<p dir="ltr" style="text-align: justify;">There’s no shortage of Japanese ramen restaurants in Singapore, and joining the lineup over at South Beach Avenue is Ebi-Tori Menzo.</p>
<p dir="ltr" style="text-align: justify;">Hailing from Osaka, Ebi-Tori Menzo, as per namesake, specialises in both chicken ramen and shrimp tsukemen. For the uninitiated, tsukemen is a form of dipping noodles, and the sauce it’s served with is a thicker and richer version of the usual ramen soup broths that we are used to.</p>
<p style="text-align: justify;">Their signature ramen offering may not rank as high as compared to many others out there but here&#8217;s why you should pay this humble ramen restaurant a visit anyway.<br />

<p dir="ltr" style="text-align: justify;">We ordered both their signature dishes—their Signature Ebi Tsukemen (S$17.90) and their Shio Chicken Ramen (S$15.90).</p>

<p dir="ltr" style="text-align: justify;">Their Signature Ebi Tsukemen was served with a mix of fresh salad leaves, tomatoes, sweet potatoes cubes, a slice of baguette and a thick slice of Chashao.</p>
<p dir="ltr" style="text-align: justify;">They use over 15 ingredients—all of which are on display on their wall mural—in just their shrimp based dipping sauce and broth alone. The result is reminiscent of both mee rebus and lobster bisque.</p>
<p dir="ltr" style="text-align: justify;">To be completely honest, in spite of the hype of the sauce itself being intensely flavoured with shrimp and other seafood items, our taste buds felt differently. Granted that the sauce was rich (as it&#8217;s meant to be), the flavours of prawn did not really come through as prominently as we would have liked.</p>

<p dir="ltr" style="text-align: justify;">We actually preferred the Shio Chicken Ramen. It was topped with two slices of the same thick-cut Chashao, bamboo shoots and shards of sweet potato crisps.</p>
<p style="text-align: justify;">What caught our attention was not the noodles or broth, but surprisingly, the sweet potato crisps. The flavour of the long crisps melded well with the flavour of the Shio broth, unlikely to be found anywhere else.</p>
<p dir="ltr" style="text-align: justify;">Both bowls of noodles were served with Chashao. We found them neither too fatty nor too dry, and it provided an adequate chew before melting away in our mouths. However, for some, it might be considered too salty.</p>

<p style="text-align: justify;">The skin was incredibly crisp with a light dusting of spices to give it a slight kick. The heart may seem daunting at first, but it is actually really tasty with an interesting texture to it—tender and not off-putting at all.</p>
<p style="text-align: justify;">Overall, this is a great place to hang out be it after work or not. We thoroughly enjoyed ourselves from the great skewers, friendly staff, right down to the sexy interior (of which is perfect for selfies).</p>

Hi-So Rooftop Bar is a poolside bar in the hotel, and it is like a playground in the midst of the concrete jungle.</p>
<p style="text-align: justify;">You can rest and relax on one of the sofa seats &#8220;cabana-style&#8221;, and sip on a tropical cocktail. Snap a few Outfit of The Day (#ootd) shots in this photogenic rooftop bar, too.</p>

<p style="text-align: justify;">The entire place sure is photo-worthy &#8211; from the sleek bar to the casual seating area. Although the lighting at Loof is pretty dim and uneven, a photo as such is possible with the Canon Powershot G5 X. The signature low light feature had us snapping away with ease!</p>

But the brainchild of Mediacorp artistes Cynthia Koh and Michelle Chong and ex-Radio Jockey Daniel Ong is one place with really great deals on their beer and house pours.</p>
<p style="text-align: justify;">We love Mischief for their low-hanging fairy lights and multi-coloured chairs &#8211; perfect for some portraits, or wefie moments with friends. Here&#8217;s a tip &#8211; you can hold up your food or drinks against the fairy lights for a blurred out (bokeh) effect. That will be a gorgeous photo there!</p>

<p style="text-align: justify;"><strong>Teppei Japanese Restaurant</strong> at the ground floor of Orchid Hotel has been gaining a strong following because of its extremely affordable omakase (prices start from S$50/pax). The last time we checked, its omakase during dinner is fully booked till December. If you are not able to get a table for omakase, go for its barachirashi and tempura set during lunch.</p>
<p style="text-align: justify;"><span id="more-41805"></span>The Barachirashi (S$17.60) is decent and inexpensive – probably one of the <a href="http://www.ladyironchef.com/2014/06/singapore-best-chirashi-don/">cheapest chirashi you can get in Singapore</a> – but it is not worth the hype. It suffices as an introductory bowl for first-timers, decent enough, but there are many more chirashi-don out there that shout freshness and variety way better.</p>

<p style="text-align: justify;">The Tempura Set (S$16.50 &#8211; S$19.80), on the other hand, fared much better. Fried individually at the bar, the tempura was crispy, light and not overly greasy. We would go back for it regularly if not for the long queue during lunch.</p>

Focusing on premium seasonal sakes in limited quantities (and prices to match), the list here changes regularly—flavors and tastes vary according to the season.</p>
<p style="text-align: justify;">Service standards here are impeccable—product knowledge is highly appreciated. One good reason to pop by the bar is award-winning Isojiman 2011 Nakatori Junmai Daiginjo 35% ($1,000 per bottle) with an SMV (sake meter value) of +5 and a seimai-buai (rice polishing ratio; the lower the better) of 32%.</p>

