<p style="text-align: justify;">Established in 2009 in the small town of Yukuhashi, Fukuoka, Japan which is also Mr Kanada hometown Kanada-Ya has since expanded to 16 outlets worldwide-2 in Japan, 3 in London, 6 in Hong Kong, 1 in Barcelona, and now 4 in Singapore. Four!</p>
<p style="text-align: justify;">We first tried Kanada-ya&#8217;s ramen in London back in 2016 and it is our must-visit restaurant in London ever since. For the uninitiated, Kanada-ya specialises in Tonkotsu ramen. Their rendition is aromatic, authentic and very very satisfying.</p>
<p style="text-align: justify;">Kanada-ya will be opening a 55-seater restaurant at Paragon and to celebrate the opening, it will be offering 100% unlimited cash rebate with no minimum spend and no cap from 19 – 21 December 2020. If you haven&#8217;t tried their ramen, this is the best time to do so.</p>

<p style="text-align: justify;">With years of travelling around Japan to learn the art of ramen up his sleeve, Hock Soon is certainly not afraid to show off what he&#8217;s learnt.</p>
<p style="text-align: justify;">The Black Garlic Ramen (S$7.80) is spiked with robust black garlic oil while the Salted Egg Tonkotsu Ramen (S$8.80) sees an intriguing blend of briny essence and creaminess.</p>

<p style="text-align: justify">What sets Gangsta Ramen apart from the <a href="https://www.ladyironchef.com/2019/01/ramen-restaurants-singapore/">usual ramen restaurants in Singapore</a> is that they are the first place in Singapore to emulate Ichiran Ramen&#8217;s private ramen dining concept! Their prices are also NETT, with no GST or service charge.</p>

All the soups are simmered in the same tonkotsu broth, so taste wise, it was not that much different from their original ramen. The cheese was a let-down; it only coated the first few noodle strands, and the broth did not have the richer, cheesier taste as claimed.</p>

The ingredients were generous in portion as well, with thick slices of pork belly, bamboo shoots and wood ear mushrooms.</p>

<p style="text-align: justify;">Opened by Master Chef Onishi Yuki, Michelin-Starred Japanese Soba Noodles joint Tsuta in 18 Taiseng, Sugamo impresses with their expertly prepared bowls of ramen. The soup is composed of a lot of various ingredients, such as whole chicken, herbs and seafood like Asari clams, which are all carefully selected and their noodles are made from scratch using a combination of different flours.</p>

Sweet, oily with a deeply charred flavour and texturally one of the most delicate pieces of fish around, take our word for it and order a bigger portion of this. </span></p>

We opted for the most basic, Tonkotsu Ramen (S$10.90) which came with a generous portion of ramen noodles, slices of pork and a beautifully seasoned egg.</p>
<p style="text-align: justify;">The Tonkotsu broth was rich in flavour and brimming with porky goodness. The infusion of the black fungus really does give it a heightened umami taste and we particularly loved just how thick and concentrated the broth was.</p>

<p style="text-align: justify;">We got the Kaisen Don (S$7) along with the Ikura Don (S$7) which comprised a generous serving of diced up salmon, tuna, scallops, geoduck and a huge dollop of ikura over top. Salty, fresh and jam-packed with umami goodness, this is definitely something to opt for if you&#8217;re a sashimi fanatic.</p>

<p style="text-align: justify;">Well, yes. The thick and creamy Tonkotsu broth was oh so satisfying and we felt that for S$10.90, it was a steal. As for the Chashu, you may feel slightly disappointed when you see a singular piece but throw away all of such judgment because the meat was tender and had a melt-in-the-mouth texture.</p>

Like the Tonkotsu, it had the same ingredient makeup except for the addition of chilli oil, Ajitamago and a scoop of spicy minced pork. For us, we did not feel that the broth was particularly spicy but it further enriched the taste of the broth.</p>

The fluffy atsuyaki egg omelette wraps a rich mentaiko filling and is drizzled with mayonnaise sauce. The pickled cod roe is mildly spiced.</p>
<p style="text-align: justify;">Hachifukumaru Ramen is a non-pretentious Japanese eatery and we certainly will return for their wholesome bowls whenever our ramen craving strikes.</p>

<p style="text-align: justify;"><strong>Ichiran Ramen</strong> is a popular ramen chain in Japan, and it has been widely accepted as one of the best spots for tonkotsu ramen. And I could not agree more wholeheartedly. A bowl of Ichiran ramen is super satisfying, and very affordable (¥780/S$10). It is undisputedly a ramen house that you cannot miss out on when you are in Japan.</p>
<p style="text-align: justify;"><span id="more-33249"></span>Ichiran does an exceptional tonkotsu ramen, and has most definitely set the benchmark for Japanese ramen. The broth is unbelievably rich, and thick, and something inexplicably but really special that it wows you with every sip (or slurp). It is so good that I am always caught in a situation to decide on whether I should do a second bowl. The noodles are cooked just right, springy and al dente &#8211; exactly the way I like my ramen to be. And if this is what you like too, be sure to select the &#8220;extra firm&#8221; option when you place your order. The chashu is also spot-on; every bite makes me go weak in the knees. It is, in a nutshell, the perfect bowl of ramen. Let&#8217;s just put it this way &#8211; If you are a fan of tonkotsu ramen, it is impossible to not like Ichiran&#8217;s rendition.</p>

