<p style="text-align: justify;">Kicking off your Christmas feast is two hearty starters—the Chicken Liver &amp; Brandy Pate (S$18++) and the oh-so-comforting French Onion Soup (S$16++).</p>
<p style="text-align: justify;">Boasting a deep, minerally flavour with an undertone of brandy, the chicken liver pate is best eaten when smeared over a piece of crispy rye bread. The gherkins that come served along with it provide a sharp acidity that does well to cut through the intense richness of the dish.</p>
<p style="text-align: justify;">Redolent of Christmas time comfort, the French Onion Soup (S$16++) comes served with crispy croutons and is topped with a generous helping of melty gruyere cheese—if this is not the epitome of soul-satisfying, we don&#8217;t know what is.</p>

<p style="text-align: justify;">Slow-braised in a heavily fortified stock comprising port wine and a beef stock, everyone at the table was full of praises for this meat dish. The reduced port jus gave the dish a rather nice tang and the turnips were cooked to tender perfection.</p>

<p style="text-align: justify;">Once esteemed as a method of preservation, submerging and cooking a duck in its own fat ensures a meltingly tender, moist, and extremely flavorful piece of meat. At mezza9, the Confit Duck Leg (S$28++) is prepared the traditional way with the exception of a puy lentil stew of which the crispy leg sits atop of.</p>
<p style="text-align: justify;">Cooked low and slow in its own rendered fat and then hard-seared in a screaming hot skillet, the duck leg was crispy beyond belief. The candied orange and the spiced lentil stew provided a wonderful contrast to the gaminess of the duck.</p>

<p style="text-align: justify;">But over at mezza9 Chef Martin has decided to keep theirs simple and classy; that is just how we like ours. Every detail is well thought of &#8211; from the freshness of the vegetables and preparing every sauce and dressing in-house daily, to the use of only sustainable raw fish in the dish.</p>

The portion is huge, but it will come in two different sizes to suit your needs. It is also available as part of the set lunch, in a single person portion.</p>

<p style="text-align: justify;">A portion for two persons is S$52++ and a portion for 4 persons is S$88++. However, if you do not want to fill up on this, we reckon that the smaller size can fill 4 to 6 people and the bigger portion can fill up to 8 to 10 people.</p>
<p style="text-align: justify;">mezza9 has always been all for sustainable fishing and the entire Grand Hyatt Singapore is almost fully using sustainable, hormone-free food sources. And you might be concerned about eating raw fish, but Chef Martin promises his supplies are from sustainable sources that do not harm the ocean, and that they are saltwater fish imported fresh daily; nothing is kept overnight for bacteria to breed.</p>
<p style="text-align: justify;">For this year&#8217;s yu sheng, the kitchen is using Norwegian Atlantic salmon, Maldivian skipjack tuna and Hokkaido scallops &#8211; they all come from trusted and sustainable sources.</p>

<p style="text-align: justify;">We were wowed by the selection; they are unique, yet still boasting very traditional Chinese flavours that all will enjoy. The first dish we had was the wok-fried thin rice noodles with Scottish brown crab meat and roe in a chilli gravy (S$28++).</p>

<p style="text-align: justify;">We could not put our forks down and we slurped up every last bit of the tasty sauce and noodles. The crab meat and roe come in an extremely generous portion. This could well be eaten by just one person, but we suggest you share it with your partner so that you can still have a taste of the other dishes.</p>

<p style="text-align: justify;">Then, there was this Braised Duckling (S$48++) that we tried and also fell in love with. A duckling is used, and like young chicken, the meat of the duckling is most definitely tender. Look at how glistening and beautiful this dish looks!</p>
<p style="text-align: justify;"><span style="color: #333333; font-style: normal; font-weight: 300; line-height: 24.375px;">Fork tender duckling, with the aroma of Chinese wine invoking a sense of comfort inside us &#8211; a truly stellar dish, and one that is befitting of lunar indulgence. </span>The old ginger braised whole duckling with red dates, flower mushrooms and Chinese wine is intended for two, but once again, the portion is really huge and it is in fact good to share among 4 people.</p>

<p style="text-align: justify;">We almost wrote this dish off as it paled in comparison to the other dishes in terms of visual appeal, but boy were we sooo wrong! The steamed South Patagonian tooth fish fillet with black fungus, mushrooms, wolf berries and Chinese herbs (S$42++) turned out to be the best dish of the day!</p>

