<p>Estuary is a new seafood restaurant &amp; oyster bar by ex-radio DJ and restaurateur, Daniel Ong who is behind <a href="https://www.ladyironchef.com/2021/03/dans-steaks-daniel-ong/" target="_blank">Dan&#8217;s Steak</a>, Chef Polo Seah (the Ex-Group Executive Chef of Jigger and Pony Group), and Chef Gary Lian.</p>
<p>The new pescatarian restaurant has opened at Palais Renaissance in Orchard Road on 28 May 2022.</p>

<p>Estuary&#8217;s kitchen will be helmed by Chef Polo Seah, who is listed as the ex-Group Executive Chef of Jigger and Pony Group by Estuary and he was previously in charge of several popular restaurants under the Jigger and Pony Group including Humpback, Sugarhall, Live twice, Gibson &amp; Caffe Fernet.</p>
<p>Chef Gary Lian, previously Ex-Chef de Cuisine for Sugarhall and Caffe Fernet, will be joining Chef Polo Seah in the kitchen.</p>

<p>Estuary specialises in seafood, oysters, grilled vegetables as well as a curation of wines, cocktails and local craft beers.</p>
<p>They have a fantastic Happy Hour promotion from 4.30pm &#8211; 7pm where you can enjoy live oysters at S$3 each and wines and beers at S$10. Estuary has 4-5 kinds of oysters available every day and some of the options include Coromandel (New Zealand), Coffin Bay (Australia), Geay La Friandise (France) and David Hervé Royale (France).</p>

<p>Other than seafood and oysters, Estuary delicates a section of the menu for its garden greens. They are working with local hydroponic farms to source for the freshest vegetables—grown in mineralised water instead of soil.</p>
<p>The Hispi Cabbage (S$15) didn&#8217;t look like much but it was truly outstanding. We never knew cabbage could taste like this and the accompanying rosemary cheese sauce was so good.</p>

<p>The Crispy Sebago Potato (S$16) featured layers with potatoes deep-fried to a beautiful shade of golden brown and paired with a super addictive anchovy aioli.</p>

<p>The Dungeness Crab Kataifi (S$18) was quite possibly our favourite item out of the many dishes that we tried. It came with huge chunks of crab meat stuffed in a pastry and served with Kano Miso sauce. It is definitely a must-order dish when you are dining at Estuary. Pro tip: ask for extra Kano Miso sauce to go along with the crab meat.</p>

<p>Another dish that you must not miss is the Tua Tua Clams (S$24)—huge and huicy clams served with roasted Jerusalem artichokes.</p>

<p>Estuary has a dry-aging cabinet on-site to dry-age Farmed Turbot, Murray Cod, Barramundi, Scottish Salmon and Hamachi.</p>
<p>We had the Scottish Salmon and Hamachi and both were absolutely delicious. Nothing too fancy, just simple and hearty dishes that were superbly cooked.</p>

<p>The Sarawak Bario Claypot Rice (S$35) was the highlight of our dinner. The claypot rice featured 4 types of aged fish including salmon, barradmundi, hamachi and tuna. And the Chao Tah rice was topped with uni and ikura. This was the bomb and easily one of the best claypor rice that we&#8217;ve ever had.</p>

<p style="text-align: justify;">The problem with most pet-friendly restaurants/ cafes in Singapore is that the food for humans is always shitty, and sometimes there is no shelter so there are no bad weather contingencies if it rains.</p>
<p style="text-align: justify;">And all these make NUDE Grill even more ideal when you want a good meal at a nice seafood restaurant in Singapore but can&#8217;t bear to leave your furkid alone at home. They do not have a menu for pets but hey, that&#8217;s a small issue.</p>

<p style="text-align: justify;">NUDE Grill is able to serve quality seafood at reasonable prices as their family business is Hai Sia Seafood, a 3rd generation seafood wholesaler.</p>
<p style="text-align: justify;">On their menu, expect honest good food from all-day brunch items to fresh seafood and Binchotan-grilled meats.</p>

Oh, we sometimes cheat by letting our furkid have a piece of steak.</p>

We were hooked on the Fried Beancurd Roll (S$4/half, S$8/full) that gave a lovely crisp—but the tip is to only dip it into the bubbling soup for 3 seconds. It was really addictive, to say the least!</p>
<p>The abalone (S$15/half, $30/full) was also stellar along with the Red Garoupa (seasonal price) that captured the essence of the hearty broth infused in its soft, flaky white meat.</p>

