But perhaps the one station that caught our eye was their new kway chap station, dishing out hearty, flavour-packed bowls of Kimberley Street-style kway chap.</p>
<p style="text-align: justify;">For the uninitiated, this particular style of kway chap originates from Penang, Malaysia where it is a common street food favourite, and it comprises a variety of offal and tender braised duck meat served in a herbal flavoured broth. The dish boasts an aromatic, herbal aroma but is underscored by a meaty, savoury flavour that is oh-so-comforting.</p>

Crispy on the outside but luxurious and fatty in the middle, this was the ultimate indulgence that had us going back for seconds and even thirds.</p>
<p style="text-align: justify;">Served alongside a sweet and tangy berry compote and balsamic reduction, the rich goose liver was balanced out very nicely.</p>

Every grain was full and plump, and lavishly coated with cream and cheese, then topped off with a generous serving of seasonal black truffle.</p>

Of course, the meat is well-seasoned, but an addition of their homemade Peppercorn Sauce just kicks it up a notch. These succulent ducks are specially imported from Ireland and roasted fresh in-house every Sunday. The crispy, glistening skin and juicy, tender flesh are to die for, seriously! It was one of the best we&#8217;ve tried, and we hope we do not sound like hopeless gluttons if we told you we had at least three helpings each!</p>

<p style="text-align: justify;">The cheese counter showcases eight types- cheddar, coulommiers, edam, goat cheese, pont-l&#8217;Évêque cheese, reblochon, saint morgan and smoked scamorza. An assortment of fresh fruits and crostini are available to complement the fine cheeses. And damn, we had so many pieces of the French cheeses!</p>

<p style="text-align: justify;">And we have to say that buffet lines usually do not impress with steaks/ roasts because they end up being too hard and dry from sitting around, but J65&#8242;s roast was actually still warm, tender and flavourful! It completely took us by surprise and we had seconds! Don&#8217;t forget to drizzle some Brown sauce over yours.</p>

Take a pick from beautifully steamed and gloriously roasted chicken, and they will be accompanied with Malaysian-style rice balls.</p>
<p style="text-align: justify;">Can we also get you excited with the 6 different types of laksa? Yes, SIX &#8211; Curry Laksa, Johor Laksa, Penang Laksa, Sarawak Laksa, Singapore Laksa and Thai Laksa. No such thing as Laksa overdose because they are &#8220;same same but different&#8221;.</p>

<p style="text-align: justify;">Our picks are Alaskan Crab Meat with Mango Jelly, Tiger Prawn with Green Mango, Tuna Tartare with Avocado Mousse, Seafood Ceviche with Spicy Dressing and more. These spherical beauties sure whet our appetites with the freshness and clean tastes.</p>

Here at the champagne brunch, have it unlimited &#8211; all you want. The perfect runny yolk is encased in tasty and well-seasoned meat, then drizzled with fragrant black truffle hollandaise sauce.</p>

And if you want something creamy and comforting, go for the Seafood Fricasse with Bisque &amp; Parmesan. The Pan-Fried Chilean Sea Bass with Orange &amp; Fennel Compote sounds boring, but the sweet compote brought out the freshness of the sea bass so well, you&#8217;ll love the combination.</p>
<p style="text-align: justify;">For the Asian dishes, dim sum is a must and Hilton Singapore offers both Custard Bun and Braised Pork Ribs, alongside wok-fried dishes such as Stir-Fried Garlic Prawns with Cilantro and Kam Heong Style Crab; bursting with flavours and <em>wok hei, </em>this might be where your grandparents would camp at if they prefer only Asian food.</p>

Scottish Brown Crab and Spencer Gulf Wild King Prawns awaited us, and boy, did we enjoy the sweet-tasting Fin de Claire oysters that were so fresh, it felt like we were having them straight out of the ocean.</p>

<p style="text-align: justify;">Our eyes popped when we spotted the biggest block of brie cheese. But the best part of the shrine? The Shropshire Blue Cheese. The full-bodied, creamy and rich flavours really drove us crazy.</p>
<p style="text-align: justify;">If you are not that big a fan of blue cheese, we suggest you go for the Brie De Meaux. It is salty, buttery, rich and so aromatic. Other cheeses available include Grana Padano and Mimolette.</p>

<p style="text-align: justify;">Something that we&#8217;ve always loved about mezza9 is their policy of using only sustainable sources. Over-fishing, deep-sea trawling and disastrous methods of fishing are some of the worst things that many fishermen do, and this results in the wipe-out of (at times) entire species, destroying habitats of all of these fishes and sea creatures in the meanwhile.</p>
<p style="text-align: justify;">But by using only sustainable seafood, mezza9 is definitely doing their part for our beloved marine world and this gives us another reason to love them.</p>
<p style="text-align: justify;">They offer a selection of sashimi of sustainable fishes that includes the popular salmon, tuna, amberjack and more.</p>

We are typically against fully-cooked tuna, especially of an expensive cut of Ahi, but this was cooked and seasoned so well that we fell in love upon first bite &#8211; extremely well-executed.</p>

<p style="text-align: justify;">Western roasts are also available in this section. The wide range features meats such as Slow-Roasted Apricot and Prune stuffed Pork Loin, and Oven-Roasted Black Angus Short Loin. However, the star of the day was the Spit-roasted Whole Welsh Lamb.</p>
<p style="text-align: justify;">Do note that the roasts are on rotation, and you can expect to find new surprises every week.</p>

