<p style="text-align: justify;">Now, you must not skip the Indian cuisine station. It is one of the most popular stations at Edge, and the butter naan and rich curries are crowd pleasers.</p>
<p style="text-align: justify;">The team manning the Indian station are all experienced Indian chefs who have years of experience dealing with Indian cuisine, which hence explains the authenticity and standards.</p>

<p style="text-align: justify;">They fly back to Penang so very often to source for local ingredients, and to revisit their favourites back home so as to gain deeper understanding of their cuisine and roots; you can be assured that their cooking will be both authentic and made from the heart.</p>
<p style="text-align: justify;">We could definitely taste the heart and soul in every dish served.</p>

<p style="text-align: justify;">To be frank, our initial favouritism went towards the Penang Famous Char Koay Teow and for the fact that it is an award-winning dish by Chef Andy. Of course, we were not disappointed.</p>

<p style="text-align: justify;">The immediate taste of <em>wok hei</em> was prominent and well balanced. And the saltiness of the Chinese preserved sausage was equitable to the lighter blue crab lump meat that was generously tossed together with the noodles.</p>
<p style="text-align: justify;"><img class="alignnone size-full wp-image-90866" alt="Penang Prawn Noodles" src="http://www.ladyironchef.com/wp-content/uploads/2016/03/Penang-Prawn-Noodles.jpg" width="710" height="473" /></p>
<p style="text-align: justify;">We love a good bowl of Prawn Noodles. The broth of the one we had from the buffet was flavourful, and the evident robust taste is the essence of brewing the broth for many hours. Free flow prawn noodles? Yes, please.</p>
<p style="text-align: justify;"><img class="alignnone size-full wp-image-90865" alt="Penang Laksa" src="http://www.ladyironchef.com/wp-content/uploads/2016/03/Penang-Laksa.jpg" width="710" height="473" /></p>
<p style="text-align: justify;">Penang Laksa should be two things &#8211; tasty and sour. By sour, we mean that very distinct taste from the Assam paste that differentiates this dish from everything else.</p>
<p style="text-align: justify;">The Assam Laksa is prepared with fresh Barramundi Fillet to amp it up a notch and we definitely appreciated that extra premium touch.</p>
<p style="text-align: justify;"><img class="alignnone size-full wp-image-90863" alt="Penang Bak Kut Teh" src="http://www.ladyironchef.com/wp-content/uploads/2016/03/Penang-Bak-Kut-Teh.jpg" width="710" height="473" /></p>
<p style="text-align: justify;">Chef Andy wanted a way to fuse Malaysian-style Bak Kut Teh &#8211; which is typically herbal &#8211; with the peppery style that Singaporeans are familiar with.</p>
<p style="text-align: justify;">So, he reinterpreted both traditional Bak Kut Tehs and came up with his &#8220;fusion rendition&#8221; &#8211; a broth that has a primary herbal note, with an underlying peppery base that is not overwhelming, yet distinct enough for that kick. Pig stomach, Kurobuta pork ribs, beancurd skin and more are all the goodness you can find in the soup.</p>

