<p style="text-align: justify;">Assuming you plan on boozing at the crème de la crème of bars at Keong Saik, we’ll assume part of that strategy will include reading this article. Let’s just say it’s a more “specific” strategy.</p>

<p style="text-align: justify;">Scrupulously designed to look like a drinkery from a futuristic steampunk era (assuming steampunk is the in thing in the future), this eclectic new eye-boner-ing gin bar exudes a dark sense of mystery—we’re talking skulls, test tubes and beakers—that lures one (too many) into its alcoholic den. Not that we’d mind. The intimate two-storey space focuses on gin, gin, and more gin (read: over 60 gins and 30 self-infused gin concoctions). Sounds sexy? We know, and it’s about to get sexier.</p>
<p style="text-align: justify;">Available on tap are four variations of the classic negroni (S$18) where you will be consumed with desire to have a go at each. Do so. But if you really must choose, Classico and Copper Avenue bode extremely well with the palate; the former done the traditional way with The Botanist gin, and the latter; a twist on the Left Hand with a touch of amaretto. Believe us, it’s strong. Also, we should mention that there’s a hibiscus and chamomile gin-moscato number called the Athena’s elixir (S$24) that full of floral, herbaceous notes. Drink it.</p>

<p style="text-align: justify;">If you’re a fan of white wines, Soave Classico “La Rocca”, Pieropan (S$31.50) is simply outstanding. Elegant aromatics of honey and almond brim on the nose, before developing intense flavors of pressed flowers and vanilla.</p>
<p style="text-align: justify;">And If you’re in the mood to celebrate, rise to the occasion with a glass of grower champagne. The Champagne Marie Demets, Tradition NV (S$26) is delicate and clean on the mid-palate, with aromas of ripe fruit that will not disappoint.</p>

The Temple of Excellia (S$25) reigns in the godly (drinking) realm, penetrating one’s senses with oaky, bitter and sweet notes of dried fruit and rich honeycomb. Ascend into a higher realm with the beetroot and horseradish pickled quail eggs (S$10) and Johnny Drum private stock 9 bourbon-pickled onions (S$9)—you can’t go wrong when pickling with 15-year aged bourbons. Take the Silk Tea Route (S$24) and get Hooked On A Feeling (S$24); a bourbon, and rum-based cocktail where layering flavor complexities make an appearance in your favor.</p>

Like Berlusconi (SS$20); an egg-white number that employs pink grapefruit, mandarin, sour lemon and aperol bitters that will have you lapping it up in no time, and Porn Star (SS$28)—go the whole nine yards and tip in the champagne (so what if there’s already vodka in there?).</p>

<p style="text-align: justify;">There’s an option to take it slow and easy with a refreshing Piscotheque (S$23)—think sweet notes of pink guava and passion fruit that blossom in the mouth with a dry, savory-sweet finish. Then get the party started with a Foursome in the Jungle (S$32). You’ve seen this in a dream. Here, your dreams turn into reality (albeit a little differently) where Mina Real mezcal and spiced Rooibos rum form the basis for a good time, alongside citrus notes of pineapple and lime. Japanese head bartender, Yukata Nakashima, runs the show at Kuvo, and ‘bespoke cocktails’ is the name of the game. Send your cocktail preferences his way and leave fate to abate your (alcoholic) cravings.</p>
<p style="text-align: justify;">Adventurous drinkers, this spot will light your fire. A preposterous concoction that tastes uncannily like assam laksa arrives in the form of Auchentoshan 12 year old, garam masala and calamansi. It’s sour, savory and bittersweet with a tinge of exotic spice. Oh, and sidebar; there’s an option for a prawn noodle cocktail—who says you can drink your dinner?</p>
<p style="text-align: justify;">If you’re leaving it to the bartender’s fancy, bespoke concoctions run along the path with concoctions like tequila-based beauty of Don Julio Blanco, Sambuca, martini rosso, Fernet Branca and Nikka-infused coffee beans that births a perfumed, bittersweet palate.</p>

We reckon the Hibiki set (S$36.50 for 12 skewers) will set you straight.</p>
<p style="text-align: justify;">If you’re new to beer, opt for the tasting flights (S$18) where you’ll get a tasting portion of four of their rotating draft beers, explained to you in great detail—these guys sure know their stuff—before proceeding to drown your short-lived beer education.</p>
<p style="text-align: justify;">Do so with Kinshachi red miso lager Nagoya (S$13.90) that’s got minimal head (if that rocks your boat), malty caramel tones, and hoppy bitterness with a mild miso twist, or Owa beer (S$13.50)—a Belgian style pale ale with robust notes of toffee, dark malt, earth and spice. There’s also a range of Hitachino beers catered for easy drinking—we’ve got our vote on the refreshingly malty Saison Du (S$12.90) and hoppy, bittersweet lager (S$13.90). Yes, lager. Like we said, we focus on what’s important.</p>

Or you could give them a wild-card route (layman’s term: bespoke)—tell them your poison of choice, serving style and whatever preferences pop into your head, and watch them do their magic.</p>
<p style="text-align: justify;">Things you cannot do without: a solera-aged negroni (S$25) and single-cask cocktail (S$25) from their rickhouse; which happens to be the world’s first in-hotel rickhouse—an interesting piece of information you can boast to your date. You can thank us later.</p>
<p style="text-align: justify;">If you’re not (seated) by the bar, sink yourself deep into one of their plush couch seats and decide between an Avaition (S$23) made with Citadelle gin, or Penicillin (S$23) with Monkey Shoulder scotch—the former soft floral and herbaceous notes, the latter; a smoky upgrade of the classic whiskey sour with a twist of lemon and ginger. Those are the toughest decisions you should be making for the night.</p>

Either way, you’ll be in the good hands of head bartender, Byron Tan. But before he leads you down the path of denial (of drunkenness), pad down your stomach with the Wagyu tongue with yuzu pepper (S$12) and braised duck breast (S$12) that’s so flavorfully delicious it makes you wonder if you might have accidentally walked into a restaurant.</p>
<p style="text-align: justify;">Employing our favorite spirit, mezcal, is the Beetroot Bonanza (S$25) that simmers beetroot concentrate with chili tincture before combining it with green Chartreuse to emanate the sweetness and smokiness of chargrilled beetroot. Another remarkable ‘all-star’ is the Gentlemen’s Tip (S$25) where the malty smokiness of Monkey Shoulder meets Carpano Antica Formula’s herbaceous fruity sweetness, blended with oloroso and amontillado to birth a beautifully complex concoction that layers sweet, bitter and citrus notes. You’ll take to this like a fat kid to cake.</p>

