cater to a group of ten, and they are Auspicious Harvest I (S$1,388++ for table of 10), Auspicious Harvest II (S$1,588++ for table of 10), Fortune Feast I (S$1,288++ for table of 10), Fortune Feast II (S$1,388++ for table of 10) and Fortune Feast III (S$1,488++ for table of 10).

They are pretty similar, with just a few varying items. Key items to look out for include are Stir-Fried XO Lobster Claw Topped with Shrimps & Seasonal Vegetables (available in Auspicious Harvest I), and Truffle Noodles with Lobster Claw & Prawn (available in Auspicious Harvest I and Fortune Feast III).

All sets for table of ten include the Pearls of Prosperity Kanpachi Kingfish Yu Sheng, Fish Maw Soup with Pumpkin, Bamboo Pith & Chicken Soup, Superior Fortune Pot, Dual Cream of Sweet Potato Served with Golden Pineapple Bag and Homemade Koi Fish Nian Gao.

Mitzo is known for its impressive range of artisanal and bespoke cocktails and the Spring Blossom—a smoky & sweet mezcal cocktail—is the best pairing to go with the dishes from the Chinese New Year menu.

Mitzo’s Chinese New Year set menus are available from 14 Jan 2017 to 11 Feb 2017.

You should be familiar with Wan Hao Chinese Restaurant at Singapore Marriott Tang Plaza Hotel if you like elevated classic Chinese dishes.
The premium price tag only means the very best 14 ingredients and a taste that is nothing less than befitting for even the most royal. Brimming with collagen, this basin of goodness features pig trotters – the centrepiece of the Pen Cai – that is extremely tender from braising.

Huge and fleshy 3-head Australian abalones also fill the basin in generous portions; now that’s real extravagance. Other ingredients in the basin includes roast duck (that was so good), large conpoy, sea cucumber, fish maw, dried oyster, black mushroom, prawn, Chinese cabbage, black moss, mustard greens, turnip and beancurd.

That was quite a mouthful, but it also shows just how full the pot is! Nothing says ‘treat yourself’ more than a pot of gold like this. It might be one of the most expensive Pen Cai around this Chinese New Year, but it sure is among the best to indulge in.

Most of us wanted to write the Glutinous Rice off as it looked like just your typical glutinous rice dish. But remember what people say about never judging a book by its cover, and never underestimating anyone (anything) before really knowing them?

This is it. Loaded with Chinese sausage, dried shrimps, mushrooms and more, this fragrant glutinous rice dish is one that will please the family. From young to old, this is a perfect inclusion for all traditional Chinese New Year dinners.

Some of the other dishes to expect from the set menu are – Roast Duck Marinated in Ginseng Sauce, Sauteed Scallop with Prawn and Vegetables, Wok-Fried Prawns with Coral Clam and Stewed Sliced Abalone with Pig Trotter.

And for desserts, the classic mango pudding that is creamy and comes with mango chunks aplenty – in the cutest Koi shape that has nothing to do with any zodiacs. Just traditional, auspicious koi fishes that our folks will approve. And guess what? This is one ultra cute dessert that actually does taste better than it looks! Without being cloyingly sweet, it will be your best bet for a dessert to share.

That’s not all, you can also take home some of these Lunar New Year delicacies, specially made by Wan Hao Chinese Restaurant. Your family and friends will love the selection of Yu Sheng, Yam Cake with Chinese Sausage & Dried Shrimp, Signature Roast Duck, Koi Fish Nian Gao, and more.

Prosperity Set Menus

Other than the highlights from the Chinese New Year menu, there are two noteworthy dishes at Wan Hao Chinese Restaurant that you should know about.

The Pork Rib with Mandarin Orange is one of Chef Brian’s signatures that is available on Wan Hao’s a la carte menu. When bit into, the meat was juicy, and the sweetness of the glistening orange glaze sets in, leaving a very flavourful aftertaste.

