The process was smooth and the security checks were stringent to ensure all guests are safe. Our accommodation of the night was the Deluxe Suite with pool access, and it was perfect for our little daughter who gets excited over the sight of swimming pools. The convenience! We could just jump straight into the pool anytime, and the best part?</p>
<p dir="ltr">The exclusive hotel lap pool is only available for those who book the Deluxe Room/Suite with pool access.</p>

<p dir="ltr">For guests of Equarius Hotel, there is an option for you to add-on an afternoon tea session, but due to overwhelming response, it has been sold out. However, you can still visit Ocean Restaurant for their set lunch menus which start from $68++ (do note that it is not included in the hotel package) or select it as your choice of festive dinner (included in the hotel package).</p>

Indulge in an afternoon tea session with your loved ones at Ocean Restaurant. We were so thrilled by the underwater dining experience and it was really not your typical afternoon tea.</p>
<p dir="ltr">Enjoy freshly-prepared canapés and decadent sweet treats while getting lost in the wondrous aquarium. Our daughter was pretty bewildered by the experience and she didn&#8217;t want to leave.</p>

There are many corners to enjoy and relax; truly an experience that we will never forget.</p>

<p dir="ltr">We had dinner at table65 and it was a gastronomical affair. Helmed by the culinary masterminds behind Amsterdam’s Two MICHELIN Star Restaurant, dining at table65 is an intimate affair. The open-kitchen concept allows guests to freely interact with the chefs, and to discover more about what goes on in the kitchen before your food goes onto your plates.</p>

<p style="text-align: justify;">Throughout our dinner, we were given insights by Chef de Cuisine, Dayal Kesha on how each dish was prepared, the inspiration behind, the star ingredient(s), so on and so forth. It was delighting for the senses, to say the least. We savoured our 4-course dinner with much anticipation, and each course just got better and more intricate.</p>

The BBQ Duck with foie gras, blueberry, aigre doux and confit of chestnut was executed with masterly finesse. First of all, local ducks from Toh Thye San farm are used so as to support local.</p>
<p dir="ltr">Every duck is being brined before being dry-aged, and despite using only the breast, the meat was unbelievably tender. Before being served, the chef dries the skin of the duck with a hair dryer-like industrial dryer to give the skin a little crisp. We would totally go back to table65 for this stellar dish!</p>

<p dir="ltr" id="docs-internal-guid-d60d331d-7fff-05cf-ecc1-a4b53dc77e4e">Ending with a bang was the Apple, Salted Caramel, Puff Pastry &amp; Walnut dessert that was so aesthetically-pleasing, we couldn&#8217;t believe our eyes when we first saw it! Constructed with precision, the shape of the apple is really a sugar bubble that breaks upon hitting it gently with a spoon. That is how delicate it is! The &#8220;core&#8221; of the apple is fresh apple sorbet, and the &#8220;seeds&#8221; are chocolate. How incredibly creative of the dessert chef, huh!</p>
<p dir="ltr">Our bellies were so happy and we returned back to our Suite feeling mighty pleased with our stay thus far. Oh, before we forget, this festive dinner also comes with 2 glasses of complimentary champagne when you book the 2D1N Joyous Stay-In package at Resorts World Sentosa. Perfect!</p>

<p style="text-align: justify;">This Taiwanese dish is getting much attention in Singapore and Ruyi is another place to visit for a wholesome bowl of Lu Rou Fan (S$8.20). Each bowl comes with steamed rice atop of slow-cooked braised pork drenched in dark sauce, half a soy egg and preserved vegetables.</p>
<p style="text-align: justify;">The tangy preserved vegetables cut through the dark sauce which makes the dish less surfeit and much more appetizing. As simple as it looks, the braised pork is incredibly flavourful and we are surely going back for more.</p>

<p style="text-align: justify;">The sake bar at Hello Hokkaido! will be offering sake from four world-class breweries—Kitano-Homare, Hakodate Wine, Grande Polaire and Nippon Seishu, which happens to be the pioneer of sake production in Hokkaido.</p>
<p style="text-align: justify;">Nippon Seishu will be offering 5 types of sake, while Kitano-Homare brewery will be showcasing 4 types of sake at the festival.</p>