<p style="text-align: justify;">Possibly the oldest cocktail bar in Singapore, 5 on Emerald Hill has been taking residence in an old Peranakan-styled shop house near the outskirts of town since the early 1990s. The two-level bar exudes an air of nostalgia that envelops you into thinking you’re in the 1990s—think oak wood paneling, worn out furniture and walls covered in black and white pictures of customers and celebrities from that era.</p>

Signature vodkas and gin infusions are featured in their house-signature martinis like the No. 5 dry gin martini (S$15) that leaves a lingering burning sensation reminiscent of chili padi, or Bangkok martini (S$15) where lemongrass, lime juice and Grey Goose coconut cream is infused with chili to exude a taste of Thailand. While cocktails here don’t veer too far off in imagination, its nostalgic aura easily transports you back to the 1990s. Sometimes, old is gold.</p>

We kid—but we know you’ll want to. The eye candy we speak of is the man behind these cool concoctions; Neil Rivington, head bartender of Aberdeen Street Social, with a cheeky personality to boot.</p>
<p style="text-align: justify;">Let him tingle your palates with Bloody English (HK$120), a twist on the classic Bloody Mary that we prefer. Sipsmith gin takes the place of vodka with a dash of &#8216;full English&#8217; spice mix that adds character, while the original Bristol cream sherry gels individual flavors into a creamy, velvety texture with fresh and tangy aromas of dried fruit.</p>

Sending us into a cocktail frenzy is Down Mexico Way (HK$140), leading you down the path where you might never see the light at the end of the tunnel.</p>
<p style="text-align: justify;">One sip coats the mouth with a bitter smokiness of roasted wood, layered with deep citrus flavors of blood orange and lemon juice, laced with gentle touches of Auchentoshan whiskey. It’s all too good to stop at one—you understand now why the light is dim at the end of the tunnel.</p>

<p style="text-align: justify;">The star of the show is owner-bartender Masayuki Uchida, head barkeep behind the extensive list of divine Japanese cocktails who earned his stripes at cocktail bars Bar Tokyo and Little Smith at the Ginza in Tokyo. Bartending for 15 years, it’s no wonder Uchida is known in the industry as the Japanese cocktail master.</p>
<p style="text-align: justify;">Here, he transforms a classic gin martini (HK$128) by stirring Japanese dover perilla liqueur into chilled Tanqueray gin, resulting in unique notes of bittersweet herbs. Executed with finesse is the smooth drinking (yet complexly layered) High West double rye whiskey sour (HK$118), garnished simply with a Cointreau griottunis cherry and lemon that highlights its full, uncompromised flavour.</p>
<p style="text-align: justify;">Showcasing his true mastery is the old fashioned (HK$128), concocted with incredible precision and skill—three different bitters and house-made liqueur with Buffalo Trace bourbon (The Fifty Best Bourbon Whiskeys 2015), thoughtfully garnished with a slice of orange, lime, lemon and Cointreau cherries that allows you to tamper with the flavour profile to your personal preference. Such is the Japanese touch.</p>

Be spoilt for choice with their bounty of sherry from finos to rossos, and tasting flights to cocktails that we daresay will satisfy any palate. Sherry novices, try your hand at their tasting flights (HK$295) for a sampling portion of your preference of four sherries, with four categories to choose from; manzanilla, amontillado, palo cortado, and pedro ximénez &amp; palomino.</p>
<p style="text-align: justify;">Incredibly sexy is the don Jose Maria very old amontillado, jose de soto (HK$92) whose smoky aroma extends to surround the palate, taking one on an exquisite journey that heightens the senses, finished with a subtle honeyed sweetness that lingers on the tip of one&#8217;s tongue. More complex is the apostles, Gonzalez byass (HK$158) that tastes exactly like its aroma of sweet cherry wood and aged oak, with a smooth finish. Pair this with a jamon board (HK$264) of house-cured meats.</p>

In No One Expects the Spanish Inquisition (HK$110), a manzanilla (Pasada Pastrana) sherry holds fort with Grand Marnier, sweetened by raspberry syrup, and citrus notes of lemon and orange. The result is a subtly sweet, light and refreshing tipple reminiscent of an autumn breeze.</p>
<p style="text-align: justify;">Tease the palate with Stormy Skye (HK$110)—Talisker whiskey and Tio Mateo fino sherry come together with salted pineapple cordial for an incredibly unique sweet-salty cocktail with a bittersweet finish. Tip: don’t limit yourself to one.</p>

<p style="text-align: justify;">Asian-inspired cocktails reign in this cosy bar cobbled along Staunton Street. Don’t be fooled by its nondescript manner, these bartenders will soon show you a thing or two. Here, bar consultant Alex Ng runs the show, adjusting the cocktails every few weeks to suit the season.</p>
<p style="text-align: justify;">Step out of the cold and be warmed up with an oriented mulled wine (HK$108) where rum is spiced with a mix of Chinese herbs, cinnamon, star anise and cloves. Inspiration is stemmed from the Chinese vinegar pork knuckle dish (believed to improve blood circulation), this cocktail uses a house-made sweetened Chinese ginger vinaigrette steeped together in red wine for two to three hours to obtain a robust sweetness of red date and spice.</p>
<p style="text-align: justify;">Turning the famous Hong Kong drink of 30% coffee and 70% tea into a tipple is yuan yang (HK$120), made with Jose Cuervo reposado, espresso, evaporated milk, house-made dai pai dong tea syrup and pale ale to form a smooth and well-balanced cocktail, garnished with coffee beans and tea leaves.</p>
<p style="text-align: justify;">If you’re hankering for something sweet, easy-drinking Oriented Ramos (HK$120) is a twist on popular 1970-80s local beverage Ramey&#8217;s gin fizz previously commonly found at cha chaan tengs. This “modernised” version combines yuzu and lime with milk to birth a sweet and dry, almost yogurty finish. If such concoctions are what this lab offers, we sure wouldn’t mind being a lab rat.</p>

