Cafe Mosaic, Carlton Hotel Singapore

Cafe Mosaic

Buffet restaurants are aplenty, and we will never fall short of choices. Fresh seafood, pots of hot soup, salad bars and bread counters, ala minute stations, daily roast… there is always something to get excited about, but not all buffets are created equal. Cafe Mosaic is a humble outlet at Carlton Hotel Singapore that sees a stable crowd every day, and it is only understandable why patrons pledge their loyalty.

For one, the menu rotates and you can always expect surprises from the chef even if you go seven consecutive days a week. The breads are freshly baked in-house daily, and they make a hearty start to your meal. We also loved the plump and juicy mussels at the fresh seafood station, we lost count of the number of bowls of double boiled Cantonese soup we had, and we couldn’t have enough of the cold appetisers.

Main courses are always a combination of continental and international highlights, and if you are lucky to go on days when the chef dishes out his signature Cod Fish in Pumpkin Sauce, you must not miss the world for this. Meat lovers can help themselves to endless servings of the daily roast, and there are teppanyaki options, too. Don’t forget to stop by the DIY station; expect local delights like Rojak and Gado-gado.

If you go during dinner, pamper your palate with a wider selection that includes a cheese platter and free flow of oysters.

Cafe Mosaic Dessert

All buffets have to end on a sweet note, so we say eat as many slices of Signature Red Velvet Cake as you can. For those who need your cocoa fix, Chocolate Mousse is your answer. And if all else fails, treat yourself to the Signature Café Mosaic Cheesecake.

Happy Hour at Gravity Bar, Carlton Hotel Singapore

Gravity Bar Cocktails

What constitutes to a good bar? Great drinks, tasty snacks, a hideout where you can relax after a long day at work, and ideally, it should play nice music that make you feel at home. Gravity Bar at Carlton Hotel Singapore, one of our favourite secret hideouts in town, is one such place.

With many tempting promotions, chill at Gravity Bar and celebrate Happy Hour with drinks from opening to 8 pm daily. Selected house wines are available at attractive prices, including draft beer from $8++ per half pint, house pours, martinis and cocktails from $10++ (U.P. S$14 – S$16). If not, go for a sparkling wine cocktail party – it is only S$15++ per glass (U.P. S$22++). Just typing these make me crave for a booze and I am thankful Gravity Bar is so centrally located and convenient.

And what marries good drink best? Better snacks, of course! Munch on mini portobello mushrooms and the classic local chicken wings marinated with prawn paste. Cheese lovers will fall head over heels in love with the crispy nachos that is served with three types of cheeses. Another favourite is the cheese fries that is generously sprinkled with shredded seaweed.

Wah Lok Cantonese Restaurant, Carlton Hotel Singapore

Wah Lok Cantonese Restaurant

A steward in the local dining scene, Wah Lok Cantonese Restaurant at Carlton Hotel Singapore went through a major renovation last year and now sports a new modern interior with matte-finish stone wall and brass metal accents.

Wah Lok is one of the most popular spots in town for dim sum and its refined Cantonese cuisine. It features classic items such as Baked Mini Egg Tart, Steamed Glutinous Rice and Baked Custard Bun. My personal favourite is their Baked Barbecued Pork Buns – it is as good, if not better, than the ones that I have had in Hong Kong.

The talented dim sum chef Yiu Cheuk Yin at Wah Lok has also created several new items that you should look out for. Deep-fried Crabmeat & Scallop Balls with Chilli Sauce, Deep-fried Rolls with Seafood & Sea Cucumber, and Steamed Vegetarian Beancurd Skin Rolls are some of the new dim sum that will make you return to Wah Lok again and again.

Chilled Foie Gras and whole AbaloneChilled Foie Gras & Whole Abalone

Besides dim sum, what I really want to share with you is Wah Lok’s offering of signature dishes with an emphasis on premium, fresh, live seafood like Australian King Crab, Snow Crab, Alaskan Crab, Live Abalone, and Bird’s Nest with Crab Claw in Clear Superior Soup.

Be it a formal business luncheon with associates, or a family gathering for yum cha on the weekends, Wah Lok Cantonese Restaurant at Carlton Hotel is the to-go place. The dining space is modern and stylish, and the food is always prepared to a very high standard and consistently good. It is a place where you know you will always have an excellent meal.