The former is infused with ginseng and served in a Chinese snow pear atop a bed of ice, while the latter is placed in a young coconut, topped with coconut sherbet and crispy black rice.</p>

She was in town for a week, and we were really stoked to host her. <a href="http://www.ladyironchef.com/2015/06/cat-cora-ocean-restaurant/">One of our lucky readers also won the chance to dine at the stunning Ocean Restaurant by Cat Cora</a> at Resorts World Sentosa.</p>
<p style="text-align: justify;">Together, we spent the evening sampling her new dishes, and the experience of dining at <a href="http://www.rwsentosa.com/Homepage/Restaurants/CelebrityChefs/OceanRestaurantbyCatCora">Ocean Restaurant by Cat Cora</a> is like no other. Few restaurants in the world have the opportunity to boast about being part of an aquarium, and Ocean Restaurant by Cat Cora is one of them.</p>

<p style="text-align: justify;">Dinner was great. We had a ball of a time together. And Chef Catherine is the sweetest lady.</p>
<p style="text-align: justify;">In conjunction with Father&#8217;s Day, our readers were tasked to share their fathers&#8217; favourite fruits with us, and the lucky winner (picked at random) will win a dinner for four at Ocean Restaurant by Cat Cora. Together, we sampled Chef Catherine&#8217;s new creations, and the cherry on top was the special dessert that Chef Catherine prepared using Dad&#8217;s favourite fruit. Pineapple and banana it was; very tropical, very local-like.</p>

<p style="text-align: justify;">We started the day with a local-style breakfast to show Chef Catherine all that our Singapore hawkers have to offer. What adjourned after was a round at the wet market, where Chef Catherine shopped for fresh fruits &#8211; pineapples and bananas, of course. You have to read on to find out what the special dessert is, because it tasted out of the world and everyone loved it so much that Chef Catherine is considering to place that item permanently in the menu!</p>

You have no idea how we were so looking forward to dinner because, it is Ocean Restaurant by Cat Cora! If you haven&#8217;t been, you really should. It is one of those places you must dine at before you die.</p>

<p style="text-align: justify;">As the largest aquarium in the world, Resorts World Sentosa&#8217;s S.E.A. Aquarium is home to more than 100,000 marine animals of over 800 species. And the restaurant is right next to and has an unobstructed view of the large aquarium. It is a fascinating experience to say the least.</p>
<p style="text-align: justify;">So what should you expect from the new menu?</p>

<p style="text-align: justify;">No better way to start your meal than with an amuse bouse of Fresh Oysters &#8211; Chef Catherine&#8217;s version is prepared with passion fruit and watermelon salsa. With this very appetizing and innovative fruity take, who is to say that oysters are just oysters?</p>

<p style="text-align: justify;">The Torched Brown Trout &#8220;Farbio&#8221; with Smoked Eel is plated with crunchy cucumber and caviar vinaigrette. This appetizer of petite pleasures combines the freshness of the ocean with life&#8217;s simplicity.</p>

<p style="text-align: justify;">And then, we have the Sautéed Langoustines. God, how we had loved this one so much! The orange-pink lobster is as sweet as lobsters should be, and it is served with a light crustacean cream, baby fennel, leek and soft herb. Nothing over the top; just a rustic take on the crustacean to create a taste to remember.</p>

<p style="text-align: justify;">You know you are in good hands when the chef does something as simple as corn soup really well. The Charred Corn Soup is surely the best rendition we&#8217;ve tried. And your ordinary corn soup is elevated when served with a beignet of blue swimmer crab. So sweet, so hearty. And the cherry, we mean bacon on top is the perfect completion.</p>

<p style="text-align: justify;">From the mains, we sampled the Fresh Sustainable Fish. Farmed in New Zealand, we are all for sustainable food. This fish dish is prepared with burned butter-balsamic emulsion with capers, smoked chives potato and grilled red endives. Totally digging that crispy skin that made such a lovely contrast to the smooth, white fish.</p>

You see, they are really simple ingredients, but Chef Catherine did a brilliant job by creating a chocolate dish with banana ice cream, shaved peanuts and cooked pineapple. If you think it looks pretty, you should try it for yourself to know how it is actually much tastier than it already looks!</p>