<p style="text-align: justify;">The white fish so tender and smooth, with a texture akin to cod fish, and it was everything we wanted in a Chinese-style fish. As we grew up enjoying steamed fish with Chinese Herbs, this dish got to us in the most endearing way. The addition of black fungus and mushrooms also added a nice crunch to every bite.</p>

<p style="text-align: justify;">The last main to share but nothing short of less is the claypot braised sea cucumber with pig tendons, fish maw, tiger prawns and conpoy (S$48++ for small, S$98++ for large). Well, it is basically all the premium ingredients stewed in a glorious sauce. Totally loved the crunchy sea cucumber, and quality fish maw is always heavenly.</p>
<p style="text-align: justify;">This claypot is surely a &#8220;splurge dish&#8221; as it has all the goodies inside but, hey it&#8217;s Chinese New Year! With a new year, comes a fresh start. What better way to start the new year than with a luxurious meal, right?</p>

Scottish Brown Crab and Spencer Gulf Wild King Prawns awaited us, and boy, did we enjoy the sweet-tasting Fin de Claire oysters that were so fresh, it felt like we were having them straight out of the ocean.</p>

<p style="text-align: justify;">Our eyes popped when we spotted the biggest block of brie cheese. But the best part of the shrine? The Shropshire Blue Cheese. The full-bodied, creamy and rich flavours really drove us crazy.</p>
<p style="text-align: justify;">If you are not that big a fan of blue cheese, we suggest you go for the Brie De Meaux. It is salty, buttery, rich and so aromatic. Other cheeses available include Grana Padano and Mimolette.</p>

<p style="text-align: justify;">Something that we&#8217;ve always loved about mezza9 is their policy of using only sustainable sources. Over-fishing, deep-sea trawling and disastrous methods of fishing are some of the worst things that many fishermen do, and this results in the wipe-out of (at times) entire species, destroying habitats of all of these fishes and sea creatures in the meanwhile.</p>
<p style="text-align: justify;">But by using only sustainable seafood, mezza9 is definitely doing their part for our beloved marine world and this gives us another reason to love them.</p>
<p style="text-align: justify;">They offer a selection of sashimi of sustainable fishes that includes the popular salmon, tuna, amberjack and more.</p>

<p style="text-align: justify;">Western roasts are also available in this section. The wide range features meats such as Slow-Roasted Apricot and Prune stuffed Pork Loin, and Oven-Roasted Black Angus Short Loin. However, the star of the day was the Spit-roasted Whole Welsh Lamb.</p>

<p style="text-align: justify;">Desserts at mezza9 are delectable, and they look and taste exquisite. This counter is insane, and we swear the chefs are on a quest to turn us fat!</p>
<p style="text-align: justify;">Blame it on our low resistance, but we always pig out more than we should here. Our favourite without a doubt? Their tiramisu. We can never ever find anything negative to say about it, except that it comes in tiny portions that just weren&#8217;t enough to satisfy our cravings.</p>
<p style="text-align: justify;">An unexpected star of the show was the sticky date pudding that came with gooey caramel sauce, and tasted even better with a generous sprinkle of sea salt on top.</p>

Topped with sustainable New Zealand red snapper and king salmon, the traditional dish is made even special with customisable add-ons &#8211; chilled Alaskan king crab (S$26++), sliced Hokkaido scallop (S$38++), and sliced Australian abalone (S$40++).</p>

Think of a modern interpretation of the classic Cantonese favourite, and prepared with scallops, Spencer Gulf wild king prawns and abalone. Such a commendable rendition, one serving of this flavoursome soup is hardly enough!</p>

More popularly used in Thai cooking and Australian cuisine, the barramundis here at mezza9 are interpreted with similar influences, and the result is a smooth contrast of the mildly-sweet fish and a lightly spicy sauce.</p>

Conveniently located in town, it is a rustic and homely outlet that dishes out nothing but the most authentic Italian dishes.</p>
<p style="text-align: justify;">Since joining Pete&#8217;s Place, <a href="http://www.singapore.grand.hyattrestaurants.com/petesplace/personality-en.html?src=prop_nplk_ladyironchef_post_PetesPlacealacarte_020215">Chef Andrea Bontempi</a> has been working to include elements from Northern Italy &#8211; from the high plateau of Piedmont to the coastal cities of Livorno and Genoa, and his home in Brescia &#8211; into the new a la carte menu.</p>
<p style="text-align: justify;">Among the new additions to the menu, we enjoyed the Burrata e Caponata (S$22). Any good Italian worth its salt will have a good burrata on its menu, and Pete&#8217;s Place is no exception. Drizzled with aged balsamic vinegar, the burrata sat atop an eggplant caponata.</p>