There is also a stellar variety of pork but we say you go straight for the US Kurobuta Pork Belly Shabu (S$7/half, S$14/full).</p>
<p style="text-align: justify;">And the meat party doesn&#8217;t stop there. You must try Captain K&#8217;s Homemade Balls. Every meatball is huge and substantial, making it more filling than it looks. There is the Assorted Meat Balls Combo (S$11) for those who want the best of all worlds. <p style="text-align: justify;">We thanked our lucky stars when we saw the massive Alaskan King Crab (S$20++/100g, min. 2kg) in front of our eyes. Weighing about 4kg, our crab was massive. It is ideal for large groups because of its colossal size.</p>
<p style="text-align: justify;">Alaskan King Crab is in season and we got the freshest catch, still alive minutes before it was cooked and served to us.</p>

The crab is surrounded by the steamed egg that has been flavoured with the Chinese wine. With this style of cooking, the flesh turned out to be extremely sweet, juicy and oh-so-soft! Nothing can beat seafood that is simply steamed because you get to taste the undisturbed genuine flavours.</p>
<p style="text-align: justify;">The fragrance of the Chinese wine was also very prominent and complementary to the sweet flesh of the crab.</p>

<p style="text-align: justify;">These Bamboo Clams (S$14/piece) from Scotland were so meaty and substantial that we slurped them up in seconds. We had ours steamed with Chef&#8217;s special soy sauce and a dollop of delicious homemade chilli sauce on top.</p>
<p style="text-align: justify;">The subtle soy sauce and a hint of fiery heat from the chilli were great complements to the actual fleshy clam. Each bite was just so pleasurable.</p>

<p style="text-align: justify;">All the way from Busan in Korea, the Turbot Fish (S$18++/100g) is a luxurious fish. It is priced at a higher range than your regular grouper or pomfret and has a firmer flesh, almost like a combination of monkfish and stingray.</p>

There is something about Turbot Fish that is a little acquired but not difficult to love. Because of its firmer texture, eating it feels more gratifying in return!</p>

<p style="text-align: justify;">Lobsters have long been regarded as an expensive treat. The Local Lobsters (S$18/100g) here at Yàn are amazing when deep fried with a side of Yàn&#8217;s house-made Chardonnay White Wine Sauce.</p>
<p style="text-align: justify;">This cooking method is more of an upmarket Western style as opposed to the cooking style of the previous few dishes.</p>
<p style="text-align: justify;">It is easy to overcook lobsters like this where it becomes rubbery, but fret not, the chefs have aced the deep frying and when you have the lobster served immediately, the flesh inside is still nice, warm and juicy.</p>

<p style="text-align: justify;">As a great communal dish, go for some Deep-Fried Live Prawns (S$8/100g). We had ours deep fried then stir fried with some fragrant garlic and black bean for a burst of flavours.</p>
<p style="text-align: justify;">Because these prawns have been deep-fried, you can even chow down the flesh with the shell! Nice and crunchy with every bite, we were just blown away by the simple yet intense flavours of this dish.</p>

The latter dish is crisply beer-battered, revealing within a moist, glistening halibut served alongside very addictive truffle fries, which is one of the best in town by the way.</p>
<p style="text-align: justify;">Grab a bottle of Sauvignon Blanc or Pinot Noir (Black Cottage) that comes inclusive in your set. Although you can’t go wrong with a Marlborough-based Sauvignon Blanc for fish and seafood, the carefully chosen Pinot Noir is light and smooth, and is a great red wine complementing both mains as well.</p>

Expect intense flavours that will only leave you wanting more.</p>

<p style="text-align: justify;"><strong>The Naked Finn</strong> might just be all of that. This beautiful restaurant in Singapore has been around for a while, and we thought you might want to know they dish out awesome lobster rolls, prawn noodles and other seafood dishes.</p>
<p style="text-align: justify;">Sitting within Gillman Barracks at Alexandra Road, getting there might be a challenge; doesn&#8217;t help that they do not have a visible signboard too. But take that drive, look out for a glass unit of sort that is covered with cascading vines, and there you have it—The Naked Finn. Not so naked, after all.</p>

It is only available during lunch, and at S$35, you get a decent serving of the American Classic Lobster which features 90g of lobster meat with homemade mayonnaise/crème fraîche, and straight cut fries.</p>

