<p style="text-align: justify;">We loved this dish for its complex flavours and how the Nyonya sauce brings everything together. From the subtle sweetness of the Seabass to the appetising tamarind-based sauce, this dish was easily our favourite from the menu.</p>

<p style="text-align: justify;">The yam basket derives its name from the Buddhist alms bowl which signifies an overflowing of fortune in Cantonese. Indeed, the Stir-Fried Seafood With Yam Basket at Spice Brasserie was overflowing with goodness.</p>
<p style="text-align: justify;">You can expect the yam basket to be fluffy on the inside and crispy on the outside. The added cashews gave a great crunch to the stir-fried seafood and we recommend eating everything together instead of separately as you can taste the wok hei from the seafood, nuttiness from the cashew and sweet flavour from the yam.</p>

This dish that traditionally consists of shredded vegetables, various sweet and savoury condiments and fresh raw salmon is an auspicious staple that can be seen at almost every reunion meal.</p>
<p style="text-align: justify;">TungLok&#8217;s magnificent and picturesque yu sheng comprises fresh vegetables, mushroom, yam, sweet potato shreds and a drizzle of TungLok&#8217;s healthier yu sheng sauce and it stays true to tradition by using fresh salmon instead of anything fancy.</p>

<p style="text-align: justify;">Yet another family favourite, we were awestruck by the Glutinous Rice with Boneless Chicken in Lotus Leaf (S$68++)—available as a á la carte dish and in their <a href="https://singapore.intercontinental.com/festive/product/chicken-glutinous-rice/?utm_source=ladyironchefcom&amp;utm_medium=referral&amp;utm_campaign=ladyironchef_cny_advertorial_glutinous_chicken">takeaway</a> menu—not just because of the richness of flavours in the dish, but in the way that the dish was presented to us.</p>
<p style="text-align: justify;">Before going ahead with the first bite, we were first greeted with a whiff of the warm spices and herbs which made the dish all the more appetising. Chef Eric also shared with us that the chicken is first deboned, stuffed with chestnuts, mushrooms and gingko nuts and deep-fried, before the entire bird is wrapped with fragrant glutinous rice and lotus leaf then steamed to impart a secondary level of flavour to the dish.</p>

<p style="text-align: justify;">The name &#8216;Ho See Fatt Choy&#8217; itself means to prosper in wealth in Cantonese, which is why this dish is commonly served as a symbol of good fortune at many restaurants and households.</p>

This glutinous rice-based cake is commonly deep-fried with an egg wash (much like French toast) and the end result is an incredibly chewy cake encased in a golden crisp.</p>
<p style="text-align: justify;">At 10 at Claymore, the chefs turn it up a notch by sandwiching the Nian Gao between a layer of regular sweet potato and purple sweet potato, to which the layered dish is battered and fried to golden perfection. Pleasantly crisp and mildly sweet, this makes for a pretty spot-on dessert item.</p>