<p style="text-align: justify;">The pastas at Pete&#8217;s Place are freshly handmade from scratch, and there are twelve options on the menu to choose from. The Ravioli Astice (S$36) is a delicious combination of lobster ravioli with burrata cheese and saffron zucchini sauce, but the standout dish for us was definitely the Gamberi e Nero di Seppia (S$29) &#8211; squid ink linguine with seared sustainable prawns and calamari.</p>
<p style="text-align: justify;">The Cacciucco alla Livornese (S$34) brought back memories from our trip to Livorno last year. Originated from the coastal city in Tuscany, this seafood stew is a classic dish that is popularly enjoyed by Italian fishermen. Traditionally, fishermen used what was left over from their catch to make the stew. What makes Pete&#8217;s Place&#8217;s rendition different is the use of the freshest seafood &#8211; a melting pot of squid, baby octopus, prawns, sustainable barramundi, cod, white bait, mussels and clams.</p>
<p style="text-align: justify;">La Cotoletta alla Milanese (S$45) is a Milanese speciality, and something that we always order whenever we are at Milan. Very few places in Singapore serve this dish, so you could imagine our elation when we saw it on Pete&#8217;s Place new menu. The breaded veal chop is accompanied by a simple herb salad and tomato confit.</p>
<p style="text-align: justify;">For desserts, you must get our all-time favourite Tiramisu (S$12) but make sure you save room for the Bonnet Astigiana (S$10). We loved how Chef Andrea has given the traditional Amaretti Chocolate Pudding a refreshing touch by adding orange blossom and basil cress.</p>

How about half a dozen baked oysters Florentine (S$40)? Doused with a copious amount of cheese and spinach, the baked oysters Florentine make a comeback this Christmas because the chefs know how much regulars miss this dish!</p>

<p style="text-align: justify;">The main courses will get you excited. The highlight, without a doubt, is the 500g Australian Grass Fed Beef Tenderloin &#8220;Chateaubriand&#8221; (S$136). Served with a creamy morel mushroom sauce that complements the meat perfectly, and accompanied by the sweetest wood-roasted carrots, parsnips and potato dumplings, the steak we sampled was spot-on pink and ticked all the right boxes. It was glorious and, wait, what&#8217;s better than heavenly?</p>
<p style="text-align: justify;">Filled with apple and chestnut stuffing, the slow-roasted Turkey Breast &amp; Leg (S$46) with cranberry sauce is for those who need their yearly festive fix, because what is Christmas without some turkey and cranberry, right?</p>
<p style="text-align: justify;">If you are feeling a little adventurous, then try Executive Sous chef Martin Scholz&#8217;s 18-hour Slow-braised Wild Boar Stew (S$48) with chanterelle mushrooms, root vegetables and pancetta. A very flavourful option, and all you are lacking of is a glass of strong-bodied red wine to complement.</p>

<p style="text-align: justify;">And no one leaves mezza9 without some sugar for the soul. We love the Flourless Chocolate Yule Log (S$16) with brandied cherry ice cream, and the Fennel with Pollen Ice Cream topped with Honeyed Couscous (S$16) will send you to a sugar high.</p>

It is always lovely to dine at a familiar outlet, and even better when the chefs are always pushing their boundaries to introduce new creations to excite your palate.</p>
<p style="text-align: justify;">On top of the introduction of new set lunches, <a href="http://www.singapore.grand.hyattrestaurants.com/mezza9/?src=prop_nplk_ladyironchef_mezza9_04112014">mezza9</a> also wows its crowd once again with many new ala carte dishes, all of which are true to their philosophy of dishing out earnest cuisine with sustainable ingredients to please the soul.</p>
<p style="text-align: justify;">For so many years, <a href="http://www.singapore.grand.hyattrestaurants.com/mezza9/?src=prop_nplk_ladyironchef_mezza9_04112014">mezza9</a> has been a perennial favourite, and with this wave of new introductions, it gives us many more reasons to go back. Regulars will share our joy, but if you aren&#8217;t already a fan, here are some temptations:</p>