<p style="text-align: justify;">Resorts World Sentosa has a belt of dining outlets for all kinds of budgets and occasions, and we never run out of options whenever we are in the compound. We have our favourites, but recent new additions and revamped menus got us all excited.</p>
<p style="text-align: justify;">First up is Syun &#8211; a Japanese outlet helmed by famous Japanese Chef Hal Yamashita. Joining the line-up of celebrity chef restaurants, Syun &#8211; which means a season of new beginnings &#8211; focuses on modern Japanese contemporary cuisine. The Singapore outpost is Chef Hal Yamashita&#8217;s first venture outside of Japan. Singaporeans&#8217; love for Japanese food knows no boundaries, and this is one place you have to check out. We will share more in a bit.</p>

<p style="text-align: justify;">Meanwhile, Thai Chef Ian Kittichai &#8211; who has 11 restaurants, including his flagship Thai Restaurant Issaya Siamese Club in Bangkok &#8211; has taken over the role of consulting chef for Tangerine at ESPA, and he has introduced a brand new menu which highlights his take on spa cuisine. Spa cuisine is known to be light and healthy, but Chef Ian Kittichai has elevated it to a whole new level. We will also be sharing some of the highlights from his new menu.</p>

The environment is that of a casual one, with nuances of ancient Nippon charm, and heavy with wood elements. Private rooms are also available for a more conducive dining environment; otherwise, it makes a great place for a comfort lunch over earnest Japanese cuisine.</p>

<p style="text-align: justify;">We really love Syun&#8217;s set lunches. They are focusing more on Jyu Box sets, with Sashimi and Nigiri sets as well. . An upmarket fine dining establishment by a celebrity chef usually comes along with hefty price tags, but we were pleasantly surprised by how affordable Syun&#8217;s set lunches actually are.</p>

<p style="text-align: justify;">The Chirashi Sushi (S$32) is a new-found favourite that will have us returning again and again. You have no idea how picky we are about our Chirashi-don, but Syun&#8217;s version won our hearts for its generous chunks of sweet sashimi and ikura atop plump Japanese rice drizzled with a ginger-like sauce. The gorgeous flowers you see are edible, too! All Jyu Box Sets are served with Miso Soup, Steamed Egg Custard, and Green Salad Yuzu Ginger Dressing.</p>

<p style="text-align: justify;">Fans of Chef Yamashita will be pleased to find his iconic dishes such as Sea Urchin Rolled by Wagyu Beef (S$15); and the Grilled Cod with Saikyo Miso, Yuzu Miso Sauce and Dried Mullet Powder (S$28 for 1 pax, S$48 for 2 pax). The latter is our favourite side dish &#8211; flaky-fleshed cod lavishly coated with a sweet-and-savoury miso sauce, grilled lightly to bring out the essence and sweetness of the fish.</p>

<p style="text-align: justify;">Another dish to savour is the Sashimi Salad with Yuzu Ginger Dressing (S$28). Sashimi salads can be found anywhere these days, but we always prefer a classic one with no frills but quality fish chunks/ slices, crisp leaves and a kick-ass sauce. Yuzu Ginger sounds just about perfect, because the tangy-spicy dressing seeps in to the fish without masking its flavours, and leaves a lingering cool citrusy aftertaste.</p>

<p style="text-align: justify;">If you&#8217;ve always wanted to dine at a Joël Robuchon Restaurant, the Sunday set lunch (S$78, S$98, S$118) is a great chance for you to sample executive chef Michael Michaelidis&#8217;s cooking.</p>

Then, there is also the list for more intimate experiences with friends and families. For Chinese New Year 2015,<strong> Resorts World Sentosa</strong> has two perfect options for everyone.</p>
<p style="text-align: justify;">Want an elegant space with top-grade Chinese cuisine for a night of sheer indulgence? Feng Shui Inn is the kind that fits the bill. Mark this place down and consider it one of the places to feast at.</p>
<p style="text-align: justify;">Apart from Lo-hei of several options, there is an a la carte menu. The Poached Seasonal Greens with Live Lobster and Black Fungus (S$38 for a small portion) is highly recommended. For something even more flavourful, try the Pan-seared Oysters with German Pork Knuckle (S$68 per serving). This dish packs a wicked punch and is good for sharing. And for the prettiest dessert? The Soft Layered Cake with Custard &amp; Golden Flakes (S$48 per whole cake) will set everyone&#8217;s hearts aflutter.</p>