<p style="text-align: justify;">Tucked away in the basement along Hollywood Road lies a magical forest—no, we’re not talking about mushrooms. We’re talking exquisite cocktails that evoke the senses, paired with edible works of art that evolve around a ‘woods’ theme. Highly recommended is the four-course pairing menu (HK$788) that starts with an amuse bouche of St. George Terrior Gin, lemon juice and simple syrup, topped up with sparkling wine and served in a test tube with a rosemary sprig; setting the stage for visually stunning alcoholic libations.</p>

<p style="text-align: justify;">We’re especially impressed with Grass—a Holland vodka distilled with spiced grass, muddled with cucumber and tarragon before being mixed into fresh apple and lemon juice, served with balls of ice infused with coriander and cilantro to enhance its flavor of fresh herbs and botanicals. Equally impressive is its pairing dish of French Bayonne ham with Australian jumbo asparagus, Spanish olive oil caviar, and micro greens drizzled with a port wine and balsamico reduction.</p>
<p style="text-align: justify;">Speak to head barman, Freddrick Ma, and it’s evident the passion and care that goes into his creations. In Earth, an oyster mushroom is infused in Makers bourbon, combined with dry vermouth, artichoke liqueur and black walnut bitters to exude oaky and uniquely bittersweet notes.</p>
<p style="text-align: justify;">Taking it up a notch is its garnish of dehydrated mushrooms and enoki on a thin crisp of house-made biscuit, micro greens dancing along the biscuit plateau; drawing the earthiness out of the cocktail. Charcoal breadcrumbs, dried dark olives and fennel pollen fall lightly around the pairing dish of herb butter escargots and mash that further accentuates its earthiness. Let the night take you deeper into this magical “forest”. Getting lost in the woods might not be such a bad idea after all.</p>

Mouthwateringly delicious is Absolutely Wicked Strawberry (S$12.90)—a crispy bed of mesclun mixed into roasted chicken and prunes coated in a smooth and velvety chocolate glaze, followed by pops of sweetness from strawberries soaked in balsamic reduction, garnished with almond flakes and Danish blue cheese that only assist in upping the enjoyment factor.</p>

Not just another salad bar (read: only vegetables), Munch Saladsmith &amp; Rotisserie offers deliciously healthy meat options such as poached salmon (S$11.90 with a salad), and juicy and tender free-range chicken roast (S$8.90 with a salad) that simply screams from the display with its brazenly bronzed skin.</p>
<p style="text-align: justify;">On the salad bar are a variety of carbs and greens like tricolor pasta tossed in house-made basil pesto, wild shrooms sautéed in herbs, and cold soba noodles with corn niblets and shaved red carrot, mixed in sesame dressing. Salads start from S$7.90 for two, S$9.90 for three, and S$11.90 for four. Top up a dollar to wash it down with an iced house-brewed tea.</p>

From the shop front, the place is reminiscent of a post-Halloween party with its pumpkin orange walls and black awnings emblazed with its logo in a somewhat gothic serif font. Along the street are clumsily placed chairs around hinged and barreled tables—a strategic marketing ploy (in our opinion) to lower one’s expectations.</p>
<p style="text-align: justify;">With lowered expectations come easier-to-please patrons. And please you they shall, in the form of craft beers from Britain, Belgium, Germany and Ukraine that offer incredible value—three bottles of Ukraine beers at go for S$24. Among the list are crowd favorites like Fuller’s London Pride (S$14), as well as rare finds like the woodily fruity (of grape, cherries and raisin) Chimay Bleue (S$15), bitter and hoppy Duvel (S$13) typical of Belgium pale ales, and Triple Karmeliet (S$13) that’s light and fresh with a subtle mouth of fruit and oat. Available on tap are Bavaria and La Trappe (from S$8 per half pint), with free flow options each Saturday at S$39 for three hours, or go the whole nine yards at S$65 for the night.</p>

Sophisticated warm amber hues light up a narrow flight of stairs that lead to the basement, opening into a lounge filled with cream leather armchairs and shelves of rare single malt whiskies—there’s even small oak casks for barrel-aging. Adorning the walls are original jazz artworks and mahogany cupboards exclusively for members to store their spirits—all very gentlemen’s club-like.</p>
<p style="text-align: justify;">Whiskey’s the name of the game, with B28 ringing them in. Offering over 200 whiskies—mostly exclusive single cask Scottish labels—including highly sought-after whiskies The Single Cask 1990 (S$58 per dram) that hides a smoky sweetness beneath hints of oak and spice, and mildly peaty The Single Cask 1984 (S$48 per dram) perfumed with orange and a tinge of nut and malt. If you’re in the mood to indulge, the incredibly smooth and spicy Macallan 1969 bottled by Duncan Taylor (S$800 per dram) is highly recommended. They’ve even got a 1965 Macallan by Carn Mor (est. S$8,000; price to be re-appraised)—one of the two last bottles in the world. Talk about exclusive.</p>

Making it onto Zagat’s coveted list of 10 Hottest Restaurants in the World 2013, it’s a no-brainer that Lolla’s got impeccable taste, and rightfully so when it comes to champagnes.</p>
<p style="text-align: justify;">The only champagne bar in Singapore, Lolla is an extension of Pang’s champagne distribution business, fronting a wine list of over 90 labels, including a list of rare champagnes exclusive to Lolla, such as the alluring Legras et Haas, Cuvee Exigence NV (S$228) that’s complex and luxuriously sophisticated on the palate, showcasing excellent finesse and balance between lightness and body. One of the best rose champagnes ever produced, Paul Bara, Grand Rose NV (S$188) is a Burgundy-style champagne that seduces with aromas of fresh strawberries and pepper before finishing with hints of baked pastry and candied cherries.</p>

