<p>For those of you who are not familiar with FLIPPER&#8217;S, it is a famous soufflé pancakes chain in Japan.</p>
<p>FLIPPER&#8217;S opened its first outpost in Singapore at Takashimaya Shopping Centre, Ngee Ann City in Nov 2020.</p>
<p>FLIPPER&#8217;S Singapore obtained its halal certification for the Takashimaya outlet in September last month and our Muslim friends can also enjoy their popular soufflé pancakes.</p>

<p>Unlike the original shop at Jalan Membina (opposite of Tiong Bahru Plaza) which is an old-school bakery, the flagship outlet at 247 Victoria Street has a modern decor which looks like a Hong Kong Cha Chaan Teng.</p>

<p>We first discovered <a href="https://www.ladyironchef.com/2016/03/leong-sang-hong-kong-pastries/" target="_blank">Leung Sang HK Pastries</a> years ago in 2007 when it was at its original location at Sago Street in Chinatown. We have been big fans of their Hong Kong-style egg tarts with amazingly buttery flaky pastry ever since.</p>
<p>The egg custard encased in the pastry is of a pastel yellow shade—not the typical rich hue you might see, but what do you know? It is so silky, creamy and sweet! This is hands down one of the <a title="best egg tarts in singapore" href="https://www.ladyironchef.com/2020/09/best-egg-tarts-singapore/" target="_blank">best egg tarts you can find in Singapore</a>.</p>
<p>They also have Western-style egg tarts which come in a different shell—the harder kind that tastes more subtle. While it uses the same egg custard filling, we prefer the Hong Kong-style egg tart’s flaky puff pastry.</p>

<p>They moved to Jalan Membina (opposite of Tiong Bahru Plaza) a few years ago and their egg tarts are still as good as before. This old-school looking confectionery may look next to nothing, but their egg tarts are to die for.</p>

<p>Leung Sang HK Pastries&#8217; flagship outlet at 247 Victoria Street has officially opened its door to the public on 24 July 2021.</p>
<p>Other than egg tarts, you can also get other Hong Kong-style pastries including Polo Buns, Lotus Paste w Salted Egg Puff, and Char Siew Sou.</p>
<p>The new location opposite Bugis Junction is definitely more accessible than the original outlet at Jalan Membina and we can definitely see ourselves heading there more often.</p>

<p>Their range of Chinese desserts sees anything from black sesame paste to steamed egg pudding. But, take it from us and get their Chendol (S$3.20). You&#8217;ll be swept off your feet by the shaven ice drenched in thick coconut milk, rich gula melaka syrup and sweetened whole red beans.</p>

<p>Flawlessly flaky, buttery and crisp, their Almond Chocolate Croissant ($5.20) is stuffed with rich, luscious chocolate and frangipane cream. A generous studding of almonds seals the deal.</p>

<p style="text-align: justify;">There&#8217;s nothing too groundbreaking about an Australian-style cafe in Singapore. We mean, Singapore is basically filled to the brim with them. But, one that jazzes up into a swanky Asian bar by night? Now, that&#8217;s a head-turner.</p>
<p style="text-align: justify;">S l a t e . is the latest addition to Purvis Street, a small hip district that foodies flock to for a dignified brunch or laidback evening hangout. Opened by the team behind Miam Miam, this cafe-bar prides itself on its evolving menu which goes from hearty brunches to modern Asian tapas.</p>
<p style="text-align: justify;">The founding team had lived in Melbourne for about a year before moving back to Singapore, bringing back with them <a href="https://www.ladyironchef.com/2017/01/higher-ground-melbourne/">Aussie-inspired brunches </a>and secrets to a great cuppa.</p>

<p style="text-align: justify;">We dropped by during lunchtime and were warmly received by the very friendly owners.</p>

<p style="text-align: justify;">Their spacious interior is a blend of clean and classy vibes, finished with pops of blue to lend a touch of serenity.</p>

<p style="text-align: justify;">One of the first few things that&#8217;ll catch your eye is the hulking luminous shelf of spirits and wines that takes center-stage in the bar area. Their coffee machine sits quietly at the side, whirring away as it churns out flat whites and long blacks.</p>
<p style="text-align: justify;">Their lunch menu features small bites such as Seafood Fritters and Thunder Fries while their mains saw a mix of Asian and Western dishes.</p>