If you have always been a fan of glazed ribs, you will fall head over heels for Chef Brian’s ingenious creation.

Can all beef lovers out there join us in worshipping the Wok-Fried Beef Cubes with Black Garlic Sauce? Chef Brian set our hearts aflutter with just this one dish – which is also one of his signature creations.

The black garlic made the beef so fragrant that we could not wait to dig in. The meat was almost melt-in-your mouth and the taste was phenomenal. The taste of wok hei also upped the ante on this one. Complete with shimeji mushrooms, this dish alone is reason enough to visit Wan Hao Chinese Restaurant again and again.

Have you realised that Chinese New Year (CNY) is only a mere few weeks away? It is scary how time flies, but we are only thankful that the upcoming festive public holiday means yet another opportunity to spend time with our loved ones.

And of course, we have to profess our love for Mitzo, right? It has always been one of our favourite dining destinations for Chinese gourmet and we are all ecstatic about the scrumptious festive sets, CNY-themed cocktails and takeouts specially for the upcoming Chinese New Year at this sexy Chinese restaurant.

Mitzo’s irresistibly groundbreaking renditions of Chinese classics are far from ordinary, yet by no means stray away from traditional practices. The CNY specials will all be available from 23 Jan 2016 to 22 Feb 2016 for both lunch and dinner.

Quote “ladyironchef” and book by 20 Jan 2016 to enjoy 15% off (*not valid for 07 Feb 2016) all set menus and goodies at Mitzo.

By tradition, Lunar New Year is incomplete until everyone has tossed the yusheng. Celebrated Chef Nicky Ng – previously the head chef at Michelin-starred Hakkasan New York – and his A-team have created a unique reinterpretation of the classic Lo Hei.

The unexpected ingredients are unexpected choices for yusheng, especially the burst-in-your-mouth lychee caviars and crispy lotus root chips.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

Mitzo’s Pearls of Prosperity Kingfish Yusheng (regular – S$68++, large – S$108++) is truly one of a kind. It uses superbly fresh Japanese Kanpachi Kingfish sashimi that is both sweet and rich in flavour and everything is plated so gorgeously.

A homemade savoury Chu Hou sauce which comprises garlic, ginger, sesame seeds, spices and soybeans is then drizzled all over, ready for you to toss to prosperity. You would have noticed that crispy lotus roots, fried salmon skin and toasted pistachos are too used to give the overall dish an extra crunch. Note that a regular portion can feed 4 to 5 guests, while the large portion is great for 10 pax.

If any of your dining companions are vegetarian or unfortunately allergic to seafood, Mitzo has a meat-free option. Bouncy Konnyaku jelly – which has an uncanny resemblance to the fish slices in terms of texture and appearance - is used to replace raw fish slices.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

The refreshing Prosperity Toss is characterised by a plethora of colourful fresh fruits such as mango, rock melon, and honeydew – just to name a few.

Have your chopsticks ready? Dig in and start exchanging well wishes!

The Superior Fortune Pot (S$338++) aka Pen Cai is an extravagant delicacy worth splurging on. Traditionally, this casserole-like basin is served to the Emperor, hence symbolic of wealth and prosperity. The piping hot bowl – filled with over 10 types of luxurious ingredients such as crispy roast pork belly, sea cucumbers, fish maw, premium abalone and more – is a must-eat during Chinese New Year. Portions are huge, and no less satisfying.

And at Mitzo, the star is definitely the Superior Lobster Fortune Pot (S$398++) – where generous amounts of succulent lobsters cooked in Mao Tai Chinese liquor are added on top of the already-sumptuous spread in the basin.

Mitzo’s Chinese New Year set menus are aplenty, too. The servings cater to a small group of four to a group of ten; prices start from S$118++ per pax to S$1,288++ per table, and every menu features different highlights and special creations, of which the platter of handcrafted steamed and fried nian gao is our favourite!

Nian gao is a classic CNY dish of sticky cake that symbolises good luck and the welcoming of a ‘higher year’.

