<p style="text-align: justify;">We recommend enjoying this on the rocks to allow the ice to really open the rum up a tad, or if you do decide to craft a cocktail with the stuff, perhaps a spin on the classic whiskey Old Fashioned but substituting the base with the Don Q Añejo instead. Classy, versatile and impressively smooth, we must say this is one of the better rums we’ve had given its price.</p>

Also, don&#8217;t be fooled by the lacklustre name &#8211; Crystal Vegetable Dumplings &#8211; because it is actually one of the dim sum options that we would gladly have second helpings of! That strong truffle taste is unforgettable.</p>

<p style="text-align: justify;">The photo says it all. This stunner of a charcoal custard bun is decorated luxuriously with edible gold lychee liqueur on top; sure is an immediate eye-catcher. It is hard to beat this dim sum dish and we don&#8217;t want to call favourites, but the subtle taste of smoky charcoal blended well with the creamy, flowy salted egg yolk goodness that we were temporarily distracted and ignoring other dishes on the table.</p>

<p style="text-align: justify;">Do not overlook the main courses because some of them really exceeded our expectations. You have to dive right for the Wasabi-infused Baked Fish. The wasabi taste was not overwhelming, which we appreciate. Also, the fish itself is so perfectly cooked with a glistening centre.</p>
<p style="text-align: justify;">Some other dishes that really won our hearts include the Stir-Fried Beef Cubes with Onion. So tender, it fell apart as we bit into it. More beef? Mitzo&#8217;s take on a steak with the Pan-fried Ribeye in Wasabi and Korean Chilli Sauce is worth trying too. Did we mention that this ribeye was extremely tender too? As avid meat-lovers, we were sold.</p>

<p style="text-align: justify;">Usually S$18 a pop, this plate of char siew at Mitzo is a crowd-favourite and has been dubbed by some as the best char siew in the universe. Not even kidding here, because we could eat them every day! For Sunday Brunch, this bad boy is free-flow.</p>
<p style="text-align: justify;"><span style="font-weight: 300;">Melt-in-the-mouth center, tender meat with the right amount of fats, and an impeccably caramelised exterior, the balance of flavours and textures of this sweet meat makes this the best representative of Mitzo, and one that we will always return for.</span></p>

<p style="text-align: justify;">You might already be distracted by the many dishes to try, but have a go at the weekend brunch&#8217;s signature Crackling Roasted Pork Belly Bao. Because braised meat buns might be too mainstream for you, so the chef will go to your table and prep a new-age bun for you.</p>
<p style="text-align: justify;">But they aren&#8217;t too far away from what we know of Cantonese food, really. Think amazingly crispy roasted pork belly stuffed in pillowy steamed buns. There you have it.</p>

We know your dining partners might scoff that you&#8217;re piling up on carbs at a buffet, but the Braised Truffle Udon was so good, we wanted to have another serving! The truffle aroma and taste was extremely distinct and it really elevated a seemingly one-dimensional dish.</p>
<p style="text-align: justify;">Also, the Fried Rice with egg, char siew (yes, the same glorious one) and vegetable had us glowing with happiness at how tasty and homely it felt, bringing us back to the warmth of mom&#8217;s home-cooked food. And if you must, yes, there is &#8216;wok hei&#8217; and that sealed the deal for us.</p>

This new hangout is called <strong>Aqua Luna, located on the 7th storey of Park Hotel Alexandra</strong>, offering an alternative view of the beautiful Queenstown precinct. The stylish alfresco bar is parked right beside the 25-metre infinity swimming pool, and boasts an exciting gourmet menu of bar nosh and exotic cocktails.</p>
<p style="text-align: justify;">But more than its tranquil vibes and interesting variety of tantalising cocktails, Aqua Luna is a stunner and the perfect venue for post-work drinks with colleagues and/or a great night out with your beloved other half. Upon stepping to the outdoors of the pool level of the property, we were amazed and in complete disbelief. The circular rooftop bar was dimly lit and set against the evening skies, candy floss coloured post-sunset skies welcomed us, and our moods were instantly lifted; how can a so-called neighbourhood bar be so sexy?</p>