<p style="text-align: justify;">Tucked away on level two of Gem Bar (take the flight of stairs to the right of the entrance), there are no signs to this secluded speakeasy—it’s for people in the know. Offering a list of bespoke cocktails specially crafted by former Bitters &amp; Love head bartender, Din Hassan (who has since left the Manor Bar) and current head bartender, Alfee Zulkiflee, these boys have only one rule—keep the guests happy. Which isn’t difficult with a drinks list of over 40 artisanal whiskies and more than a dozen craft gins.</p>
<p style="text-align: justify;">There are no bad cocktails here, so you’ll want to have one of everything. Each of these concoctions are crafted with thought-provoking detail—one can tell from the very first sip. An excellent choice is Asian inspired rum-based cocktail Nourishing Soup (S$20) that pairs Yellow Chartreuse with fresh lime juice to bring out distinct notes of violet and honey accented by star anise. For a multi-layered experience, The Curator (S$20) delicately balances nuances of caramel and burnt vanilla, against an oaky peatiness with subtle finishes of mint and citrus fruit. A piece of advice: eat something (lessens the next-day wallop).</p>

Inside, the bar resembles a traditional Chinese medicine shop with marked cabinets featuring bottles of craft spirits in place of Chinese herbs.</p>
<p style="text-align: justify;">Pick your poison from the selection of curated cocktails by Marian Beke, renowned mixologist from the famed Nightjar in London that snagged the #3 spot on World’s 50 Best Bars 2014. Head bartender, Kae Yin, Asia Pacific’s World Class Bartender 2012, recently joined by Singapore World Class 2013 Finalist Bannie Kang run the ship, serving potent classic cocktails with a twist; barrel aged Singapura Sling (S$20) with bittersweet herbaceous notes of red dates and goji berries, and dirty Chinese martini (S$20) of gin, whiskey, vodka and dry vermouth, that’s bound to knock you off your feet.</p>

<p style="text-align: justify;">Probably the closest thing we’ve got to an old fashioned speakeasy is Operation Dagger. Don’t bother trying to find them online—they don’t dig mainstream social media—yep, it’s that cool. Even with an address, locating the bar is a task in itself. This under-the-radar speakeasy has no signs, so keep your eyes peeled for their logo scrawled on the wall. You’ll feel a little apprehensive—you should. Venture down a dark flight of steps and arrive at an open space with a smorgasbord of light bulbs dangling above. That’s when you’ll see the bar—and behind it, rows of brown glass bottles tagged with handwritten labels—you won’t recognize any; all their spirits are distilled in-house.</p>
<p style="text-align: justify;">Just when you think this is as cool as it gets, head bartender Luke Whearty will whip out a stunning array of cocktails that’s a feast for the eyes, and your palate. Drink mulled wine (S$22). It’s good for you. Or at least, it’ll feel like it is. Warm, soothing and bittersweet with a hint of citrus and dried mandarin that will leave your insides feeling warm and fuzzy. Next, order an egg (S$25), where the yolks are vacuum-sealed overnight with dark rum and sugar before adding in house-made salted egg yolk liqueur and salted caramel, and smoked with star anise and toasted hay. Sweet, savory and salty (with a kick of alcohol)—just how we like our eggs done. You’ll want to bring your friends here—they’ll worship you for it. You can thank us later.</p>

<p><span style="font-size: x-large;">#2. KNOWING THE MENU</span></p>
<p style="text-align: justify;">Service staff that are well-versed in their menu offerings are better equipped to provide better service. Knowing the full scope of ingredients, how the dish is prepared, and how it tastes provides servers with the knowledge to recommend something that’s best suited to the customer’s personal preference, as well as avoiding recommending items may result in allergic reactions.</p>
<p><span style="font-size: x-large;">#3. PROVIDING DIFFERENT SEATING SECTIONS FOR DINERS WITH CHILDREN</span></p>
<p style="text-align: justify;">Let’s face it. If you’re taking a date out for a romantic dinner, would you appreciate listening to mothers trying to shush children who are making a scene at the dining table? (Unfortunately, there are people who bring ill-behaved kids to fine dining restaurants.) Experienced restaurants with good foresight would do well to seat guests with children away from those without.</p>

<p style="text-align: justify;">While taking initiative is good, making assumptions is not. Asking a customer whether he/she would like to their wine to be decanted shows good initiative; automatically decanting wine without first seeking their preference, shows a lack of customer understanding—even if it is something the customer usually requests for. Clear it with them to absolutely sure, “Would you like your usual coffee order, sir?”</p>
<p style="text-align: justify;">Restaurants should never assume they know what the customer wants. Guests may occasionally like to try something different.</p>
<p style="text-align: justify;"><span style="font-size: x-large;">#5. ALERTING YOU TO CURRENT DISCOUNTS AND OFFERS</span></p>
<p style="text-align: justify;">Who doesn’t appreciate service staff that actively assists in helping them save money? Not all customers will be mindful to ask about current promotions and discounts. Alerting a customer to the restaurant’s discounts and promotions shows the customer that you care about them (instead of only focusing on increasing sales).</p>

<p style="text-align: justify;">Restaurants often show appreciation by offering complimentary food and drinks to their guests. Offering complimentary small ticket items is a small price to pay to work your way into a customer’s heart, and they will remember you for it.</p>
<p><span style="font-size: x-large;">#7. BE ATTENTIVE TO YOUR NEEDS</span></p>
<p style="text-align: justify;">“Miss, I noticed that you’re shivering. Is the temperature too cold for you? Would you like a shawl and some hot water?” Being attentive to guests before being asked to do so displays care and concern for the customer’s well being. It can be as simple as bringing extra napkins when a customer orders messy food. We appreciate it.</p>
<p><span style="font-size: x-large;">#8. GENUINELY ASKING FOR FEEDBACK</span></p>
<p style="text-align: justify;">Service staff can make or break an experience. Be genuine when asking for feedback. Allow the customer to freely express their opinions and be honest about their experience. If the customer only has praises to sing, thank them for it. If it’s negative, take it. Show empathy and be professional when handling complaints, and your guests will appreciate it.</p>
<p style="text-align: justify;">Service trumps quality. The likelihood of customers returning to a restaurant that serves sub-standard fare but offers exceptionally warm and friendly service is higher than that of a restaurant that serves good food by bad service staff.</p>