<p style="text-align: justify;">To kickstart, we shall start with the grand Lobster Set (S$50), a comforting indulgence of wok-fried chilli lobster with Chinese noodles accompanied by Steamed Prawn Dumpling and Seaweed Soup. Nothing too fanciful, nothing too complicated; just good, hearty Chinese food prepared in simple ways that do not mask the pureness of the premium ingredient.</p>
<p style="text-align: justify;"><img class="alignnone size-full wp-image-42890" alt="Green Curry Chicken" src="http://www.ladyironchef.com/wp-content/uploads/2014/10/Green-Curry-Chicken.jpg" width="710" height="458" /></p>
<p style="text-align: justify;">And because we are such fans of the commendable Thai chef of mezza9 and how he has won the hearts of many loyal diners with his culinary skills, we were particularly excited about what he had to impress this time round. Indeed, his Thai Green Chicken Curry Set (S$35) lived up to our expectations. A superb rendition of our favourite Thai Green Chicken Curry is really what you need for lunch, alongside homemade crispy Thai Fish Cakes and a sweet ending of Thai Jelly in Coconut Cream.</p>
<p style="text-align: justify;">Other set lunches include a Lamb Set that comes with a main of shepherd&#8217;s pie, a healthy set of minestrone and salad and char-grilled sustainable New Zealand salmon, and of course, a representative from everyone&#8217;s favourite Japanese kitchen &#8211; the yakitori set with seaweed salad and daily sashimi.</p>
<p style="text-align: justify;"><img class="alignnone size-full wp-image-42891" alt="mezza9 kurobuta pork" src="http://www.ladyironchef.com/wp-content/uploads/2014/10/mezza9-kurobuta-pork.jpg" width="710" height="473" /></p>
<p style="text-align: justify;">Among the ala carte dishes, we recommend the Chicken Liver Pate plated with pickled chaneterelle mushrooms, onion confit and toasted brioche; a 300g Kurobuta Pork Belly perfectly matched with granny smith apple stew, as well as the Nicoise Salad.</p>
<p style="text-align: justify;">The Nicoise Salad, in particular, deserves a special mention. While it is not an option that particularly excites the majority, mezza9&#8242;s Nicoise Salad is the best that we have ever sampled in Singapore. What we love so strongly about <a href="http://www.singapore.grand.hyattrestaurants.com/mezza9/?src=prop_nplk_ladyironchef_mezza9_04112014">mezza9</a> is its emphasis on quality &#8211; and in particular for the salad, the use of seared sustainable yellow fin tuna is a brilliant way to elevate the dish&#8217;s sweetness. Coupled with free range eggs, the freshest vine tomatoes in pretty reds and yellows, and leafy greens, this is one filling portion that makes an ideal lunch. We foresee many ladies falling in love.</p>
<p style="text-align: justify;">And nobody, we repeat, nobody should ever leave <a href="http://www.singapore.grand.hyattrestaurants.com/mezza9/?src=prop_nplk_ladyironchef_mezza9_04112014">mezza9</a> without having the Dessert Platter (S$32). Grand Marnier soufflé, Grand Cru Chocolate Mousse with warm chocolate sauce, pavlova, three scoops of homemade gelato and the stunning Flower pot dessert that comes with chocolate soil, mint leaves, flowers berries and caramel sea salt ice cream. Who says you can&#8217;t have the best of all worlds?</p>

<p style="text-align: justify;"><strong>The job of a doorman</strong> is not the most glamourous, yet it is an important component as the frontline staffs are the ones who have the first point of contact with guests. They can make or break an impression. But what is it really like in that position?</p>
<p style="text-align: justify;">We talked to Mr. Jais Adbul Rahman – who has been working in <a href="http://www.ladyironchef.com/tag/grand-hyatt-singapore/">Grand Hyatt Singapore </a>since 1972, and is currently the hotel’s lobby manager – to find out more about the daily job scope of a doorman, the challenges that they face in the line of work, and some of the things that you never knew about being a hotel doorman.</p>