So imagine our surprise when we found out that Aqua Luna&#8217;s special cocktails and classics are all reasonably priced at S$18++ each! What a delightful steal! Each invigorating concoction is prepared with fresh herbs, fruits and vegetables, and don&#8217;t they just look gorgeous?</p>

<p style="text-align: justify;">Both cocktails are served in old-school silver metal tins and decorated with real fruits. These beverages are actually very potent and you will get the bang for your buck!</p>

<p style="text-align: justify;">Muddled with chilli padi, shaken with dark rum and served with a soursop sorbet, the cocktail is a unique sweet-and-spicy concoction. The spiciness have been underwhelmed by the ice-cream so you do not have to worry about having your tongue on fire!</p>

<p style="text-align: justify;">Each crispy fried batter contained an impossibly tender cauliflower and we love how it packed a punch with its hints of fragrant curry and onion. The addictive vegetarian dish is served with an irresistible cheesy béchamel dipping sauce on the side. Sinful as it may sound, we would return to Aqua Luna just for this, because diet can (sometimes) wait.</p>

<p>For the uninitiated, polenta is a type of thick cornmeal that is most commonly used in Central Europe It is consumed in other parts of the world such as South America and the Middle East, and they may be named differently and more commonly known as cornmeal.</p>
<p style="text-align: justify;">For those who are keen to try something different, you will enjoy these delightful polenta fries that are dusted in parmesan cheese and served with a dollop of homemade truffle-infused mayonnaise dipping sauce.</p>

<p style="text-align: justify;">Of course, the carnivores can join us in feasting on the decadent &#8220;Dirty&#8221; Steak (S$36++) which is grilled to medium-rare and charred in the wood-fired oven while sitting atop charcoal. It is served with anchovy butter and a pinch of sea salt.</p>
<p style="text-align: justify;">How awesome does steak by the pool sound, right? We are all so used to steak in fine restaurants, and this experience at Aqua Luna sure is a fresh breath of air.</p>

<p style="text-align: justify;">On to the flatbreads now, my friends. Essentially wood-fired pizzas served fresh from the oven, these bar snacks are actually very filling and enjoyable with some cocktails (but of course).</p>
<p style="text-align: justify;">There are a total of five flavours to choose from &#8211; Crabmeat &amp; Artichoke (S$24++), Margarita (S$18++), Beef &amp; Chilli (S$20++), Tiger Prawn &amp; Pesto (S$24++) and Chorizo &amp; Onion (S$18++).</p>
<p style="text-align: justify;">It is also worth mentioning that the breads have been painstakingly proofed for at least three hours, hence giving rise to a light and crispy crust. And they are made fresh daily!</p>

You have no idea how we couldn&#8217;t wait to devour the glistening duck. And boy, was it a life-changing dish! We can never look at roast duck the same way again.</p>

Do you know what used to be Checkers Brasserie is now revamped and known as <strong>Opus Bar &amp; Grill</strong>? Dining there is a brand new experience now, and with Opus priding themselves on their grill, you know that you are in for the real deal.</p>

The charcoal grill and dry-age cabinet are what Opus Bar &amp; Grill is building their success on, and they are on a mission to spoil you with only the best meals. Hilton Singapore is the first hotel in Asia to achieve MSC certifications, so you can look forward to sustainable seafood choices such as Seared Hokkaido Scallops, Black Cod Carpaccio, and Glacier 51 Toothfish Fillet.</p>
<p style="text-align: justify;">We hopped by for dinner one of those nights, and here are some of the highlights of Opus Bar &amp; Grill that you have to try when it is your turn too.</p>

<p style="text-align: justify;">Such as Miso Soup, Tom Yum, Kaya Toast Martini, and Durian. You got that right. Exotic, aren&#8217;t they? And we assure you they are not at all weird. Sure, we were skeptical initially, too. How can tom yum be a cocktail?!</p>
<p style="text-align: justify;">But Opus&#8217; bartender is brilliant that way. Being typical Singaporeans with a huge love for kaya toast, it is without a doubt that we fell in love with the Kaya Toast Martini. Mildly sweet with a strong kaya (coconut and egg jam) taste, this cocktail stole the show that night.</p>