<p style="text-align: justify;">Dine with your discerning loved one(s) at Forest with a range of lunch and dinner sets. To begin, every set comes with a fruity salmon yusheng. Something fresh and something different.</p>
<p style="text-align: justify;">But if sets are too much for two, there is also an a la carte menu, from which we really love the Four Treasures Soup (S$32 per person). Braised with fish maw, sea cucumber, conpoy and crabmeat and served in a young  coconut, this is one soup that is luxurious and oh-so-sweet. Mains includes Boston Lobster that is wok-fried with green chives and fresh lily bulb (S$58 per person), Canadian Geoduck Clam (S$38 per person) and Marble Goby Fillet that is steamed with yellow bean sauce (S$34 per person). But we&#8217;d go for the Kurobuta Pork (S$28 per person) anytime &#8211; charcoal-grilled pork that is accompanied with asparagus, this dish is a fine mix of sweet and savoury.</p>

<p><span style="font-size: x-large;">#1 WHAT IS YOUR KIND OF COMFORT FOOD?</span></p>
<p style="text-align: justify;">Joël Robuchon: No matter which part of the world I am at, I&#8217;m always working in my restaurants, trying out new dishes and recipes. Unlike most people, I do not have the luxury of sitting down for a full meal. I do not have any favourite food. It always depends on the occasion, the season, as well as the mood at that point in time.</p>

<p style="text-align: justify;">The thing that excites me the most is the ever-changing seasonal ingredient and getting my hands on the highest quality. It is currently the white truffle season, so naturally the dish that I&#8217;d like to eat the most now is a plate of spaghetti with a perfectly boiled egg topped with lots of white truffle.</p>

<p style="text-align: justify;"><span style="font-size: x-large;">#2 WHAT IS THE TOUGHEST DISH/INGREDIENT TO PREPARE?</span></p>
<p style="text-align: justify;">Joël Robuchon: One of the most difficult ingredients to prepare is black truffle. In order to cook black truffle well, the chef would need to have a lot of knowledge and technique so as to treat it properly in order to preserve and maximise the flavours.</p>
<p style="text-align: justify;">While truffle is now aplenty and the audience might be confused about the grades, a real chef who uses only the premium grade is not one who sweeps you off your feet the moment he dishes out his creation. Quality truffle has to be handled meticulously, and it should perfume the food in such a way that only upon mixing or cutting up your food, and putting it in your mouth, then would the flavours be released in full force. That is the test for every chef.</p>

<p style="text-align: justify;">Joël Robuchon: At every Joël Robuchon restaurant, there is a huge amount of preparation work done behind the scenes that customers do not see; we call that the <em>mise en place</em>. From picking the best and freshest ingredients; to scaling, deboning and cleaning the fish; cutting the various vegetables; and preparing the stocks, our chefs spend a lot of time on the preparation, because we take pride in every ingredient that goes in to your dish, and we only want you to have the finest of our touches.</p>
<p style="text-align: justify;"><span style="font-size: x-large;">#4 WHICH IS YOUR FAVOURITE JOËL ROBUCHON RESTAURANT IN THE WORLD?</span></p>
<p style="text-align: justify;">Joël Robuchon: Always the one that I am at now. So, it would be Joël Robuchon Restaurant and L&#8217;Atelier de Joël Robuchon. (laughs)</p>

<p style="text-align: justify;"><span style="font-size: x-large;">#5 WHAT DO YOU THINK ABOUT SINGAPORE&#8217;S DINING SCENE?</span></p>
<p style="text-align: justify;">Joël Robuchon: Honestly, this is not an easy question for me because I do not have much knowledge of the restaurants in Singapore. I&#8217;ve been to a few restaurants so far but I am not the most qualified person to discuss this. But I do love all the local food that I have tried so far.</p>
<p style="text-align: justify;"><span style="font-size: x-large;">#6 WHICH IS YOUR FAVOURITE LOCAL FOOD IN SINGAPORE?</span></p>
<p style="text-align: justify;">Joël Robuchon: I appreciate local food like chilli crab, black pepper crab and chicken rice because they are flavourful and have a lot of characters.</p>

