Famous Argentinian Restaurant and Bar, Brasero Atlántico and Florería Atlántico will be having a three-month pop-up at Four Seasons Hotel Singapore.

From 1 Aug 2023, award-winning Renato “Tato” Giovannoni (widely recognised as one of the top 10 bartenders in the world), and culinary and hospitality maestro Alex Resnik will be bringing a taste of Argentina to Singapore by introducing their signature food and beverage during the three-month kitchen and bar takeover.

If you are in the mood for something different, don’t miss out on this chance to experience authentic Argentinian cuisine in Singapore by having a meal at this pop-up at Four Seasons Hotel Singapore.

This captivating South American brasserie pop-up at One-Ninety Restaurant and One-Ninety Bar, spanning from Buenos Aires to Singapore, will take customers on a journey to the energetic streets of Argentina.

Brasero Atlántico presents an à la carte dinner menu meticulously crafted by Alex Resnik and Chef Ryan Turner as well as an exclusive seven-course Chef’s Table dining encounter (priced at S$168 per individual). This culinary journey highlights the varied tastes and time-honoured methods that contribute to the undeniable allure of Argentinian gastronomy.

From classic Argentinian asado barbecue to street food favourite empanadas, the menu at Brasero Atlántico’s pop-up in Singapore is simple and concise with a variety of starters as well as mains cooked a las brasas (on the grill).

Our favourite starter has got to be the Aged Provoleta Cheese (S$28). This seemingly simple dish may look unassuming, but it was one of the best-tasting cheeses we’ve ever had.

The cheese is dry-aged for seven days in-house before being baked in the oven. It has just the right amount of cheese pull, and the taste is out of the world. You get a mix of mild and salty, heavy cheeses all in one bite.

The mains from the grill include Tenderloin, Ribeye, Pork Loin, and Whole Baby Spring Chicken. If you are dining in a bigger group, you can go for the T-Bone Steak (S$158, serves 2 and also comes with 2 sides) and order a few dishes to share.

The must-try dish is definitely the Frog Legs “A la Provenzal” featuring frog legs which are air-flown from France. The tender frog legs are meticulously cooked, and are light in flavour, and elevated by an addictive rich and flavourful white wine garlic butter sauce.

Even the accompanying potatoes are not just an accompaniment; they are crispy on the inside, and so warm and soft on the inside with a slightly earthy taste.

On the sweets side, we absolutely loved the Valrhona chocolate lava cake. Argentinian tea leaves are roasted then used to make the filling. Cut into the chocolate cake, and the tea creme will come flowing out. It’s like matcha, but Argentinian style. This was divine, and best eaten hot.

For those with a passion for exploring cocktails around the world, Florería Atlántico is recognized as one of the most thrilling bars in South America. Notably, Florería secured the 18th position in the previous year’s World’s 50 Best Bars ranking.

Cocktail highlights include Florería Atlántico’s classics such as the Negroni Balestrini (S$27), the classic Italian aperitif made with gin, Campari, Amaro Averna, eucalyptus, and seawater, as well as the El Dorado (S$29), a refreshing and fruity mix of Cachaça, Manifest, house-made Mate Tereré, sugar cane juice and tropical fruits.

The ladies will love Saint Marthe (S$26)—a sweet cocktail made of rosé wine with Lavender and Richard syrup.

From the Peranakan-themed façade and minimalist luxury, down to the lush pillow menu, a stay with InterContinental Singapore is akin to that of spending time outside of home that you can still call home.

Jiang-Nan Chun at Four Seasons is known for serving classic Cantonese cuisine in a luxurious setting, and while I’d been meaning to venture there for a meal, it took me until recently to do so.

The new Chinese executive Chef Alan Chan used to be from Crystal Jade Dining IN, and since joining Jiang-Nan Chun, he has introduced a new menu. It is evident that he is adamant to make his mark on the restaurant. The food that we had were well-executed using traditional cooking techniques, with a slightly modern twist.

We started our meal in the best possible way, with a gorgeous Peking duck ($72 for whole duck) enfolded within an incredibly thin pancake wrap made of spinach.

The roasted platter – comprising roasted duck ($24), crispy pork belly ($16) and char siew ($20) – was also delightful, and though the char siew was only decent, the roasted pork belly and duck rocked my world.