<p style="text-align: justify;">We must say that he did a fantastic job and we couldn&#8217;t stop ourselves from going for second helpings.</p>
<p style="text-align: justify;">The Cuttlefish Kang Kong is synonymous with Penang and it might look simple but the actual process of making the sauce from scratch is already an arduous one.</p>
<p style="text-align: justify;">It is unbelievably tasty with crunchy cuttlefish, nicely blanched Kang Kong and the &#8216;glue&#8217; that holds the dish together &#8211; a special sweet sauce all the way from Penang itself. You must however, dip into some of the belacan chili at the side for the spice that will elevate the taste of the dish.</p>
<p style="text-align: justify;"><img class="alignnone size-full wp-image-90861" alt="Lor Bak" src="http://www.ladyironchef.com/wp-content/uploads/2016/03/Lor-Bak.jpg" width="710" height="473" /></p>
<p style="text-align: justify;">The Lor Bak is a mix of Ngoh Hiang, ginger, Century egg and more &#8211; all to be eaten with the dip served on the side. While this dish was not as exciting as the rest, we thought it was still very well put together and serves as a nice appetiser to kickstart your meal.</p>
<p style="text-align: justify;"><img class="alignnone size-full wp-image-90856" alt="Assam Prawn" src="http://www.ladyironchef.com/wp-content/uploads/2016/03/Assam-Prawn.jpg" width="710" height="473" /></p>
<p style="text-align: justify;">Could we be anymore impressed with this dish?!</p>
<p style="text-align: justify;">These Assam King Prawns was easily the highlight of our entire meal. Because it was deep-fried first before tossing in the sauce, all the juices and flavours from within the prawns and the heads are amplified in the process. The large prawns remained succulent and we almost wanted more of the Assam sauce just because we couldn&#8217;t get enough of it.</p>
<p style="text-align: justify;"><img class="alignnone size-full wp-image-90868" alt="Rojak" src="http://www.ladyironchef.com/wp-content/uploads/2016/03/Rojak.jpg" width="710" height="1065" /></p>
<p style="text-align: justify;">Penang rojak is not that different from the ones we have locally and the one by Chef Andy is pretty good. The peanut sauce was spot on without being overly rich nor cloyingly sweet, and pineapples were fresh and crunchy just the way we like it.</p>
<p style="text-align: justify;"><img class="alignnone size-full wp-image-90867" alt="Popiah" src="http://www.ladyironchef.com/wp-content/uploads/2016/03/Popiah.jpg" width="710" height="473" /></p>
<p style="text-align: justify;">We also sampled the Popiah and Kueh Pie Ti and they were both really tasty. The Popiah in particular left a lasting impression because Chef Andy incorporated XO sauce into it for a flavour boost. Blue crab meat lumps are also used to give it an uncommon textural variation.</p>
<p style="text-align: justify;"><img class="alignnone size-full wp-image-90858" alt="Chendol" src="http://www.ladyironchef.com/wp-content/uploads/2016/03/Chendol.jpg" width="710" height="473" /></p>
<p style="text-align: justify;">We couldn&#8217;t call it a day without at least a spoonful of the Famous Penang Teow Chew Chendol that has Pandanus Rice Jelly, fresh coconut cream, red bean and an optional durian paste that you can add on.</p>
<p style="text-align: justify;">Now, does that not sound exciting?</p>

<p style="text-align: justify;">A selection of Nyonya Kuehs are also part of the Penang feast line up, and they include the classics such as <em>Ondeh Ondeh, Lapis Sagu</em> (Rainbow Kueh) and Kueh Salat.</p>
<p style="text-align: justify;">If you prefer a slightly savoury option to complete your feast, go for the signature Penang <em>Ban Chang Kueh</em> which has been done in a &#8220;crepe&#8221; form stuffed with the usual condensed milk and crush peanuts. Chef Andy has also added sweet corn for a touch of sweetness and texture.</p>
<p style="text-align: justify;">You can also get drink such Milo XL (Milo Dinosaur), Bandung or Calamansi Juice for just S$6nett each.</p>

<p style="text-align: justify;">The most extensive list of yuletide delights that you can look forward to at Edge - Honey and Pineapple-glazed Gammon Ham, Special Christmas Terrines, Crispy Spice Pork Knuckle, Spiced Lamb Short Ribs, Roasted Beef Tomahawk and Traditional Roasted Turkey with Festive Trimmings. Expect several rustic side dishes like the roasted parsnip and brussel sprouts with bacon.  The buttery pumpkin soup also had our hearts &#8211; simple, but we loved the fine creaminess with sweet underlying notes of winter squash.</p>
<p style="text-align: justify;">Then, there are the festive desserts like Aniseed Ginger Vanilla Cheese Logcake, Amarena Cherry Cheese Cake and Flourless Mascarpone Honey Chocolate Cake and Fruit Mince Pie. Need we say more?</p>

<p style="text-align: justify;">Edge&#8217;s impressive dessert island takes the crown for this year&#8217;s best Christmas desserts. What you are looking at is the most dazzling dessert island that is filled with Western and Asian desserts, all freshly prepared in-house daily.</p>

<p style="text-align: justify;">It is a tough choice, but if we could only choose one reason to return to Edge, it would be the homemade gluten-free Nama chocolates that are available in three flavours &#8211; passionfruit, matcha and rum &amp; chocolate. It is frankly as good, if not better, than the famous Japanese chocolate brand that everyone knows of and associates nama chocolates with, and we can easily eat a dozen of these pillowy-soft chocolates. Unfortunately, they are exclusive to the buffet spread, else we&#8217;d gladly take some home.</p>

<p style="text-align: justify;">A stalwart in the local dining scene, Hai Tien Lo sets high standards for quality Cantonese cuisine and remains one of the <a href="http://www.ladyironchef.com/2014/05/singapore-best-chinese-restaurants/">best Chinese restaurants in Singapore</a>. It is the kind of place where you go for a smart yet casual luncheon with your business associates, to have dim sum with your friends during a gathering, or to celebrate your family member&#8217;s birthday.</p>