<p style="text-align: justify;">Diners may have had an enjoyable night at the restaurant and wish to continue having drinks at the bar. Effortlessly transferring tabs without requiring the customer to first settle the bill provides customers with a seamless experience.</p>
<p style="text-align: justify;"><span style="font-size: x-large;">#10. GRACIOUSLY OFFERING TO SPLIT THE BILL ACCORDING TO EACH INDIVIDUAL DINER</span></p>
<p style="text-align: justify;">We all have that one friend who orders next to everything off the menu. In cases like these, splitting the bill evenly may not be fair for the rest. While it may be a hassle to split the bill according to each individual diner, service staff who offer to do so will be highly regarded—especially as this is rarely offered in Singapore. Do this, and it’s likely you’ll be seeing more group reservations.</p>

<p style="text-align: justify;"><span id="more-42581"></span><span style="font-size: x-large;">#1 RED MEATS SHOULD BE PAIRED WITH RED WINE</span></p>
<p style="text-align: justify;">Pairing is more than just about the color of wine. This myth dates back to the early days when wine knowledge was sparse, and people had bad experiences with the pairing of red wine with shellfish—certain pigmentations in red wine reacts negatively with the brininess of shellfish.</p>
<p style="text-align: justify;">Instead of judging by color (and pairing white meat with white wine), wine should be paired based on how it is cooked. Cooking methods that are low interfering (thus retaining more flavors) such as pan-seared beef, are good with white wines, or more elegant reds.</p>

<p style="text-align: justify;">Most of the time, hefty prices tags are a result of good brand marketing. Price is not a good factor to judge quality, as the scale of quality may not be uniform to its price.</p>
<p style="text-align: justify;">Heftier price tags may also be due to rarity. Having said that, rare wines may not necessarily be top quality wines.</p>
<p><span style="font-size: x-large;">#3 THE OLDER THE WINE IS, THE BETTER.</span></p>
<p style="text-align: justify;">Every wine has a drinking window—when tannins and acidity decrease, but fruit flavors still exist. Once the wine ages past that window, flavors start to deteriorate, making it less ideal for consumption.</p>

<p style="text-align: justify;">Both red and white wines develop flavors over time. Sweet wines, white wines and champagnes all develop the same spectrum of flavors, however white wines are more difficult to age due to minimal tannins. Red wines are easier to age because they have tannins to fall back on, thus the misconception.</p>
<p style="text-align: justify;"><span style="font-size: x-large;">#5 STELVINS (WINE SCREW CAPS) ARE ONLY USED FOR LOW QUALITY WINES</span></p>
<p style="text-align: justify;">This arises from the perception that stelvins are cheaper to manufacture. Screw caps were invented to reduce levels of bottle variation (corks are inconsistent due to its organic nature—no two corks are the same). Stelvins are airtight, preventing additional oxidation from occurring. Wines that are refreshing in nature need to be kept airtight, thus stelvins would work better than a cork.</p>
<p><span style="font-size: x-large;">#6 SWEET WINES ONLY GO WITH DESSERTS</span></p>
<p style="text-align: justify;">Sweet wines may not necessarily go well with desserts, especially if it is a heavy chocolate cake—the sweetness of the dessert may overpower the sweetness of the wine.</p>
<p style="text-align: justify;">Sweet wines pair well with seafood, such as oysters. Sweet wines have incredibly high acidity that cleanses the palate from its creaminess while adding a later of sweetness and complexity.</p>
<p><span style="font-size: x-large;">#7 SULFUR IN A WINE GIVES YOU HEADACHES</span></p>
<p style="text-align: justify;">A whole bottle of wine contains less sulfur than a single egg. Sulfur is a natural byproduct of fermentation. Sulfur in wine does not cause headaches. What cause headaches in wine are contaminants—a result of bad winemaking. The irony of this myth? Even paracetamol contains sulfur!</p>

<p style="text-align: justify;">While red wines contain more antioxidants than white wines, it does not mean that white wines do not have antioxidants. Both reds and whites contain the same amount of nutrients.</p>

<p style="text-align: justify;">This myth originated from Europe, where red wines are served at room temperature. Needless to say, Singapore’s ‘room temperature’ would not match that of Europe.</p>
<p style="text-align: justify;">Reds are best served between 18 to 22 degrees Celsius, whilst whites are best served at 10 to 14 degrees Celsius. So, unless your room here is between 18 to 22 degrees Celsius, we reckon you’d be better off chilling that bottle of red.</p>

<p style="text-align: justify;">Champagne flutes were made with the sole purpose of enabling the bubbles to be seen easily. However, these slim flutes do not allow you to swirl (and aerate properly), and are merely made for aesthetic purposes.</p>
<p style="text-align: justify;">So there you have it; 10 wine myths debunked. Go forth, and show off your newfound vine knowledge. We just saved you from being labeled a wine philistine.</p>

<p style="text-align: justify;">Adding to that draw, is a recently launched list of cocktails like Blushing Barmaid ($22) that consists of Campari, amaretto, egg whites and bitter lemon shaken and strained over ice, and garnished with dehydrated orange peel for a zesty fragrance. A house signature, Rakes’ Ration ($34 for two) is a blend of two spirits and a beer (warning: not for the weak): Plantation 3 Star rum, Makers Mark bourbon and IPA; shaken and smoked in a mason jar with Amaro Montenegro, Chambord, lemon juice, and Rakes’ syrup, before rounding up the drink with a dash of Angostura and orange bitters—expect complex and bittersweet layers of berries and herbs.</p>

The boys (yes, these youngurns should be proud) behind Mars Bar are bartenders Louis Tan and and Roger Yip, who honed their creative skills at Bar Stories before venturing out on their own. On the menu are crazy-sounding concoctions like bak kwa cocktail (S$22) that fat-washes local favorite honey glazed Bee Cheng Hiang bak kwa in Bulleit bourbon before mixing in cinnamon and orange syrup to enhance its savory sweetness; and the sweet, salty, and savory chili crab cocktail (S$22) made with chili crab paste, Tanqueray gin, Malibu rum, kaffir lime, lemongrass, and orgeat.</p>
<p style="text-align: justify;">Bespoke concoctions are also at play here. On our visit, we were served King of Asia (S$22)—a cocktail creation inspired by durian. Fresh passion fruit, butterscotch schnapps and vanilla ice cream recreates creamy textures of durian, and the addition of Gosling rum results in a lingering pungent fruity bitterness best described as the king of all fruits.</p>