<p style="text-align: justify;">The Tom Yum has a smooth taste that is made up of kaffir leaves, lemongrass and galangal &#8211; nothing unusually spicy, and very fragrant in fact. We loved the Miso Soup a lot too &#8211; tasted like umeshu, but is actually a mixture of Haig Club and Zacapa 23 Rum; slightly sour, slightly sweet, and very faintly salty.</p>

The usual fishes that are selected for carpaccio are salmon and tuna, so a Black Cod (S$20) rendition is refreshing and we love how the subtle sweetness of the white fish blended so well with the dehydrated seaweed, cucumber caviar, lemon and olive oil marinate.</p>

<p style="text-align: justify;">Salmon lovers will know that if the fish is well cured, it will be a delicacy that is royally favoured. With spiced creme fraiche, snake fruit and citrus dressing, the Cured Salmon (S$19) at Opus Bar &amp; Grill is a treat indeed.</p>

<p style="text-align: justify;">While Opus is known for its steaks, there are plenty of choices even if you do not feel like having beef. The super tender 36-Hour Pork Belly (S$36) with lychee is a good option.</p>

<p style="text-align: justify;">A beautiful fish dish that the ladies might love if a meaty feast is not for you. The Glacier 51 Toothfish Fillet (S$47) is simplicity at its best, and ideal for the weight-watchers who need to dine out but don&#8217;t want to bust that calorie limit.</p>

<p style="text-align: justify;">This was the star that night. The Ribeye (S$92 for 220g) was done medium rare, just the way we liked it to be. And its marbling may be a score 6, but in all honesty, the fats were so melty that we were under the impression it was at least a score 7.</p>
<p style="text-align: justify;">It also helps that Opus dry-age their own prime meat cuts between 14 to 36 days, and the custom designed cabinet is lined with himalayan pink salt &#8211; the aroma is infused into the meat during the dry-ageing process, producing only the richest flavours of the beef.</p>
<p style="text-align: justify;">Other beef selection on the menu includes the 280g 150 Day grain-fed Australian Sirloin (S$58), 220g 150 Day grain-fed Australian Angus (S$62) and the Australian Rangers Valley Angus (S$110 for 2) that is dry aged 30 days.</p>

<p style="text-align: justify;"><span style="font-size: x-large;">RUSTIC SIDES</span></p>

<p style="text-align: justify;">At S$7 per portion, pick from a selection of Creamy Mash Yukon Gold Potato, Mac &amp; Cheese, and Smoked Risotto with Charred Leek. Everything is pretty heavy in taste, but we love the stark contrast when paired with our steaks. Now, you must not miss out on the creamy mash, really.</p>

<p style="text-align: justify;">With mango gel, white chocolate and young coconut granita, the Coconut Sago (S$14) is delightfully pleasing with its tropical flavours. It is amazing how the sweetness from each individual ingredient blends together as we scoop the various layers and eat them altogether. A wonderful mess, we hear?</p>

<p style="text-align: justify;">Who can resist the theatrics of pouring hot chocolate over a chocolate dome (S$14) filled with blueberry crumble and Baileys ice cream? This is the bomb.</p>

Located along Boat Quay, Ah Sam Cold Drink Stall welcomes all who seeks a good tipple (or two) to lounge on level two as you take in tranquil views of the Singapore River.</p>
<p style="text-align: justify;">Formerly of Jigger &amp; Pony, owner-bartender Samuel Wong (better known as ‘Ah Sam’) helms the bar with Diplomatico World Tournament 2013 Singapore winner, Eugene Chua, to deliver classic-driven bespoke cocktails that are intoxicatingly potent—it seems they don’t hold back on tipping the bottle over (but we ain’t complaining). A saving grace that liberates one from the stress of work is Old Pal (S$20)—bringing together subtle bitter and herbaceous notes of Campari and dry vermouth, and the toasty nuttiness of rye whiskey. Disclaimer: if you’re a lightweight (drinker), this probably isn’t the place for you.</p>