<p style="text-align: justify;">For the benefit of those who do not know, at Ichiran Ramen, you have to get a ramen ticket at the vending machine located at the entrance of the restaurant to choose your ramen and toppings. Next, you have to fill up a 5-field form to indicate your preference (noodle&#8217;s firmness, types of garlic, level of spicy-ness&#8230;) and customise your ramen. You will then be ushered to wooden booths where you slip your order forms into this small hole, and the staff will pass you your ramen through the same hole &#8211; the whole time, no one sees each other. It is simple yet fascinating.</p>
<p style="text-align: justify;"><img class="alignnone size-full wp-image-33344" alt="Ramen Vending Machine" src="http://www.ladyironchef.com/wp-content/uploads/2013/10/Ramen-Vending-Machine.jpg" width="710" height="1115" /></p>
<p style="text-align: justify;">While the process of ordering ramen via a vending machine is very common in Japan, no ramen restaurants in Singapore have adopted this method. I am puzzled as to why this system is taking so long to be an F&amp;B trend here. The system greatly improves the efficiency of the ordering process, and makes the work easier, smarter and safer for the staff.</p>
<p style="text-align: justify;"><img class="alignnone size-full wp-image-33345" alt="Ramen Booth" src="http://www.ladyironchef.com/wp-content/uploads/2013/10/Ramen-Booth.jpg" width="710" height="473" /></p>
<p style="text-align: justify;">As for the part where the staff would pass the ramen through the small hole at the booth, it is indeed a brilliant concept for two reasons. First, it helps to create a unique experience for the customers where they get to dine in a booth. Second, it improves the efficiency of the entire operation and makes the work a lot easier and safer for the staff as it reduces the risk of them bumping into diners while serving the ramen.</p>
<p style="text-align: justify;">In Japan, the country which developed the business concepts of 5S and kaizen (or continuous improvement), the Japanese had to find ways to streamline, reduce wastages and improve tirelessly.</p>
<p style="text-align: justify;">Singapore still has a long way to go before catching up with Japan’s technology, and with the shortage of F&amp;B staff here, it will be a welcome change if casual dining restaurants here could find ways to get the food served faster to customers.</p>
<p style="text-align: justify;">After all, investments to raise productivity can be partially subsidized by NTUC’s Inclusive Growth Programme, and with over 800 such projects in the works, I am looking forward to happier staff and better customer experiences in Singapore in future.</p>

It is not only innovative and interesting for the diners, but it also makes it easier, smarter and safer for the staff to perform their duties within tight space constraints. Ichiran has opened in Hong Kong this year, and I hope that they will be opening a branch in Singapore soon. Until then, we just have to plan a trip to Japan for their delicious ramen.</p>

<p style="text-align: justify;"><strong>Menya Musashi</strong> is one of the most <a href="http://www.ladyironchef.com/2013/08/singapore-best-ramen/">popular ramen shops</a> in Japan, and when they first opened in Singapore, there was a lot of hype and the wait during meal times was easily at least an hour. Nowadays, the queue is not as crazy as before, and it is also partly because Menya Musashi has five outlets around the island.</p>
<p style="text-align: justify;"><span id="more-30944"></span>Menya offers three different types of ramen &#8211; &#8216;White&#8217;, &#8216;Red&#8217; and &#8216;Black. The classic is the &#8216;White&#8217; Ramen, a hearty bowl of springy noodles in a thick and rich tonkatsu broth. My favourite &#8211; and what I would go back to enjoy time and time again &#8211; is the &#8217;Red&#8217; Ramen which comes with a spicy and intense broth. The &#8216;Black&#8217; Ramen with garlic and onions, on the other hand, is a little too oily for my liking.</p>

<p style="text-align: justify;">Every branch has the same ramen soup bases, but they serve different toppings. The aburi duck is good, but it pales in comparison when the toothsome kakuni (braised pork belly) comes into the picture. The same goes for the chashu. It is good, but I have had better ones elsewhere, so whenever I dine at Menya Musashi, I always make sure to have the Red Ramen with Kakuni.</p>
<p>One of the reasons why Menya Musashi&#8217;s ramen is so special is because of the broth. It is boiled for more than nine hours, and the chef has to stir it every half an hour to prevent the bottom from being burned.</p>

<p style="text-align: justify;">There are mixed reviews about Menya Musashi. There are many supporters who would rave about the ramen and go as far as to say that it is one of the best ramen in Singapore. There are also others who find it over-hyped and do not understand why it is so popular. I appreciate Menya Musashi because the ramen is always consistently good. And now that it is available in Singapore, I am glad that we no longer need to fly to Tokyo just to satisfy our ramen cravings.</p>