Other exclusive rums include Zafra Ron Master Reserve Panama (S$36), and Diplomatico 2000 (S$34)—only six bottles are available in Singapore, all of which sit behind the bar at Sugarhall.</p>

Our personal favorite is the Sugarhall Mai Tai (S$22) that opens with sour and fruity notes of Tamarind and spiced apricot before blossoming into a rich, dark yet mellow bitterness with a mildly spicy finish.</p>

<p style="text-align: justify;">One of the best cocktail spirits around is gin; a clear alcoholic spirit distilled from grain or malt, flavoured thereafter by infusing a variety of botanicals (this process is known as compounding), including juniper. Its diverse flavour profile makes this un-aged spirit perfect for cocktails. We speak to some of the industry experts to give you a crash course on gin (and save you from the embarrassment of mistaking vodka for the former).</p>

<p style="text-align: justify;">Home to one of Singapore’s largest collection of gin, The Spiffy Dapper boasts a stunning collection of 75 types of gin, including a number of house-infused gins and rare gins like The Duke (which has since ceased production) and Uncle Vals (only bottle available in Asia). Here, owner-bartender Abhishek Cherian George (known for crazy boundary-pushing concoctions) shares his knowledge on the topic.</p>
<p><strong>First things first. What exactly is gin?</strong></p>
<p style="text-align: justify;">Gin is effectively vodka flavoured with botanicals. Vodka has no taste and no smell, while gin will smell and taste of the botanicals is used to flavour the gins.</p>
<p><strong>Most gins are clear and look identical in nature. How do you tell one gin apart from another?</strong></p>
<p style="text-align: justify;">Most gins have different botanicals—even the traditional London drys. Once you start tasting different gins, you will be able to differentiate them based on the botanicals you smell and taste. Some differences are nuanced while others are more evident.</p>
<p><strong>How do you judge the quality of gin?</strong></p>
<p style="text-align: justify;">We base it on the mouthfeel, quality of base spirit and the type of botanicals used. When it comes to picking personal favourites, adventure and imagination is key. An example would be New Deal Gin 33. Only juniper berries is used in this gin, but the complexity of its taste shows otherwise—the balance the distiller has gotten out of this gin is phenomenal.</p>

<p style="text-align: justify;">Co-owner and founder of Liberty Spirits Asia (distributer of American craft spirits) and tasting room The Secret Mermaid Howard Lo, is a staunch believer of artisanal gin. We check in with him to find out the difference between British and American gin.</p>
<p><strong>Gin originated form Britain. Why the preference of American gin over British gin?</strong></p>
<p style="text-align: justify;">With American gins, the distilleries are open to deviating from the popular London Dry style of gin. This gives you more variety with different botanicals leading the taste. Currently, there are many distilleries making gin in what is called an “American Dry” style, although there is no true style or characteristic of American gin aside from innovativeness. One of my favourite American gins is Greenhook Ginsmith’s Greenhook American Dry Gin that uses a unique distillation process (mercury vacuum still)—a complex gin that includes botanicals such as orris root, Thai galangal and elderberries. It has a heavier mouthfeel and provides a sensation that you’re working your way through more botanicals.</p>
<p><strong>What are the qualities you look out for when selecting a gin?</strong></p>
<p style="text-align: justify;">In general, looking for the balance of juniper with other botanicals, before focusing on which flavours said botanicals bring out.</p>
<p><strong>What is the best way to “taste” a gin to fully savour its flavour profile?</strong></p>
<p style="text-align: justify;">To taste the gin, add a drop or two of water to help bring out the scent and nose the gin to take in the aromas. As you sip it, let the gin slowly roll around each part of your tongue.</p>

<p style="text-align: justify;">A finalist in the G’Vine Gin Connoisseur Program Global Finals in 2012, head bartender at Manhattan Bar, Ricky Paiva, has a discerning palate for artisanal spirits. He backs up Lo’s take on American spirits.</p>
<p><strong>What gin would you highly recommend?</strong></p>
<p style="text-align: justify;">St. George Terrior Gin. It’s very eccentric. Master distiller Lance Winters wanted to make a gin from his home, so he chopped down a tree and put it in his still. This gin has an evergreen nose that’s a bit dry from fennel, but is smooth and incredibly aromatic. The Rusty Gin is another custom-sourced bottle. Made in a local distillery outside San Francisco, Rusty Gin is aged in wine barrels for 4 months, resulting in an earthy, maple caramelised flavour the colour of rust—hence its name.</p>

Located along Boat Quay, Ah Sam Cold Drink Stall welcomes all who seeks a good tipple (or two) to lounge on level two as you take in tranquil views of the Singapore River.</p>
<p style="text-align: justify;">Formerly of Jigger &amp; Pony, owner-bartender Samuel Wong (better known as ‘Ah Sam’) helms the bar with Diplomatico World Tournament 2013 Singapore winner, Eugene Chua, to deliver classic-driven bespoke cocktails that are intoxicatingly potent—it seems they don’t hold back on tipping the bottle over (but we ain’t complaining). A saving grace that liberates one from the stress of work is Old Pal (S$20)—bringing together subtle bitter and herbaceous notes of Campari and dry vermouth, and the toasty nuttiness of rye whiskey. Disclaimer: if you’re a lightweight (drinker), this probably isn’t the place for you.</p>

<p style="text-align: justify;">A common misconception: working in a corporate-driven environment (and dressing well) does not necessarily mean one earns more than average. If you’re looking for a watering hole that understands your needs; having a drink without burning a hole in the wallet, this is it. The extensive menu may cease to overwhelm—there’s 13 beers; bottled and on tap, and over 30 spirits available—even sake, wine and bubbly are not spared from the list.</p>
<p style="text-align: justify;">Having said that, quantity does not truncate quality. Premium spirits such as Hendrick’s Gin, Macallan 18 years, Martell Cordon Bleu, Nikka From The Barrel, and The Glenlivet 18 years are also stocked at the bar. While that’s great, what really draws the crowd in are their prices—one of the lowest around. A glass (300ml) of Asahi Super Dry will set one back S$5, while a tower (3l) is priced at S$50. If beer’s not your thing, house pour reds, whites, and spirits are all priced at S$5 per glass. There’s also live music performances Monday to Friday from 7pm. Heads up: it gets busy from 6:30pm, so make your way down early.</p>