<p style="text-align: justify;">Since joining Hai Tien Lo in 2004, Chef Lai Tong Ping has taken on the duty of lifting the restaurant to greater heights together with his team of chefs. It is no mean feat to straddle the line between sticking to classic Cantonese cooking and coming up with new and innovative creations to satisfy the ever-growing demands of diners.</p>
<p style="text-align: justify;">To celebrate Chef Lai Tong Ping&#8217;s 10th anniversary at Hai Tien Lo, he has created &#8216;A Glorious Decade&#8217; &#8211; an sophisticated six-course menu (S$108/pax, minimum of two guests) which showcases his signature hand-crafted creations, the dishes that best represent the cuisine and food philosophy at Hai Tien Lo.</p>

<p>Prelude to Gastronomy Discovery</p>
<p style="text-align: justify;">The first course is an exquisite display of an appetizer trio, featuring Sliced Barbecued Duck and Shredded Jelly Fish, Braised Homemade Beancurd with Minced Pork and Pine Mushrooms in Chef&#8217;s signature XO chili sauce, and Crispy Prawn in sesame sauce.</p>
<p style="text-align: justify;">It is a wonderful play of flavours and textures that is worthy of a palate explosion &#8211; the barbecued duck was perfectly roasted and utterly delicious; the rich and intense broth that has been simmered with chicken, turkey and bacon for eight hours complemented the silky smooth homemade beancurd so perfectly; and the fresh and crunchy prawn comes with a coating of a special sesame sauce that is particularly addictive.</p>

<p>Soul Food</p>
<p style="text-align: justify;">Next, we had the Braised Fish Maw with Dried Scallop in Supreme Chicken Stock. Soups are the best gauge of the standards of a Cantonese restaurant, and Hai Tien Lo&#8217;s rendition easily passed the test with flying colours. Rich, deep and jam-packed with flavours, this is perfect food for the soul, indeed.</p>

<p>The Perfect Pairing</p>
<p style="text-align: justify;">Succeeding the soup was a dish of Sea Perch that was filleted and presented in two ways. When dining at a Chinese restaurant, we always have difficulty trying to decide on the cooking style for fish. Should we go for a light and delicate steamed fish or should we have a deep-fried fish? Decisions, decisions, decisions&#8230;</p>
<p style="text-align: justify;">Chef Lai Tong Ping&#8217;s &#8216;The Perfect Pairing&#8217; solves the dilemma. Steamed with green minced onion sauce, the first slice of sea perch was light and delicate on the palate. The deep-fried sea perch was wonderfully flavoursome and not greasy at all. Enhanced with a homemade champagne sauce, this version is fit for royalty.</p>

<p>Understated Sophistication</p>
<p style="text-align: justify;">Slow-cooked for four hours, the fork-tender Braised Pork oozed with flavours and a comforting aroma, reminiscent of Grandma’s cooking. The addition of preserved vegetables added an element of surprise and completed the dish with a depth of flavour. Accompanying the pork ribs was the well-loved deep-fried bun &#8211; perfect to mop up the pork ribs sauce. We won&#8217;t be forgetting this dish any time soon.</p>

<p style="text-align: justify;">Wok-fried Fish Noodles with Sea Cucumber and Scallop &#8211; it is hard to not fall in love with this dish. The fish noodles were made up of long strips of fresh fish paste that had an unparalleled sweetness that complemented the luxurious combination of the sea cucumber and scallop. Talk about having the best of both worlds!</p>

<p style="text-align: justify;">To end the six-course meal, we experienced Chef&#8217;s Signature Dessert &#8211; a trio of Mango Sago, Osmanthus Jelly with Wolfberries and Avocado Cream. Mango Sago, a popular Chinese dessert, is always a must-order, and Hai Tien Lo impresses with this classic dessert. Osmanthus Jelly has always been food for the Queen, and yes, you are Hai Tien Lo’s esteemed diner, so please help yourself to this. And the Avocado Cream – so smooth, so rich, and so creamy with a hint of soya bean is so very heavenly.</p>

Besides, who can resist a cupcake that is dressed up in a rich and decadent dressing? However, our hearts strayed after trying the new <strong>SuperMuffins from Pacific Marketplace at Pan Pacific Singapore</strong>.</p>
<p style="text-align: justify;">The SuperMuffins are a range of five savoury muffins that come in the most extraordinary flavours; nothing you&#8217;d usually associate with muffins, and every bit surprising! Among the five, our favourites are Ms Piggy (S$7), which is a unique cross between a muffin and char siew bao made up of sweet and juicy barbecue pork and piquant salted egg yolk; and The Hulk (S$5) &#8211; a combination of mushroom, cheese, and cream in a savoury spinach crust.</p>
<p style="text-align: justify;">Krrish (S$5), Chicken Run (S$7) and Minotaur (S$7) complete the SuperMuffin lineup. Vegetarians will love Krrish for its potato filling power-packed with Indian spices. But for meat lovers, we recommend Chicken Run – succulent chicken cooked in Shao Xing rice wine and garlic chives &#8211; or Minotaur, flavourful French style braised oxtail encased within a gruyere-infused crust.</p>