You might still be shocked by the price tag, but trust that it is prepared with premium ingredients for an elevated taste. Prawn noodles are usually overly rich and salty, but not in the case of The Naked Finn&#8217;s rendition.</p>

<p style="text-align: justify;">They do not add MSG, and the result is a balanced and delicious stock. The prawns were fresh, but it was the fork tender berkshire (kurobuta) pork belly that stole the show.</p>
<p style="text-align: justify;">Granted, not everyone will be willing to spend so much on a bowl of prawn noodles, but if you can look beyond the fact that this is not your ordinary hae mee, you would appreciate that this is a dish which has the potential to represent Singapore cuisine if someone were to open a Singapore restaurant in cities such as New York or London.</p>
<p style="text-align: justify;">We will be back to try the dinner set for 2 (S$138) which includes Kang Kong, Wild-caught Baby Squid, Wild-caught New Zealand Littleneck, Giant Pacific Sea Scallop, Locally-Farmed Barramundi and Farmed Tiger Prawns.</p>

<p style="text-align: justify;"><strong>Quayside Fish Bar &amp; Bistro</strong>, one of our go-to places for fresh and good quality seafood, opens till when the owls come out to play, and they have a late night nibbles menu which not only features your usual snacks, but also a pretty comprehensive selection of appetisers and mains.</p>

Alternatively, the Black Sesame Cheese Pound Cake (S$14), with chocolate soil, dehydrated lychee, and a scoop of chocolate gelato, is a fine way to end your night.</p>

<p style="text-align: justify;">Crisp on the outside, and moist on the inside, the crab cakes were plump, meaty and bursting with flavours and freshness. SO GOOD.</p>

It features classic items such as Baked Mini Egg Tart, Steamed Glutinous Rice and Baked Custard Bun. My personal favourite is their Baked Barbecued Pork Buns &#8211; it is as good, if not better, than the ones that I have had in Hong Kong.</p>
<p style="text-align: justify;">The talented dim sum chef Yiu Cheuk Yin at Wah Lok has also created several new items that you should look out for. Deep-fried Crabmeat &amp; Scallop Balls with Chilli Sauce, Deep-fried Rolls with Seafood &amp; Sea Cucumber, and Steamed Vegetarian Beancurd Skin Rolls are some of the new dim sum that will make you return to Wah Lok again and again.</p>

<p style="text-align: justify;">There has always been a debate over the difference between farm-bred and wild-caught fishes. The former, while much more readily available and affordable, has a higher chance of being contaminated, hence more prone to getting disease. The latter live in their natural habitats out in the open waters, and is hence a lot healthier. We can go on and on about the benefits of wild-caught fishes, but we will leave that for another day. While I am always happy to order wild-caught fishes when I dine out, restaurants in Singapore hardly place an emphasis on it and hence stick to using conventional farm-bred ones.</p>

The pastas (S$28) are too delicious to a fault, and nobody can resist the Baked Half Boston Lobster (S$54). They have oysters (S$4.30 &#8211; S$9.35 per piece) from around the world &#8211; Tasmania, Scotland, Ireland, France, to name a few&#8230;</p>

<p style="text-align: justify;">What I also like about Quayside Fish Bar &amp; Bistro is that it has a special and very personalised Blackboard menu which changes daily with the freshest produce that the chefs source for the day. First, you choose a fish (min order of 200g for dine-in), then select your preferred cooking method &#8211; baked mole, herb crusted, roasted, cartoccio, and poached. And finally, choose the side dish to go along with the fish.</p>
<p style="text-align: justify;">We tried a Chilean Seabass in Baked Mole style. The fish was fresh and tender, but what worked wonders for it was the sauce, which was tangy and very flavourful. It was accompanied by a generous stack of shoestring white truffle fries.</p>

The former was a kick-ass spicy and fiery hot rendition of the iconic Singapore dish, while the latter came in delicious squid ink XO cream with hint of brandy, topped with huge chunks of lobsters.</p>
<p style="text-align: justify;">The standout dish on the menu is surely the qsfb&#8217;s Fresh Seafood Platter (S$150, for 2 to 3 pax) &#8211; with the choice of hot or cold &#8211; which features an entire Boston lobster, seasonal oysters, Hokkaido scallops, snow crab, crawfish, tiger prawns, scampi, and more truffle fries.</p>