<p style="text-align: justify;">Desserts at mezza9 are delectable, and they look and taste exquisite. This counter is insane, and we swear the chefs are on a quest to turn us fat!</p>
<p style="text-align: justify;">Blame it on our low resistance, but we always pig out more than we should here. Our favourite without a doubt? Their tiramisu. We can never ever find anything negative to say about it, except that it comes in tiny portions that just weren&#8217;t enough to satisfy our cravings.</p>
<p style="text-align: justify;">An unexpected star of the show was the sticky date pudding that came with gooey caramel sauce, and tasted even better with a generous sprinkle of sea salt on top.</p>

The mains include chickan cacciatore, deep fried calamari, braised beef cheeks, and the very addictive squid ink gnocchi. Pasta lovers who cannot do without your first course will also be treated to freshly prepared pasta-of-the-day.</p>
<p style="text-align: justify;">Wait, we haven’t mentioned that there are also freshly baked pizzas from the wood-fired oven, have we? But save some tummy space for the carving station where roasted beef sirloin and lamb leg await us. For something less heavy, there is also an oven baked whole barramundi.</p>
<p style="text-align: justify;">We were also blown away by the dessert offerings at Pete’s Place. Chocolate pistachio cake, black forest cake, cheese cake, almond biscotti, mango mousse; Viva la dolce vita! But the tiramisu completely stole the show. It was one of the better tiramisu that we have had in Singapore, and we would come back to Pete’s Place just for this. The rocky road was also exceptional. The Sunday brunch also comes with a selection of quality homemade Italian gelato – quite the perfect ending to a marvellous Sunday.</p>

However, not many people know about the Italian weekend prosecco brunch ($98++/pax for prosecco, $68++/pax for non-alcohol) at <strong>LaBrezza</strong>, a charming and intimate restaurant which serves fine trattoria-style Italian cuisine by the poolside of the hotel.</p>
<p style="text-align: justify;"><span id="more-30785"></span>The space, as you would expect from a poolside restayrant, is bright and airy, which makes it a perfect place for weekend brunch.</p>

<p style="text-align: justify;">La Brezza&#8217;s prosecco brunch comes with a delectable antipasti spread which has salads, burrata cheese, salami, prosciutto, and smoked salmon. We would suggest going easy on the antipasti and save room for the ala carte orders of pizza, pasta, and grilled meat and seafood.</p>
<p style="text-align: justify;">Under the pizza menu, there are four options to choose from: Eggs Napoli, with poached egg and tomato on grilled ciabatta bread with pesto and mozzarella; Pizza Margherita; Pizza Vesuvio, with tomato sauce, fresh mozzarella, Italian sausage, and roasted sweet peppers; and Gil Sformatini con Salsa al &#8211; series of three vegetable flans, parmigianino and black truffle sauce. We also had the chef&#8217;s daily risotto special &#8211; an asparagus and cheese risotto.</p>

<p style="text-align: justify;">Following which was the Aglio Olio, which we had high expectations of because we always believe the true standard of a chef shines through his ability to whip out that most basic, yet common pasta. La Brezza&#8217;s rendition was a tad different from the aglio olio we know. This had tagliatelle tossed evenly in quality extra virgin olive oil, and a very strong note of fresh chilli. Yummy, but we will still choose a garlic heavy aglio olio anytime.</p>

<p style="text-align: justify;">The Vongole was prepared with tagliatelle as well, which we could not quite agree because the slightly fatter and flatter texture did not bring out the fragrance of the white wine sauce &#8211; which is precisely the essence of a good vongole. That said, the sauce  was bland and lacklustre to begin with.</p>
<p style="text-align: justify;">Our favourite was the Carbonara &#8211; tagliatelle done in a creamy and eggy sauce. We could vouch for the authencity of this dish &#8211; it was very close to the one that we had in Rome, just slightly less peppery. And can I just do a little shout out for the bacon chunks? Mildly crisp and every bit of juiciness; just the way I like my bacon to complete a creamy pasta.</p>

<p style="text-align: justify;">That is not all. For main course, there is a selection of meat and seafood grilled ala minute over a charcoal barbeque. Start with the Grilled Australian Lamb Chop with lemon-mint marinade and roasted potatoes.</p>
<p style="text-align: justify;">The star was undoubtedly the Beef Striploin, which you see in the first picture of this post. Tender, juicy and slightly-charred on the surface &#8212; it was more than we could have asked for. It was so good that we ordered a second portion.</p>

<p style="text-align: justify;">Also worth a mention was the Spicy Roasted Chicken. The dish looked ordinary, but the meat was well-marinated and very tasty. The sweet, juicy and incredibly meaty King Prawns were equally well-received. The Seabass, on the other hand, was a let-down as it was slightly too fishy for our liking.</p>
<p style="text-align: justify;">Next, we had tiramisu. It was decent with a strong coffee taste, but it lacked texture as the ratio of sponge finger to mascarpone cheese was inadequately balanced.</p>
<p style="text-align: justify;">The other dessert that we had was the Cannoli. Deep fried Sicilian pastry with pistachio, blueberries and strawberries. Good, but not fantastic. As part of the dessert offerings, you can also get fresh sliced fruit with honey yogurt, and four different gelato flavours.</p>