<p style="text-align: justify;"><em>Rang Mahal</em> is definitely top of the list when it comes to <em>fine dining Indian Restaurants in Singapore</em>. Besides the flagship outlet at Pan Pacific, the Rang Mahal Group comprises Vansh at Stadium Waterfront, and <strong>Rang Mahal Pavilion at Resorts World Sentosa</strong> (RWS).</p>
<p style="text-align: justify;"><span id="more-16344"></span>Located at the lobby level of Hard Rock Hotel in RWS, <span style="text-decoration: underline;">Rang Mahal Pavilion</span> is a stylish Indian restaurant where tradition meets modern. A stunning wall feature of brass drums fronts the restaurant. Inside, traditional Indian musical instruments are suspended from the ceilings of the main dining hall. The posh interior sets the tone for an exquisite dining experience.</p>
<p style="text-align: justify;">For starters, we had the Aromatic Cheesy Mushroom ($14), which was light and tasty. We continued with a simple Paneer salad that came with homemade tandoori cottage cheese.</p>

<p style="text-align: justify;">The Tandoor  Sampler ($18 half, $32 full) was chosen to showcase the combination of chicken and fish tikka,  with garlic prawns served on a sizzler. The platter is great  for sharing, and it allows you to try the best of what Rang Mahal Indian Restaurant has to offer.</p>
<p style="text-align: justify;">Out of the three items, my favourite was definitely the tender and succulent chicken tikka. The fish, on the other hand, was slightly too dry.</p>
<p style="text-align: justify;">If you  are fond of a particular dish, you can always order them separately. A  full portion of the Chicken Tikka goes for $22, whilst their signature  Tandoori Garlic Prawn is available for $30.</p>

<p style="text-align: justify;">A basket of naan (plain, garlic and butter) quickly came our way with the curries, and they were the perfect vehicle to soak up the curry gravy.</p>
<p style="text-align: justify;">Amongst the vegetarian curries available on Rang Mahal&#8217;s menu, we had the Patiala Aubergine ($18) which was excellent. I&#8217;m not a big fan of egg plant, but I thought that the curry had a good combination of flavours. If you don&#8217;t fancy having egg plants, they have seven different curries on the vegetarian selection, with prices ranging from $15 to $20.</p>
<p style="text-align: justify;">The non vegetarian curries are generally more exciting (at least to me). You can choose from either the signature Murgh Tikka Masala &#8211; tandoori chicken tikka in a full bodied bell pepper and tomato masala, or the Gosht Masala &#8211; with tender cuts of lamb simmered in smooth house tomato gravy. Otherwise,  there are prawn curry with a saffron kick, or fresh fish fillet curry in aromatic coconut gravy.</p>

<p style="text-align: justify;">Although Nasi Briyani is a fairly common dish, Rang Mahal&#8217;s version was very delicious. Extremely tender lamb with fine Indian basmati rice. I&#8217;m not sure if I&#8217;d pay $25 for it, though.</p>
<p style="text-align: justify;">We were already very full by then, but it was impossible to say no to desserts. The two popular desserts on the menu are Rasmalai ($10) &#8211; cottage cheese dumplings in reduced milk, and Grape Kulfi ($10) &#8211; homemade grape flavoured frosty.</p>
<p style="text-align: justify;">Even though my previous encounter with Kulfi was not an enjoyable one, we eventually opted for the Indian ice cream as the hosts convinced me to give it a try. I must say the kulfi here was much better than the one that I&#8217;ve had before.</p>

<p style="text-align: justify;">Whilst the prices at <strong>Rang Mahal Pavilion in RWS</strong> are higher than the typical <em>Indian restaurants in Singapore</em>, the food is generally quite good and the 6,300 square feet restaurant is gorgeous.</p>
<p style="text-align: justify;">The main dining room can seat 130 people. It is a fantastic <span style="text-decoration: underline;"><a href="../2011/05/birthday-party-venues-singapore/">birthday party venue</a></span> if you want to invite a big group of friends. It&#8217;s also good for an intimate group dinner &#8211; the fine dining Indian restaurant has two separate private dining rooms that are perfect for <span style="text-decoration: underline;"><a href="http://www.ladyironchef.com/2010/05/best-lunch-singapore/">business luncheons</a></span> or small parties. For a slightly more affordable option, you can choose to try out the $28++ set lunch which consists of a soup, main course and dessert.</p>