Still need more recommendations?

We say you cannot skip Mitzo’s two signatures and everyone’s favourites – the Special Barbeque Pork (S$18++) and Black Truffle Crispy Roast Duck (S$38++). These two items are permanently available at Mitzo, even during the Chinese New Year period. We have been raving endlessly about them since one first visit to Mitzo for an obvious reason – they are beyond divine.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

Honestly? Best charsiew in Singapore. And as if roast duck isn’t amazing enough, we have black truffle sauce to up the game; roast ducks are never the same again after you’ve had this rendition.

Chinese New Year or not, we go back to Mitzo for these two dishes.

While the consumption of cocktails is not a typical affair during the Lunar New Year, Mitzo has concocted two Asian cocktails made with oriental ingredients that signify prosperity, because they know these will get to your hearts.

The Mandarin Mojito (S$20++) and the Spring Elixir (S$20++) are what you should look out for. The former is a interpretations of the ubiquitous Mojito, where it is prepared with Angostura bitters, apricot liqueur, Havana Club rum and mandarins, while the latter is a red date blend infused with gin, Campari, goji berry syrup, honey dates and red vermouth.

East-meets-West tipples that were interestingly inspired by various symbolic meanings, we can get used to eating yusheng with cocktails.

Here’s a toast to a prosperous new year!

If you are tempted by Mitzo’s various festive offerings but wish to spend the occasion at home, takeaways are available for Pearls of Prosperity Kingfish Yusheng (regular – S$68+, large – S$108+), Superior Fortune Pot (regular – S$338+, large – S$628+), Superior Lobster Fortune Pot (regular – S$398+, large – S$688+) and Homemade Koi Fish Nian Gao (S$28+).

Remember to quote “ladyironchef” and book by 20 Jan 2016 to enjoy 15% off (*not valid for 07 Feb 2016) all set menus and goodies.

Poon Choi (also known as Pen Cai) is a traditional Chinese New Year dish originating from Hong Kong. It has become a popular Chinese New Year Takeaway dish in Singapore during recent years, with most Chinese restaurants and hotels offering Pen Cai and yusheng in their Chinese New Year Dinner menu.

When the waitress opened the cover of the Poon Choi, there were three reactions from the table: Woah, Wow, and OMG! Our Chinese New Year Dinner started with a bang, and we knew we were in for a treat at Jia Wei Chinese Restaurant.

It is easy to understand why the Pen Cai is a popular option for Chinese New Year Takeaway. The pot is filled with items bearing auspicious meanings, and it has a lot of food to feed the whole family. Furthermore, who can resist the lure of Chinese delicacies braised to perfection?

There is something irresistible about one-pot dishes, I love the idea of cooking everything in a pot. Just imagine all the ingredients mingling inside and the essence of the different flavours being fully absorbed into the food.

Jia Wei Chinese Restaurant’s Peng Cai includes: abalone, sea cucumber, shark’s fin, fish maw, oyster, Chinese Sausage, prawn, goose web, dried oyster, roasted pork, and scallop. There is only one word to describe it — magnificent!

Other than the Pen Chai, Jia Wei Restaurant’s signature Peking Duck was the other outstanding dish of our meal. It was quite entertaining to watch as the staff carved the duck in front of our table. Dipped with sweet sauce, the crispy skin was wrapped in the paper-thin pancakes, and delivered right into our stomach. Delicious!

We rounded up the dinner with Sauteed Fresh Scallops with X.O Sauce, gigantic King Prawns and Double Boiled Hasma with Ginseng and Lily Bulbs.

At Grand Mercure Hotel, Jia Wei Chinese Restaurant has 7 different Chinese New Year Reunion Dinner set menus to cater for every family. The Chinese New Year Dinner promotion is available from 3rd to 17th Feb 2011, so if you are looking for a Chinese restaurant to lo-hei with your friends or colleagues, Jia Wei is the place to go.

Chinese New Year is just another excuse for me to eat more.