<p style="text-align: justify;"><span style="font-size: x-large;">#7 ANY PLANS TO OPEN MORE RESTAURANTS IN 2015?</span></p>
<p style="text-align: justify;">Joël Robuchon: Yes, I do have some new openings coming next year. In December, L&#8217;Atelier de Joël Robuchon will be starting its operations in the centre of Bangkok. And before the end of the year, we are opening another restaurant, <b>La Grande Maison that will be housed in a 19th-century mansion</b> in the Bordeaux region. Also, we are looking to open our first L&#8217;Atelier de Joël Robuchon in Shanghai next year. It will be located along The Bund, and it is a beautiful spot to dine while enjoying the true Shanghai beauty.</p>
<p style="text-align: justify;"><span style="font-size: x-large;">#8 WHICH IS YOUR FAVOURITE CITY, AND WHY?</span></p>
<p style="text-align: justify;">Joël Robuchon: I have too many favourite cities in the world, but one of the cities that holds a special place in my heart is New York City because it is a place with so much energy. There are always new things happening in the city, with new trends to explore. I find myself very comfortable and inspired whenever I am in the city.</p>
<p style="text-align: justify;">Tokyo, another place that I love, is the same as New York City but with a certain refinement. I&#8217;ve been travelling to Tokyo for the past 40 years and it never ceases to impress me.</p>
<p style="text-align: justify;">London is also an exciting city with lots of activities and exciting restaurant concepts that are truly special and characteristic. I get inspirations there too.</p>

<li>120g of Salmon (finely chopped)</li>
<li>10g small white onion (finely chopped)</li>
<li>5g of Capers (finely chopped)</li>
<li>2 leafs of Young Shiso Sprouts (finely chopped)</li>
<li>10g of Tobiko Eggs</li>
<li>Salt and Pepper to taste (milled)</li>
</ul>
</ul>
<p>Sauce:</p>
<ul>
<li>1 egg yolk</li>
<li>20g of Dijon Mustard</li>
<li>20g of Ketchup</li>
<li>35g of Grape-Seed Oil</li>
<li>A few drops of Worcester sauce (Lea &amp; Perrins brand)</li>
<li>Salt and Pepper to taste (milled)</li>
</ul>
<p>Finishing:</p>
<ul>
<li>40g of Caviar</li>
<li>8 slices of Bread (toasted)</li>
<li>4 Gold Leaves</li>
</ul>

<p style="text-align: justify;">1. In a bowl, add 1 egg yolk, 20g of Dijon Mustard and 20g of Ketchup. Add Salt and Pepper from the mill to taste. Whisk the mixture consistently while adding 35g of Grape-Seed Oil into the bowl slowly. Add a few drops of Worcester sauce and continue to whisk with a consistent speed.</p>
<p>2. Measure and put aside 40g of the mixture obtained in Step 1 for the next step.</p>
<p style="text-align: justify;">3. In another bowl that sits in another bowl filled with ice, add 120g of finely chopped Salmon bits, 10g finely chopped small white Onions, 5g of finely chopped Capers, 2 pinches of finely chopped Shiso sprouts, 10g of Tobiko eggs, and 40g of the sauce prepared in Step 2. Mix everything together gently with a fork and add salt and pepper to taste.</p>

<p style="text-align: justify;">4. Fill a circular mould of diameter 5cm with a spoonful (approximately 35g) of the Salmon Tartare mixture in Step 3 and top it with a teaspoon (approximately 10g) of caviar right in the middle.</p>

The restaurants are either too expensive, or the food just isn&#8217;t good altogether. Sometimes, they are not family-friendly, and kids have nothing suitable to eat. But being here in Singapore means we do not have to worry about all that, because we have trusty establishments to always bring the bests to us.</p>

Managed by Deliciae Hospitality Management in partnership with Resorts World Sentosa, this 76-seat outlet sits in the heart of the Integrated Resort.</p>
<p style="text-align: justify;">Dishing out quality South American food, PISCO resembles a carnival &#8211; the happy colours of the interior and furnishing make it a joy to dine at, and has an extensive menu that is sure to whet everyone&#8217;s appetite. Here are some of their signatures, and our favourites from the menu.</p>