If you’re looking for a watering hole that understands your needs; having a drink without burning a hole in the wallet, this is it. The extensive menu may cease to overwhelm—there’s 13 beers; bottled and on tap, and over 30 spirits available—even sake, wine and bubbly are not spared from the list.</p>
<p style="text-align: justify;">Having said that, quantity does not truncate quality. Premium spirits such as Hendrick’s Gin, Macallan 18 years, Martell Cordon Bleu, Nikka From The Barrel, and The Glenlivet 18 years are also stocked at the bar. While that’s great, what really draws the crowd in are their prices—one of the lowest around. A glass (300ml) of Asahi Super Dry will set one back S$5, while a tower (3l) is priced at S$50. If beer’s not your thing, house pour reds, whites, and spirits are all priced at S$5 per glass. There’s also live music performances Monday to Friday from 7pm. Heads up: it gets busy from 6:30pm, so make your way down early.</p>

We especially enjoyed the G&amp;T ($19) with a touch of mint and grapefruit for a bittersweet yet refreshing profile, as well as the sweet and citrusy smash and grab ($18)—a rum-based cocktail of muddled pineapple, Italian basil and lime.</p>

There’s no wheel reinventing here—just a muted list of American classics with a twist.</p>
<p style="text-align: justify;">Heading the bar is bartender Kevin Petrie, who designs a straightforward cocktail list to enhance the flavors of the spirit. Read: no fancy garnishes here. Reigning high on our list is the Negroni ($15) of Alaska fireweed vodka, Campari and Aperol with a hint of grapefruit, and our swear-by after-work mood-lifter tequila Old Fashioned ($12)—Sparkle Donkey Reposado tequila and a touch of basement bitters. Also available are tasting flights (from $15) that come in a set of three spirits (15ml each)—choose from bourbon, gin, rum, vodka, infused vodka, and whiskey.</p>

The restaurants are either too expensive, or the food just isn&#8217;t good altogether. Sometimes, they are not family-friendly, and kids have nothing suitable to eat. But being here in Singapore means we do not have to worry about all that, because we have trusty establishments to always bring the bests to us.</p>

<p style="text-align: justify;">The newly opened <strong>PISCO South American Kitchen &amp; Bar at Resorts World Sentosa</strong> is one that has made it to our chart of best family-friendly restaurants. Managed by Deliciae Hospitality Management in partnership with Resorts World Sentosa, this 76-seat outlet sits in the heart of the Integrated Resort.</p>
<p style="text-align: justify;">Dishing out quality South American food, PISCO resembles a carnival &#8211; the happy colours of the interior and furnishing make it a joy to dine at, and has an extensive menu that is sure to whet everyone&#8217;s appetite. Here are some of their signatures, and our favourites from the menu.</p>
<p style="text-align: justify;"><span id="more-36925"></span></p>

<p style="text-align: justify;">PISCO features traditional dishes from Peru, Chile, and other countries in the South American continent, and the menu is divided into several categories: Bocadillos (homemade light snacks), Ceviches, Los Pinchos (grilled skewers), A La Parrilla (the grill), and Postres (desserts). In short, expect a good mix of dishes with a melange of textures, colours and flavours influenced by the Native American cuisine.</p>
<p style="text-align: justify;">With so many dishes on PISCO&#8217;s menu, you should certainly pace yourself so that you can try a bit of everything.</p>
<p style="text-align: justify;">Start off with snacks like Nachos (S$11) with spicy guacamole, and Empanadas (S$14) &#8211; minced beef in corn dough parcels. We would also suggest going for the Quesadillas (S$9.50 for 2 pcs), tortilla of manchego cheese that is simply done, and a great way to kick start your meal. Oh, if you are up for trying something different, go for the Arepas Venzolanas (S$13 &#8211; S$15) &#8211; Venezuelan sandwiches made of corn flat bread filled with toppings like shredded beef, black beans and corn.</p>