<p><span style="font-size: large;">THE DAILY JOB SCOPE OF A DOORMAN</span></p>
<p style="text-align: justify;">At Grand Hyatt Singapore, there are usually two doormen on duty at one shift, and this is simply to maintain their presence at the doorway so that every guest feels welcomed.</p>
<p style="text-align: justify;">When the guests arrive, the doorman has to open the door of the car and assist with carrying the luggage. Besides acting as traffic controller to ensure that there is no congestion on the road outside of the hotel, the doorman also has to help hail cabs for guests who are leaving.</p>

<p><span style="font-size: large;">THINGS THAT YOU NEVER KNEW ABOUT BEING A DOORMAN</span></p>
<p style="text-align: justify;">It is really not as simple as opening and closing doors, like most of us would have thought so. There are other duties like carrying the countless luggage and assisting every guest to the hotel lobby when the guest service officers (GSO) are occupied with other guests.</p>
<p style="text-align: justify;">Another discovery we made is that doorman double up as the hotel’s concierge, too. Thus, having general knowledge of the property is very essential because guests will always ask them for recommendations on where to go, as well as direction to a particular place. They are like your mini encyclopaedia and guidebook, so that is quite a bit of challenge on top of their primary responsibility.</p>
<p style="text-align: justify;">A doorman also has to go the extra mile for guests. It can be as basic as helping guests run simple errands in the area like buying a phone card, or sheltering guests to the nearest bus stop or building when it is raining.</p>

<p style="text-align: justify;">According to Mr. Rahman, some of the traits of a good doorman include being friendly, helpful and tactful when handling different situations.</p>
<p style="text-align: justify;">With NTUC’s Progressive Wage Model, a doorman’s job can be turned into a three-dimensional career with increased skills, wages, career opportunities and productivity. Possible career paths for doorman include bell captain, concierge, chief concierge, and duty manager. For those of you who do not know, here’s a <a href="https://www.youtube.com/watch?v=vMQv_V8fync">video which explains the Progressive Wage Model</a> better.</p>
<p style="text-align: justify;"><a href="http://www.ladyironchef.com/2014/07/role-hotel-housekeeper/">Like the hotel housekeepers</a>, promotion depends on one&#8217;s capability and initiative on helping the guests to ensure that they have a pleasant experience at the hotel. Training and courses &#8211; like IT training and other upgrading skills &#8211; are offered to outstanding potentials.</p>
<p style="text-align: justify;">The next time you ask for help or directions from the hotel doorman, thank him genuinely and I am sure it will make his day.</p>

<p style="text-align: justify;">As soon as we stepped in to the charming restaurant located at the basement of <a href="http://www.ladyironchef.com/tag/grand-hyatt-singapore/">Grand Hyatt Singapore</a>, we knew it was going to be a good meal. Checkered table cloth, brick walls, wine cellars, and an impressive buffet spread welcomed us. It did not take us long to fall in love with this hidden gem in town that radiates an undeniable rustic enchantment.</p>

<p style="text-align: justify;">Your feast begins at the fresh seafood section &#8211; dig in to crabs, mussels, prawns, scallops and freshly shucked oysters. Equally enticing was the cold cuts station, where we indulged in salamis, ham and endless servings of freshly shaved prosciutto with rock melon. The mains include chickan cacciatore, deep fried calamari, braised beef cheeks, and the very addictive squid ink gnocchi. Pasta lovers who cannot do without your first course will also be treated to freshly prepared pasta-of-the-day.</p>
<p style="text-align: justify;">Wait, we haven’t mentioned that there are also freshly baked pizzas from the wood-fired oven, have we? But save some tummy space for the carving station where roasted beef sirloin and lamb leg await us. For something less heavy, there is also an oven baked whole barramundi.</p>
<p style="text-align: justify;">We were also blown away by the dessert offerings at Pete’s Place. Chocolate pistachio cake, black forest cake, cheese cake, almond biscotti, mango mousse; Viva la dolce vita! But the tiramisu completely stole the show. It was one of the better tiramisu that we have had in Singapore, and we would come back to Pete’s Place just for this. The rocky road was also exceptional. The Sunday brunch also comes with a selection of quality homemade Italian gelato – quite the perfect ending to a marvellous Sunday.</p>

<p style="text-align: justify;">Brewing in the soup pots are the traditional Beef Goulash that is ever heart-warming, and a highly addictive Butternut Pumpkin Soup that Chef Martin had specially reinvented with his inclusion of orange, pernod and pumpkin seeds. We cannot decide which one we prefer, but we&#8217;d suggest downing one bowl each!</p>