<p style="text-align: justify;">In line with its moniker, signature cocktails are quirkily named after financial terms like ‘offshore account’; a twist on the mojito by adding raspberries and citrus to the concoction, and ‘liquidated damages’, consisting of Rémy Martin VSOP, lemon juice and simple syrup—thankfully priced affordably (both $18) so your wallet won’t experience either. We especially enjoyed the G&amp;T ($19) with a touch of mint and grapefruit for a bittersweet yet refreshing profile, as well as the sweet and citrusy smash and grab ($18)—a rum-based cocktail of muddled pineapple, Italian basil and lime.</p>

There’s no wheel reinventing here—just a muted list of American classics with a twist.</p>
<p style="text-align: justify;">Heading the bar is bartender Kevin Petrie, who designs a straightforward cocktail list to enhance the flavors of the spirit. Read: no fancy garnishes here. Reigning high on our list is the Negroni ($15) of Alaska fireweed vodka, Campari and Aperol with a hint of grapefruit, and our swear-by after-work mood-lifter tequila Old Fashioned ($12)—Sparkle Donkey Reposado tequila and a touch of basement bitters. Also available are tasting flights (from $15) that come in a set of three spirits (15ml each)—choose from bourbon, gin, rum, vodka, infused vodka, and whiskey.</p>

A brand new concept that pairs Japanese sake with Spanish dishes (by former Santi chef de cuisine Pepe Moncayo) brings an element of surprise that tantalizes tastebuds. Yopparai means “drunkard” in Japanese—seemingly the mission here with a specially curated list of over 80 sakes by sake professional Derrick Lim, and food in a supporting role.</p>
<p style="text-align: justify;">Exclusively available at Bam! is MAR ($110-$120 for 720ml); a highly limited collection of sake from the Ehime prefecture—specially chosen by a panel of sake experts to pair specifically with Spanish food. An example is the red range that enhances flavors of umami when paired together, or the yellow range that not only brings out flavors of ham, but tenderizes it as well.</p>

<p style="text-align: justify;">A premier contemporary art district, Chelsea showcases some of the most edgy yet increasingly blue chip galleries like David Zwirner, Gargosian Gallery, Gladstone Gallery, Haunch of Venison, Petzel Gallery, as well as the recent addition of the High Line—a resurrected green space that offers walkers a bird’s eye view of the bustling neighborhood (one of Manhattan’s most popular destinations).</p>
<p style="text-align: justify;">One of the best pizzerias in New York City is Grimaldi’s (it’s even got the thumbs up by Zagat) at Limelight Marketplace. The best part is its 24/7 call ahead for pick up that eliminates waiting in line. For something a little more opulent, head over to The Nomad for decadent classics like foie gras torchon, and roast chicken (stuffed with foie gras and black truffle).</p>

One of the best neighborhoods to score some pretty great buys—we’re talking good-as-new Salvatore Ferragamo belts from as low as US$90—the East Village is a paradise for vintage lovers. Our favorite stores for high-end and luxury brands include Amarcord Vintage Fashion (of which said belts were purchased), Buffalo Exchange, Eleven Consignment Boutique, Screaming Mimis and Tokio 7.</p>
<p style="text-align: justify;">Now that we’ve gotten shopping out of the way, let’s get on the alcohol wagon. Home to the highest number of bars in the city (if not in the world), this ‘hood boasts three cocktail bars that made it to The World’s 50 Best Bars 2013: PDT (Please Don’t Tell; #13), Death &amp; Co. (#21), and Pouring Ribbons (#44).</p>
<p style="text-align: justify;">Top of our list cocktails at PDT include an old-fashioned made from bacon-infused bourbon and maple syrup, as well as an aptly named Sazerac: Staggerac, of 140-proof bourbon and absinthe. If you’re feeling adventurous, check out Yellow King at Pouring Ribbons—a gin and mezcal cocktail that includes yellow pepper thyme syrup.</p>

Tip: If you’re planning on staying out late, be sure to check what time the parking lot closes—most of them close between 11pm to midnight. Parking facilities at law firms and medical centers generally open late (if not 24/7), such as One Medical Group (1001 G Street NW, DC 20001) located in the heart of the city—a mere five-minute walk to Metro Center metro station.</p>
<p style="text-align: justify;">The best way to take in the sights and the sounds of Washington D.C. is on foot. Having said that, to make the most of 24 hours in the city, traveling solely on foot might not be the best option.</p>

<p style="text-align: justify;">Our personal favorite was lip-smackingly delicious Colletti’s notorious BBQ pie (USD4 per slice) of slow roasted pulled pork with Colletti’s award-winning barbecue sauce, cheddar and crispy onions—there’s a reason it’s notorious. If you’re feeling like burgers instead, pop over next door to sister restaurant, Good Stuff Eatery, for handcrafted burgers, hand-cut fries, hand-spun shakes.</p>

Tip: a flight to LaGuardia Airport (LGA) tends to cost less than one to John F. Kennedy International Airport (JFK), a mere 15-minute drive apart—a distance small enough to justify the discrepancy in airfare.</p>

<p style="text-align: justify;">One of the most well-known ones is the Brooklyn Flea with up to eight different locations (depending on the season). Expect to find vintage designer goods—we nabbed ourselves a leather Coach bag (USD70) and an old school Dooney &amp; Bourke leather satchel (USD90). Also available are artisan food products, handmade jewelry, antique furniture and more. There’s even a food section where you can sample delicacies by gourmet purveyors. Showcasing almost 200 vendors, set aside a full afternoon for this flea—it’s time well spent.</p>

First concocted back in the early 1910s, the ease of manufacturing gin led to the rise of the martini as a predominant cocktail in the mid 20th century.</p>

One of the early common spirits, bourbon (a type of American whiskey) was widely used in cocktails. Put two and two together, and the Old Fashioned was born. There’s a reason it’s called an ‘Old Fashioned’.</p>