<p style="text-align: justify;">The emergence of new sake player Bam! is one to be thankful for. A brand new concept that pairs Japanese sake with Spanish dishes (by former Santi chef de cuisine Pepe Moncayo) brings an element of surprise that tantalizes tastebuds. Yopparai means “drunkard” in Japanese—seemingly the mission here with a specially curated list of over 80 sakes by sake professional Derrick Lim, and food in a supporting role.</p>
<p style="text-align: justify;">Exclusively available at Bam! is MAR ($110-$120 for 720ml); a highly limited collection of sake from the Ehime prefecture—specially chosen by a panel of sake experts to pair specifically with Spanish food. An example is the red range that enhances flavors of umami when paired together, or the yellow range that not only brings out flavors of ham, but tenderizes it as well.</p>
<p style="text-align: justify;">If you’ve well-mastered the art of sake appreciation, opt for one of the top sakes—only 300 bottles are produced annually, Katsuyama Diamond Lei ($1,120) that uses a state of the art centrifuge extraction method, resulting in incredibly pure aromas and clearly defined tastes.</p>

<p style="text-align: justify;">Also available are yamahai sakes—made from the “yamahai” method only used in specialty brews for the earthy flavors it produces. Seasoned sake drinkers will appreciate the Kariho ($47 per carafe)—a full-flavored yamahai junmai with an SMV of +12, that’s fruity, crisp and refreshing, or Chiyomusubi ($135 per carafe).</p>

<p style="text-align: justify;">With an extensive list of premium boutique sakes that’s constantly proliferating—the current list stands at 400, it’s no wonder this cozy bar is abuzz with Japanese locals. If you’re looking to try your hand at sake-drinking, you’ve hit the gold mine.</p>
<p style="text-align: justify;">Ranges of sake sampler sets ($30 for three) are available here, classified into four flavor categories: refreshing, rich, sweet, and dry. House original private label Fukagawa Dragon ($98 for 720ml) is another easy-drinking sake that’s smooth on the palate. It’s rare to find bar service that’s top notch so we appreciate how the staff here are well equipped on their product knowledge, gladly describing the origin and characteristics of each type of sake when asked.</p>
<p style="text-align: justify;">Sake veterans, let the staff know of your preferred tastes and seek recommendations for their off-the-menu seasonal sakes (the list only showcases 150 mainstays)—you’ll be pleasantly surprised.</p>

<p style="text-align: justify;">Specialising in rare and exclusive sakes, San-Sui stocks sakes that are limited to 10 bottles islandwide, as well as seasonal sakes that change regularly. For beginners, opt for the Dassai 23 Junmai Daiginjyo ($198 for 720ml) from the Yamaguchi prefecture with a fruity and deep flavor profile, or the Haikassan Junmai Ginjyo ($128 for 720ml) if you prefer something more crisp and clean.</p>
<p style="text-align: justify;">Available only at San-Sui is Tedorikawa Daiginjo Mangekyo ($360 for 720ml), brewed in the Ishikawa prefecture; an aromatic sake with an SMV of -10 (hence its sweeter flavor). A rarity is its mellowness, which can only be experienced when made with the highest daiginjo. Also delicious is smooth-drinking sake Haikassan Junmai Ginjyo ($360 for 800ml) with rich and full flavors that balanced and deep—especially great when paired with yakitori.</p>

<p style="text-align: justify;"><strong>Izakaya</strong> is a casual <span style="text-decoration: underline;"><a href="http://www.ladyironchef.com/2010/04/best-japanese-restaurant-singapore/">Japanese bar</a></span> where you can enjoy food with drinks. It reminds me of <a href="http://www.ladyironchef.com/2010/10/best-spanish-restaurants-food-singapore/">Spanish Tapas Bars</a>, and one of the best things about such dining concepts is that you get to try so many different food.</p>
<p style="text-align: justify;">Located at Holiday inn Singapore Orchard City Centre in Cavenagh Road, <strong>Taira Izakaya</strong> is the perfect place to go after a long day of work for some light snacks and drinks.</p>
<p style="text-align: justify;"><span id="more-16789"></span>The Japanese drinking bar has a pretty comprehensive menu and the items are reasonably priced. You can find sashimi ($15-20 for 5 pcs), sushi ($3-12/pc), maki ($5-12 for 6 sushi roll), grill items ($5-25), skewers ($$2.5-5/stick), and tempura ($5-12).</p>
<p style="text-align: justify;">Izakaya food is slightly more substantial than tapas, and they are meant to be shared. It is probably a good idea to go with a group of friends so that you can try more food.</p>

<p style="text-align: justify;">We started with the California Roll ($10). The gorgeous sushi roll was utterly delicious, and we finished it very quickly. Needless to say, we were tempted to order a second helping, but we decided to try the Spicy Tuna Maki ($12) instead.</p>
<p style="text-align: justify;">While waiting for the Maki to come, we had the Salted Grilled Unagi ($16), Yakitori ($2.5) and Enoki Bacon ($2.5). My dining companion is a big unagi fan and she thought that the one that we had was nothing special. Given that there are so many yummy choices like teriyaki grill cod, grill kurobuta and miso grill king prawn amongst the Yakimono selection, we probably wouldn&#8217;t order the Unagi again.</p>
<p style="text-align: justify;">I thoroughly enjoyed <em>Taira Izakaya&#8217;s</em> bacon wrapped mushroom &#8211; it was extremely juicy and tender. The Chicken Skewer, on the other hand, was run-of-the-mill.</p>

<p style="text-align: justify;">And of course, the must-have Salmon Sashimi ($15 for 5 pcs). What can I say? 5 pieces are definitely not enough. The Karashi Tuna Roll came last, and it had a spicy kick. Both of us agreed that the California roll was better (or at least we liked it more), and I definitely want to try the Chopped fatty tuna roll ($12) next time.</p>
<p style="text-align: justify;">All in all, <strong>Taira Izakaya</strong> offers simple and delicious <em>Japanese food</em>. It is worth mentioning that we were the only locals there that night.