<p style="text-align: justify;">Having a cocktail (or two) is the best way to enjoy the snacks. Pisco is the national drink for Peruvians, and with this, the drinks to order at PISCO is its variety of pisco cocktails &#8211; like Cocoloco Flip, Negroni Pisco, and the iconic Pisco Sour &#8211; which gives the restaurant its name. Besides pisco cocktails, the bar also offers delicious daiquiris, margaritas and mojitos in exhilarating variations. On Thursday to Saturday nights, you can enjoy the cocktails while listening to music from a live band.</p>

<p style="text-align: justify;">Ceviches, for the uninitiated, are chilled seafood dishes. They are hugely popular, and is considered one of the staples in South American cuisine. Made from raw fish marinated in a tangy citrus juice, and spiced with chilli peppers, ceviches are as appetising as they look. PISCO offers six different variations; each with something to offer.</p>
<p style="text-align: justify;">Amongst the ones that we have tried, we love the Gambas (S$13) &#8211; prawns dunked with mixed citrus fruits- and the result is a refreshing and tantalising combination of freshness and tanginess. The other noteworthy ceviche is Conchas Borrachas (S$15) &#8211; sea scallops drowned with Pisco and passionfruit sauce. This is another great example of how a simple dish done well can be so addictive. Octopus lovers must not miss out on the Pulpo (S$13) &#8211; octopus in olive oil and capers sauce.</p>

<p style="text-align: justify;">Served with three sauces &#8211; mint salsa, salsa criolla, and amarillo chili &#8211; the grilled kebabs is the star of PISCO, and a meal here would not be complete without at least a serving of these perfectly grilled meat that come hanging gloriously on shiny metal skewers.</p>
<p style="text-align: justify;">The meat options include Chicken Thigh (S$13), Pork Belly (S$14), Lamb Shoulder (S$18), and Beef Ribeye (S$23). There are also seafood choices such as Squid (S$15), Salmon (S$16), Seabass (S$17), and Octopus (S$23). The easiest way is to go for a combo (S$45++) &#8211; which gives you one meat, one seafood, and one vegetarian kebab.</p>
<p style="text-align: justify;">The Chicken Thigh was succulent and juicy, and the Pork Belly proved to be even better. We were also impressed by how the Salmon was grilled to a perfect texture with the fish’s moisture retained. But the limelight was stolen by the Beef Ribeye &#8211; well-marinated and every bite tasted like heaven.</p>

<p style="text-align: justify;">If you are with a big group, order the mains from the grill. Grilled Ribeye Steak (S$39), Whole Red Snapper (S$30) cooked in banana leaves, and Grilled Lamb Chop (S$24) are some satisfying options to fill your tummies.</p>

<p style="text-align: justify;">To complete your meal, well, it has got to be desserts. And while the list may not be longer than your typical algebra equation, every one weighs a significant impact. If there could only be one pick, we’d say go for the Churros (S$9). Fans of Sabio Spanish Tapas Bar will be delighted to know that this is the exact same recipe, the legendary recipe that we might just proclaim it to be the best in Singapore.</p>

<p style="text-align: justify;">Another pleasing dessert is the Encenelado de Pisco &#8211; a cake with pisco and cinnamon syrup baked to a sponge-like texture. It sounds more than simple and less than impressive, but it ticked all the right boxes. Else, the adventurous ones can try the Spicy Rice Pudding (S$9), which gives your palate a punch with its dimensional flavours.</p>

For S$18++, it comes with a soup of the day or Quesadillas, a Chicken/Salmon skewer, and steamed olive rice or grilled corn. There is an option of adding S$5 for the to-die-for churros.</p>

