Other cured meat options to look forward to is the mortadella ham, smoked duck, beef salami and turkey ham which pair just as well with a bubbly or even a regular glass of wine. All their charcuterie are sliced on a regular basis to ensure utmost freshness.

THE FRESHEST SEAFOOD ON ICE WITH GIANT PRAWNS AND SNOW CRABS

If there was any way to accurately judge the standard of a buffet restaurant, perhaps looking at how fresh their live seafood offerings are would be one of them—and Food Exchange is definitely not one to disappoint.

Tuck into a sizeable yet manageable variety of crustaceans and shellfish from crayfish, snow crabs, mussels to MASSIVE tiger prawns as big as your face. Savour them alongside the many sauce options from the classic cocktail sauce to the piquant wasabi mayonnaise.

LIVE MEAT CARVING STATION

For the religious meat eaters, head on over to the live meat carving station. Simply approach one of the chefs behind the counter who will gladly carve up a slice or two of your preferred meat(s).

Be blown away by the incredibly moist and succulent roast chicken that comes served with a hearty chicken jus or let your senses take flight with the tender roast beef and pork neck that ooze flavour as well as a gorgeously pink interior.

FOIE-GRAS, EGG & PASTA LIVE STATION

Over at the live cooking stations, you can get a full array of enticing à la minute options from pasta, risotto and eggs; but our favourite was the pan-seared foie-gras prepared à la minute. Crispy on the outside but luxurious and fatty in the middle, this was the ultimate indulgence that had us going back for seconds and even thirds.

Served alongside a sweet and tangy berry compote and balsamic reduction, the rich goose liver was balanced out very nicely.

DIY BLOODY MARY

No brunch is ever truly complete without a Bloody Mary cocktail. This iconic brunch time aperitif is famed for its immensely savoury qualities that do well to stimulate the appetite and over at Food Exchange, they even have their own DIY Bloody Mary counter.

For the uninitiated, here is our pro tip: For a traditional Bloody Mary, you’re always going to start with a shot or two of good quality vodka followed a dash of Worcestershire sauce, salt, pepper, tomato juice as well as a tiny drop of tabasco for some heat. Lastly, squeeze a few drops of lime or lemon juice to brighten the drink up.

We will begin with the infinity pool that sits on the seventh floor. Who can resist taking a dip here?! This 25-metre infinity pool overlooks Alexandra neighbourhood, including the iconic building The Interlace and endless greenery of the Southern Ridges. It is one respite that you’d need from all the hustle and bustle, and what makes the pool even better is the swim-up bar. Enjoy some cocktails or a glass of fresh juice in the calming waters; sounds like life, ain’t it?

And then, we have the bar. You would never expect to find such a swanky open-concept bar in Alexandra, until Aqua Luna came along. This gem of Park Hotel Alexandra is quite the perfect spot for some after-work drinks, or if you simply want a non-crazy place to enjoy your drinks in the company of your precious ones.

Honestly, funky bars in the city centre are aplenty, but you have to settle with the crowd, and that is what we do not like. And that is also why Aqua Luna is for us, where we wind down with cocktails and a beautiful sunset.

The Carvery is the hotel’s only restaurant, but it suffices to feed every carnivore. Primarily a buffet restaurant that specializes in meat (you guessed that from its name, yes?), The Carvery offers a gastronomical experience with its different roasts and meats. It is a dream for meat lovers, and while we are sucker for seafood when it comes to buffet, we’d gladly trade them for this spread at The Carvery.

By the way, if you are there for dinner, they serve what is easily the best Yorkshire pudding in Singapore – you have to try it yourself!

Need some coffee? Head down to the lobby and you will be welcomed by the aroma of fresh brew from The Coffee Belt. This new kid in town is one sexy coffee place who is serious about its coffee.

Though minimalistic in appearance, the coffee packs a punch and the barista makes latte art for takeaways too! The pastries and sweets are such pleasers, particularly, the Valrhona dark chocolate cake is awesome – moist and decadent with melty chocolate bits within, and topped with sea salt to balance the sweetness.

And of course, you must be wondering about the rooms now. We stayed on the 19th floor, which is the highest of three Club Room levels; we are too spoilt by the convenience of a club room. The rooms and suites come in different configurations, but the similarity of them all lies in the spanking clean interior with contemporary touches. Two different views to pick from – city or pool. We’d pick the pool anytime.

All rooms come with a 42″ full HD Smart LED TV, and are equipped with wifi, so you can surf without worrying about chalking up your bills. Your basic needs are definitely met with pressed sheets, fresh towels, premium toiletries, and the other miscellaneous such as coffee and tea making facilities.

The strategic location makes it a refreshing alternative from the hotels in the city. Highly accessible via public transport with neighbouring shopping malls, food centres and offices, Park Hotel Alexandra is just minutes away from the city centre; you get the convenience, and you get the peace.