But the must-try dessert is their Homemade Tiramisu (S$14), which is rich and doused in a copious amount of alcohol. This might just be one dessert to leave you with withdrawal syndrome &#8211; if that is even possible.</p>

<p style="text-align: justify;"><strong>Jumbo Seafood</strong> is a household name when it comes to having seafood in Singapore. With numerous branches and a strong brand-name, it is safe to say that they are one of the most famous Chinese seafood restaurants in town.</p>
<p style="text-align: justify;"><span id="more-23187"></span>The food is generally good &#8211; from the famous chilli crab with deep fried mantou, to salted egg yolk prawns, the crispy baby squids, and mee goreng.</p>
<p style="text-align: justify;">There are people like my pals Fred and <span style="text-decoration: underline;"><a href="http://belluspuera.blogspot.sg/">Velda</a></span>, who are regulars as they have been going there for years with their family. There are also many others who frequent Jumbo because it is a relative safe place (somewhere you can&#8217;t really go wrong) to bring overseas visitors.</p>
<p style="text-align: justify;">I am not a fan of Jumbo Seafood, though. I find it a little too commercialise and touristy. I don&#8217;t mind going there if my friends want a quick fix in town, but I probably will not suggest it on my own.</p>
<p style="text-align: justify;">If you are planning for a seafood feast, go to their East Coast outlet. Otherwise, the branch at Riverside Point is also very popular and enjoys a regular stream of customers.</p>

<p style="text-align: justify;">You know a marketing campaign is successful when people still remember the slogan after a long time. When you mention Chin Huat Live Seafood, chances are, people will think of the slogan &#8220;lobster bigger than little girl&#8221; used in their television advertisement years ago.</p>
<p style="text-align: justify;"><strong>Chin Huat Live Seafood</strong> at Sunset Way, is of course, more than just lobsters. Besides the typical Sri Lanka crabs, they offer a huge variety of seafood and popular zichar dishes.</p>
<p style="text-align: justify;"><span id="more-19801"></span>The restaurant was pretty full when we went on a weekday for dinner. As it was just a casual family dinner, we decided to play safe and order the usual stuff like chilli crabs, deep-fried chicken, and sambal kangkong.</p>
<p style="text-align: justify;">Everyone knows that Chilli Crab is one of the <span style="text-decoration: underline;"><a href="http://www.ladyironchef.com/2011/07/singapore-must-eats-best-food/">must-eats in Singapore</a></span>. But to be honest, I have a love-hate relationship with it.</p>
<p style="text-align: justify;">On one hand, I really love dipping the deep-fried mantou into the savoury-sweet chilli gravy. On the other, the amount of work &#8211; from cracking a shell that&#8217;s as hard as a bulletproof tank; to trying to coax the meat out from the deep end of the shell &#8211; doesn&#8217;t justify all the work for so little flesh.</p>
<p style="text-align: justify;">More than anything, I am a lazy person who doesn&#8217;t like to dirty his hands just for crabs. But fine, I did it anyway. Who can resist the temptation of Chilli crab with deep-fried mantou?</p>

<p style="text-align: justify;">As much as I&#8217;d love to try Chin Huat&#8217;s signature Golden Sauce Crab, we only had room for another crab and we went for the Salted Egg Yolk Crab ($43 per kg). It was <em>okay</em>. I felt that the salted egg yolk crab would be better if there was more gravy.</p>

<p style="text-align: justify;">I was trying very hard to concentrate when the Dong Po Rou ($16) arrived. They were magnificent &#8211; just look at the picture above!</p>
<p style="text-align: justify;">The others commented that the sauce was a little too sweet, but I thought that it was just nice. Then again, I have a really sweet tooth, so don&#8217;t take my word for it.</p>

<p style="text-align: justify;">The Deep-fried Crispy Chicken ($12 for half) was equally good-looking. It&#8217;s really difficult to breathe when you have Chilli Crab, Salted Egg Yolk Crab, Dong Po Meat, and Crispy Chicken on the table. I felt as though I was in a room surrounded by gorgeous babes.</p>

<p style="text-align: justify;"><strong>Chin Huat Live Seafood</strong> at Sunset Way serves competent food at reasonable prices. Besides the usual zi char, they also have other unique dishes like Wagyu Beef on the menu. It is a great place to have live seafood if you are staying in the west of Singapore.</p>