As with most cocktails, the origins are hazy, and many (recipes) have since evolved over the years with each bartenders’ rendition. One thing remains: the most important factor of a classic cocktail is quality.</p>
<p style="text-align: justify;">Have you ever thought about what goes into that drink in your hand? What defines a classic cocktail? How do you differentiate a classic cocktail from cocktails?</p>
<p style="text-align: justify;">This <strong>beginners guide to classic cocktails</strong> explains some of the most classic cocktails from six main spirits—brandy, gin, rum, tequila, vodka and whiskey.</p>
<p style="text-align: justify;"><span id="more-36770"></span><strong><span style="font-size: large;">Brandy</span></strong></p>
<p style="text-align: justify;">One of the most classic brandy cocktails is the Sidecar. Making its way into some of the most posh watering holes of London and Paris in the 1920s, this enticing mix of brandy, orange liqueur and a dabble of lemon juice is simply structured but complex enough to liberate jaded palates. Other variations include adding aged rum or green Chartreuse to the recipe.</p>

<p><strong><span style="font-size: large;">Gin</span></strong></p>
<p style="text-align: justify;">“<em>Shaken, not stirred</em>.” James Bond has made martinis famous with his catchphrase when ordering a Vesper martini. The most classic gin cocktail is a martini—made with gin and vermouth, garnished with an olive or a twist of lemon. First concocted back in the early 1910s, the ease of manufacturing gin led to the rise of the martini as a predominant cocktail in the mid 20th century.</p>

<p><strong><span style="font-size: large;">Rum</span></strong></p>
<p style="text-align: justify;">A common classic rum cocktail, the mojito requires five ingredients: white rum, sugar (or simple syrup), lime juice, soda water and mint. The combination results in a refreshing, citrusy sweetness that complements the sharp acidity of rum. Countless variations of the mojito make it difficult to accurately trace back its roots, but the early 19th century sees similarities in one of the world’s oldest cocktails El Draque—using wine in place of rum.</p>

<p style="text-align: justify;">One of world’s most popular cocktails, a margarita (tequila, triple sec and lime juice) is so simple to make, it’s practically impossible to screw up. All ingredients are added into a shaker and filled with ice before being shaken and strained into a cocktail glass rimmed with salt. While the moniker was first made known in the late 1940s by socialite Margarita Sames, its concoction has been dated prior.</p>

<p><strong><span style="font-size: large;">Vodka</span></strong></p>
<p style="text-align: justify;">Having been consumed for over 600 years in Eastern and Northern Europe, the history of classic vodka cocktails (or rather, the lack of one) stretches back a century or more to the early 20th century. An unstoppable classic vodka cocktail, Balalaika has a relatively strong taste of alcohol that may seem harsh at first, but gradually blossoms into a refreshing and tart drink. All it takes is vodka, triple sec and lemon juice—three simple ingredients for this lethal concoction.</p>

<p style="text-align: justify;">The early 1800s called upon the (very first) cocktail as “hair of the dog”—consisting of water, sugar and bitters. The term “old fashioned” was used loosely in the late 19th century to describe the old fashioned way of making a cocktail—choice of spirit, sugar and a dash of bitters. One of the early common spirits, bourbon (a type of American whiskey) was widely used in cocktails. Put two and two together, and the Old Fashioned was born. There’s a reason it’s called an ‘Old Fashioned’.</p>

<p style="text-align: justify;">Perched on top of Equinox complex at Swissotel the Stamford, <strong>City Space</strong> is a chic and elegant lounge bar where you can get a nice cocktail after work. It has a magnificent view of the Marina Bay area, making it one of the best spots to watch sunset in Singapore.</p>
<p style="text-align: justify;"><span id="more-23220"></span>Besides the classic cocktails like mojito ($20) and cosmopolitan ($22), City Space also has their signature creations like &#8216;chocolate in still life&#8217; ($22), &#8216;bubble tea&#8217; ($22), and &#8216;mangaroma&#8217; ($25). If you are not a fan of cocktail, they also have a range of wine, sake, shochu, and spirits available on the menu.</p>

<p style="text-align: justify;">I was pleasantly surprised when the &#8216;mangaroma&#8217; was served. Cold ice was placed in a tin to create a dramatic entrance for the drink. There&#8217;s only one word to describe it: wow.</p>
<p style="text-align: justify;">Equally fanciful was the &#8216;bubble tea&#8217;. The drink is a mixture of gin, fresh grapefruit juice, and cranberry; and the staff did something to create a pretty bubbling effect which lasted for quite a long time.</p>