The scrumptious selection of bar food and premium cocktails will impress even the most discerning epicureans. The spanking new bar is partially encased by a glass-to-ceiling transparent windows, hence allowing one to simultaneously admire the picturesque surroundings whilst indulging in a meal.

Gone are the days where you can easily find a handcrafted cocktail under S$20. So imagine our surprise when we found out that Aqua Luna’s special cocktails and classics are all reasonably priced at S$18++ each! What a delightful steal! Each invigorating concoction is prepared with fresh herbs, fruits and vegetables, and don’t they just look gorgeous?

Signature must-tries include the Breezy Berries and Poire Basil. The former is a blend of mint, lychee liqueur, cherry bitters and Pisco, while the latter is a revitalising mix of Absolut Pear Vodka, basil, grapefruit bitters and zesty lime juice garnished with fresh pear slices.

Both cocktails are served in old-school silver metal tins and decorated with real fruits. These beverages are actually very potent and you will get the bang for your buck!

Another drink that you should try is their spiced cocktail Hot Melons (S$18++) – a brilliant Asian fusion invention inspired by the liqueur affogato.

Muddled with chilli padi, shaken with dark rum and served with a soursop sorbet, the cocktail is a unique sweet-and-spicy concoction. The spiciness have been underwhelmed by the ice-cream so you do not have to worry about having your tongue on fire!

Or you can also savour the classic margarita, martini and mojito with an additional unexpected twist of your choice. Spiced mojito or mojito infused with peach or mixed berries, what say you?

Similarly, you could have an apple or lychee martini instead of the traditional one. Last but not least, enjoy either a mango or mixed berry margarita – or stick to the good old classics. These enthralling classic tipples are priced at S$18++ each too.

Named after Aqua Luna’s location, this golden-hued cocktail creation – an infusion of Grand Marnier liqueur with flamed Rosemary, pineapple juices, white rum and dark rum – is served in a classy wine glass and a hit amongst both the ladies and gentlemen.

Aqua Luna keeps its entire menu extremely affordable. We were pleasantly surprised by how generously portioned and appetising the unassuming Battered Cauliflower (S$8++) was.

Each crispy fried batter contained an impossibly tender cauliflower and we love how it packed a punch with its hints of fragrant curry and onion. The addictive vegetarian dish is served with an irresistible cheesy béchamel dipping sauce on the side. Sinful as it may sound, we would return to Aqua Luna just for this, because diet can (sometimes) wait.

Sick of the ubiquitous truffle fries? Give their heavenly Truffle Polenta Fries (S$10++) a shot and you definitely will not regret wasting your calories on this amazing savoury treat. Well, for those who always tell us truffle fries are too mainstream for their liking, this would do the trick for you!

For the uninitiated, polenta is a type of thick cornmeal that is most commonly used in Central Europe It is consumed in other parts of the world such as South America and the Middle East, and they may be named differently and more commonly known as cornmeal.

For those who are keen to try something different, you will enjoy these delightful polenta fries that are dusted in parmesan cheese and served with a dollop of homemade truffle-infused mayonnaise dipping sauce.

Oysters fan, please join us in feasting with these freshly shucked Seasonal Oysters (1/2 doz – S$24++) served au natural with a classic mignonette. Can you imagine slurping them juicy oysters while swimming? Oh god, the life!

Those who do not fancy the exquisite oysters can still find other seafood nibbles, such as the A Pint of Prawns (S$14++) served with cocktail sauce, and A Pot of Mussels (S$18++) – blue mussels that have been cooked with Chardonnay.

Of course, the carnivores can join us in feasting on the decadent “Dirty” Steak (S$36++) which is grilled to medium-rare and charred in the wood-fired oven while sitting atop charcoal. It is served with anchovy butter and a pinch of sea salt.

How awesome does steak by the pool sound, right? We are all so used to steak in fine restaurants, and this experience at Aqua Luna sure is a fresh breath of air.

On to the flatbreads now, my friends. Essentially wood-fired pizzas served fresh from the oven, these bar snacks are actually very filling and enjoyable with some cocktails (but of course).

There are a total of five flavours to choose from – Crabmeat & Artichoke (S$24++), Margarita (S$18++), Beef & Chilli (S$20++), Tiger Prawn & Pesto (S$24++) and Chorizo & Onion (S$18++).

It is also worth mentioning that the breads have been painstakingly proofed for at least three hours, hence giving rise to a light and crispy crust. And they are made fresh daily!

When daylight wanes away and night-time takes over, Aqua Luna transforms from a tropical paradise into a dimly lit romantic bar; the latter is how we will always remember Aqua Luna to be, as when we first saw the bar in its full glory against the golden sunset.

You should, too, drop by during the evening for a spectacular sunset experience – watch the sun descend right before your eyes and witness the landscape transform into mesmerising city lights with a glass of signature cocktail in hand.