<p style="text-align: justify;">PISCO features traditional dishes from Peru, Chile, and other countries in the South American continent, and the menu is divided into several categories: Bocadillos (homemade light snacks), Ceviches, Los Pinchos (grilled skewers), A La Parrilla (the grill), and Postres (desserts). In short, expect a good mix of dishes with a melange of textures, colours and flavours influenced by the Native American cuisine.</p>
<p style="text-align: justify;">With so many dishes on PISCO&#8217;s menu, you should certainly pace yourself so that you can try a bit of everything.</p>
<p style="text-align: justify;">Start off with snacks like Nachos (S$11) with spicy guacamole, and Empanadas (S$14) &#8211; minced beef in corn dough parcels. We would also suggest going for the Quesadillas (S$9.50 for 2 pcs), tortilla of manchego cheese that is simply done, and a great way to kick start your meal. Oh, if you are up for trying something different, go for the Arepas Venzolanas (S$13 &#8211; S$15) &#8211; Venezuelan sandwiches made of corn flat bread filled with toppings like shredded beef, black beans and corn.</p>

Pisco is the national drink for Peruvians, and with this, the drinks to order at PISCO is its variety of pisco cocktails &#8211; like Cocoloco Flip, Negroni Pisco, and the iconic Pisco Sour &#8211; which gives the restaurant its name. Besides pisco cocktails, the bar also offers delicious daiquiris, margaritas and mojitos in exhilarating variations. On Thursday to Saturday nights, you can enjoy the cocktails while listening to music from a live band.</p>

<p style="text-align: justify;">Ceviches, for the uninitiated, are chilled seafood dishes. They are hugely popular, and is considered one of the staples in South American cuisine. Made from raw fish marinated in a tangy citrus juice, and spiced with chilli peppers, ceviches are as appetising as they look. PISCO offers six different variations; each with something to offer.</p>
<p style="text-align: justify;">Amongst the ones that we have tried, we love the Gambas (S$13) &#8211; prawns dunked with mixed citrus fruits- and the result is a refreshing and tantalising combination of freshness and tanginess. The other noteworthy ceviche is Conchas Borrachas (S$15) &#8211; sea scallops drowned with Pisco and passionfruit sauce. This is another great example of how a simple dish done well can be so addictive. Octopus lovers must not miss out on the Pulpo (S$13) &#8211; octopus in olive oil and capers sauce.</p>

<p style="text-align: justify;">Served with three sauces &#8211; mint salsa, salsa criolla, and amarillo chili &#8211; the grilled kebabs is the star of PISCO, and a meal here would not be complete without at least a serving of these perfectly grilled meat that come hanging gloriously on shiny metal skewers.</p>
<p style="text-align: justify;">The meat options include Chicken Thigh (S$13), Pork Belly (S$14), Lamb Shoulder (S$18), and Beef Ribeye (S$23). There are also seafood choices such as Squid (S$15), Salmon (S$16), Seabass (S$17), and Octopus (S$23). The easiest way is to go for a combo (S$45++) &#8211; which gives you one meat, one seafood, and one vegetarian kebab.</p>
<p style="text-align: justify;">The Chicken Thigh was succulent and juicy, and the Pork Belly proved to be even better. We were also impressed by how the Salmon was grilled to a perfect texture with the fish’s moisture retained. But the limelight was stolen by the Beef Ribeye &#8211; well-marinated and every bite tasted like heaven.</p>

<p style="text-align: justify;">If you are with a big group, order the mains from the grill. Grilled Ribeye Steak (S$39), Whole Red Snapper (S$30) cooked in banana leaves, and Grilled Lamb Chop (S$24) are some satisfying options to fill your tummies.</p>

<p style="text-align: justify;">To complete your meal, well, it has got to be desserts. And while the list may not be longer than your typical algebra equation, every one weighs a significant impact. If there could only be one pick, we’d say go for the Churros (S$9). Fans of Sabio Spanish Tapas Bar will be delighted to know that this is the exact same recipe, the legendary recipe that we might just proclaim it to be the best in Singapore.</p>

It sounds more than simple and less than impressive, but it ticked all the right boxes. Else, the adventurous ones can try the Spicy Rice Pudding (S$9), which gives your palate a punch with its dimensional flavours.</p>