Next up, we had a dim sum platter of steamed pork dumpling with baby abalone; steamed scallop and cod with truffle oil; baked flaky pork pastry with bacon; steamed pork dumpling in spicy vinegar sauce; custard bun with salted egg yolk; steamed lobster and shrimp dumpling; steamed mushroom vegetable dumpling; and deep-fried pastry with salted egg and curry powder.

While everything was absolutely perfectly prepared, my favourite was without a doubt, the custard buns with salted egg yolk. Jiang-Nan Chun’s rendition is one of the better ones that I’ve had, and I definitely adding it into my list of best custard buns in Singapore.

The other dim sum that caught my attention was the deep-fried pastry with salted egg, mushroom, and curry powder. Although it was not the best dim sum on the table, I thought that the use of curry powder was interesting.

For main courses, we had simmered fillet of star garoupa with beancurd skin, wok-fried lobster with chorizo and eggplant, a double-boiled sakura chicken soup and a braised beef cheek with red vinaigrette, topped with gold foil.

By the time the crispy noodles with truffle shavings was served, I was stuffed to the brim, and regrettably, I only took a few bites.

I am sure I don’t have to explain much, but in case you are still wondering, the meal that we had at Jiang-Nan Chun was excellent, and I think you should definitely go there soon for a nice dinner.

Words by Serene Chai, photos by ladyironchef.

It is no secret that Singaporeans love to eat. However, the delicious irony is that we complain whenever we are short-changed by food that is lacking in quality or quantity. Hence, many of us are making more informed choices when it comes to forking out that extra bit of dough to enjoy a sumptuous spread.

The best thing you can do for yourself on a slow and lazy Sunday afternoon, is to have a lovely brunch buffet at One-Ninety, Four Seasons Singapore.

In my opinion, there are various factors that contribute to my overall enjoyment at a buffet: Food quality, variety of food choices, dining ambience, and last but not least, good service.

As soon as we entered the restaurant in Four Seasons Singapore, several service staff greeted us warmly and showed us to our table. The attentiveness and promptness in service delivery at the restaurant are noteworthy too. I appreciate how the staff attended to our requests in a heartbeat, and appeared to enjoy their job as they were constantly wearing a smile on their face.

The dining ambience is perfect if you are looking for a temporary escape from the hustle and bustle of city life. Its earthly theme includes wooden flooring and dim lighting, which creates a cosy and relaxing atmosphere for families and couples alike. One-Ninety also has a very nice al fresco area where you can enjoy brunch at peace.

We kick started our meal with a glass of freshly squeezed juice. As silly as this might come across, I was really impressed with their watermelon juice. Without a doubt, it was the most delicious glass of watermelon juice I have ever had – fresh and natural no less.

One-Ninety used to serve champagne brunch on Sunday, but they have since changed the concept. Instead of paying a fixed price, they have introduced a semi-buffet where you pay according to the main course that you order. Prices range from $88++ for the brioche French toast, to $98++ for the braised veal cheek, and $118++ for the wood-roasted lobster and prawn.

The buffet spread is still the same. Before ordering the main course, you can enjoy a scrumptious spread at the antipasto section, the salad bar, seafood counter, Japanese counter, cold cut section, pasta station, Chinese BBQ station, dim sum station, and dessert buffet.

If you are a fan of cured meat, olives, and salads, you’ll be spoilt for choice at the antipasto section. I particularly enjoyed the red pepper stuffed with feta cheese and several of their seafood salads.

We also had fun tasting dishes like peking duck, green mussels, king scallops, sushi, and sashimi. After repeating the process for two rounds, it was finally time for desserts.

From the beginning, we could not wait to get our hands on the desserts when we checked out the desserts bar. Thus, when it was time to end our meal on a sweet note, we showed no mercy! I would recommend the mini fruit tarts, crème brulee, and passionfruit panna cotta, which I particularly savoured until the very last bite.

Cheese lovers will not be disappointed as the buffet offers an extensive variety of cheeses, which you can pair with crackers, apricots, grapes or walnuts.

All in all, the Sunday brunch at One-Ninety was a delectable and enjoyable brunch experience for me with yummy treats paired with good company.