<p style="text-align: justify;">Giving you the option of ordering exquisite wines (without breaking the bank), Napoleon offers a stellar range of 32 European wines available on enomatic wine dispenser machines—one of which is the Châteauneuf-du-Pape Ancien Domaine des Pontifes 2011 ($18 per glass; $90 per bottle). This bio-organic wine is dense and dark, with a nose of ripe fruits (due to the purity of the soil).</p>
<p style="text-align: justify;">A well-structured wine with fine tannins, we recommend pairing this with spicy dishes to fully savor its complexity. If you’re in the mood for something white, Graves blanc Château Claron 2010 ($13 per glass; $65 per bottle) is one of the best dry white wines in Bordeaux. Produced traditionally from a single grape variety of Sauvignon Blanc, this full-bodied wine flourishes with aromas of citrus fruits. We reckon this will go perfectly with the poached salmon ($21) and green pea purée.</p>

Believing in enjoying wine (without hefty price tags), French owner Antoine Rouland travels back to France three times each year to visit winemakers and vineyards, selecting wines from smaller producers.</p>
<p style="text-align: justify;">Here, you’ll find vintages such as the Medoc 2001 Chasse Spleen at only $97 per bottle—a rare find in Singapore. Apart from a specially curated list of 100 wines on rotation (with 75 varieties available at any time), varieties of cheese are also available for pairing.</p>
<p style="text-align: justify;">We recommend the cheese platter ($29) with our personal favorite, Cotes de Gascogne 2012 Domaine du Tariquet ($12 per glass; $55 per bottle). Made with four types of grapes, separately fermented before aging in French oak barrels, this white has an incredibly complex aroma profile of peach and vanilla with a subtle woody aftertaste—perfect with a floret of Tete de Moine (better known as “monk head”) cheese.</p>

<p style="text-align: justify;">If you’re a novice at wines, Taberna Wine Academy is the best place to learn the basics, and sample some exclusive wine labels while you’re at it. What’s really great about this spot is its extensive availability of wine verticals (wines from the same producer and vineyard with differing vintages).</p>
<p style="text-align: justify;">Such is the German Riesling from Reichsgraf von Kesselstatt (from $81 per bottle) with a dozen wine verticals dating back as far as 1983. Beginners interested to learn the technique of wine tasting can attend the introduction to wine appreciation ($100) where you’ll get to taste and sample eight different styles of wine. A range of professional courses are also available for veterans looking to hone their skill.</p>

<p style="text-align: justify;">A fairly new entrant to the winery scene, Vida Vino (translating into “the wine life”) is about making merry without your wallet having to suffer. With a personal selection of 60 wines (by owner Aaron Olivera) that start from $12 per glass, this wine bar stands to give competitors a run for their money.</p>
<p style="text-align: justify;">The Beronia ($85 per bottle) is such—opening with subtle notes of flowers and fruit before blossoming into a refreshingly crisp and spicy finish, this wine pairs extremely well with the iberico ham platter ($23)—a range of Joselito iberico ham (the best in Spain). As for sipping cocktails, Vida Vino has done an exceptional job in crafting some pretty smooth-drinking concoctions. From Spain with Love ($18) consists of “secret ingredients” that results in an edgy, bittersweet cocktail—we managed to make out notes of Spanish white wine and raspberry brandy.</p>

Food wise, popular bar grub favorites include chicken wings ($8.90), beer battered onion rings ($8.90) and crispy pork belly ($9.90)—always great with beer.</p>
<p style="text-align: justify;">Signatures like the Jimmy Malones ribs ($24.90) leave no room for midnight cravings—half rack of tender pork ribs glazed with a sweet and spicy sauce, served with a side of green peas and classic Irish colcannon mashed potatoes with cabbage. On tap ($12.50), get drunk on your poison of choice: Archipelago Belgian Wit, Archipelago Summer Ale, Archipelago Bohemian Lager, Tiger, Heineken, Kilkenny, and Guinness.</p>

<p style="text-align: justify;">Singapore’s first Irish pub, Molly Malone’s stands proud after nearly two decades of serving hearty Irish delights (and getting people drunk on a good time). One of the reasons why we love Irish pubs is their modest bar grub: scotch eggs ($8) and hot and spicy wings ($12). If you’re hungry, pad down your stomach with Irish stew ($18)—the lamb is braised to tenderness, literally melting in the mouth.</p>
<p style="text-align: justify;">Wash it down with Irish whiskies: Bushmills old Irish original ($12), Bushmills single malt 10 years (both $12), or John Jameson ($14). If you’re more of a beer kind of person, Irish labels like Guinness ($13.50) and Kilkenny ($13.50) are also available on tap. There’s also live music Wednesdays to Saturdays from 9pm.</p>

<p style="text-align: justify;">There aren’t many pubs in Singapore that manage to make a good slab of tender, succulent barbeque ribs, but we’ve found one. The barbeque ribs ($18.80 per half slab; $26.80 per full slab) at Molly Roffey’s are marinated overnight in a sweet homemade barbeque sauce that’s simply mouthwatering—we recommend opting for the full slab. It’s a well-known fact that the best pairing for barbeque ribs is beer, so we reckon you’d enjoy it best while you’re knocking back a chilled mug of Erdinger Dunkel ($18) or Kilkenny ($17).</p>
<p style="text-align: justify;">Traditional Irish cocktails such as the bloody molly (Bushmill original, Tabasco sauce, Worcestershire, pepper, salt and tomato juice; $15) and Irish car bomb (Jameson Irish whiskey, Bailey’s Irish cream and stout) are also available—great as a post-dinner tipple.</p>

<p style="text-align: justify;">Carved into the doorframe, this was the first thing we spotted: “licensed to sell beer, wines and spirits 7 days a week” (read: licensed to get you drunk 7 days a week). With 17 varieties of beer available (including English ale Old Speckled Hen and Strongbow cider on tap), it’s no wonder this watering hole seems to be constantly living it up.</p>
<p style="text-align: justify;">Not forgetting its extensive list of over 40 spirits (not counting liqueurs) and more than 30 cocktails (from $15) and shooters (from $13), you know you’re in trouble here. Fun trouble. One of the rowdiest Irish pubs, Muddy Murphy’s is well known for making merry. Having said that, apart from crazy tipples, they also serve an Irish farmhouse breakfast ($15) made up of Harris sausages, crispy back bacon, eggs, mushrooms, rosti potatoes, baked beans, grilled tomato and fried bread, and a weekly Sunday roast (11:30am-4pm; from $20).</p>