<p style="text-align: justify;">Our first dish was the Oxtail Ragout Rigatoni (S$16). Visually, it looked super appetising — a generous amount of rigatoni soaking in a jacuzzi of 8-hour-braised oxtail tomato stew and finished with a grating of Asiago cheese.</p>
<p style="text-align: justify;">Thankfully, it tasted as good as it looked. The rigatoni was perfectly al dente and had melded gorgeously with the sauce, which was well-seasoned and lightly spiced. The oxtail was really tender and had completely soaked up the essence of the stew.</p>

<p style="text-align: justify;">Sadly, the S L A T E . Chicken Rice ($13) didn&#8217;t fare as well. It wasn&#8217;t a bad dish, that&#8217;s for sure — succulent grilled chicken thigh, runny sunny side up and perfectly cooked rice. But, the whole dish didn&#8217;t seem to gel very well as a whole and felt slightly dull.</p>
<p style="text-align: justify;">We would have preferred if more flavour was infused into the rice and for a complementing sauce to tie the whole dish together.</p>

<p style="text-align: justify;">Although there were hits and misses, we thoroughly enjoyed our dining experience S l a t e. With their warm service, soulful food and great ambience, this establishment is just bursting with potential.</p>
<p style="text-align: justify;">We&#8217;re sure that with the right tweaks and improvements, they&#8217;ll soon be on their way to becoming one of <a href="https://www.ladyironchef.com/2018/08/bugis-food/">Bugis</a>&#8216; most flocked-to dining spots.</p>

<p style="text-align: justify;"><strong>Newly opened Mr Sheng Jian located along Liang Seah Street</strong> dishes out a myriad of Shanghainese-inspired food with a modern touch. Their sheng jian baos are just the perfect little tummy fillers and come in a variety of innovative flavours such as cheese and kimchi. Their noodle dishes, on the other hand, although not the best we’ve come across, do give you a sense of warmth from the spicy broth.</p>

<p style="text-align: justify;">The menu here is straightforward and primarily focused on a variety of sheng jian bao and noodle dishes. Prices are kept fairly affordable while portions are huge—a combination we absolutely love.</p>

<p style="text-align: justify;">For those of you who are unfamiliar with sheng Jian bao, they are essentially a doughier, pan-fried cousin of the <a href="http://www.ladyironchef.com/2015/10/singapore-best-xiao-long-bao/">much-loved xiao long bao</a>. A popular Shanghainese snack, these bad boys are filled generously with a flavourful pork filling and subsequently steamed and shallow-fried.</p>

<p style="text-align: justify;">Combining the textural elements of crispy, chewy and soupy, we can see why their signature Mixed Sheng Jian (S$12.50) receives such a wide appeal.</p>
<p style="text-align: justify;">Featuring 3 different flavours—Classical, Cheese and Kimchi with Prawn—the skin of each respective bao was neither too thick nor too thin, just enough to keep the filling from spilling out yet delicate enough to allow you to bite into it with ease.</p>

<p style="text-align: justify;">While all of them were delicious in their own way, the main standout for us was the Kimchi with Prawn (S$8).</p>
<p style="text-align: justify;">The filling comprises two small prawns with a fair amount of kimchi. It was a beautiful marriage of tastes and textures from the crunchy prawns, crispy bao skin and the sharp hit of spice and tang from the kimchi really did well to make this bao stand out among the rest.</p>
<p style="text-align: justify;">The restaurant prides themselves on making their baos fresh daily—none of the frozen stuff.</p>

<p style="text-align: justify;">The eatery&#8217;s pride and joy, their signature Sirloin Noodles (S$7.50) comes with a generous portion of noodles as well as a few chunks of tender beef brisket. While the entire dish was pretty delicious on its own, we found the noodles a tad too mushy for our liking.</p>
<p style="text-align: justify;">The beef was fork tender with notes of warm spices, but more importantly what we loved about it was the intense beefy qualities that it lends the soup. The soup was spicy with the same numbing quality you would typically associate with mala and was tasty.</p>
