<p style="text-align: justify;">For the uninitiated, a Castella cake is a sponge cake from Nagasaki, Japan, known for its pillow-like appearance and moist interior. Its ingredients comprise sugar, flour, eggs and starch syrup, however, the baking process remains a trade secret.</p>
<p style="text-align: justify;">At Le Castella in Tampines One, people begin queuing for this jiggly, yummy sponge cakes literally an hour before the shop even opens.</p>

<p style="text-align: justify;">The Cheese Castella cake (S$11.90) on the other hand is exactly the same except for a thin layer of cheese that adds a subtle saltiness and richness to the cake. This is one you have to enjoy hot in order to fully savour the melted cheese.</p>

<p style="text-align: justify;">The overall taste is pretty similar to a steamed egg cake you would typically find in dim sum restaurants. It is light, moist and not overly sweet—this would probably go amazingly well with a cup of tea in the afternoon.</p>
<p style="text-align: justify;">Le Castella’s cakes—or Castella cakes in general—should be enjoyed fresh out of the oven when it is still warm and fluffy. The textural experience transcends all other cakes out there but you would have to try it for yourself to understand why.</p>

The talented chef <!-- @font-face {   font-family: "Cambria"; }p.MsoNormal, li.MsoNormal, div.MsoNormal { margin: 0cm 0cm 10pt; font-size: 12pt; font-family: "Times New Roman"; }div.Section1 { page: Section1; } --> was previously from the ever-popular <a href="../2009/04/03/patisserie-glace-twice-in-four-days/">Patisserie Glace</a>, left and set up his own <a href="http://www.ladyironchef.com/2010/06/07/best-dessert-places-singapore/">dessert place</a> at the quaint Duxton Hill.</p>
<p style="text-align: justify;"><span id="more-10762"></span>I wouldn&#8217;t call the Napoleon ($6.20) a cake since it has a bigger proportion of puff pastry to cake. But this is exactly what I love about the Mille-feuille. Flor Patisserie&#8217;s rendition has a layer of cake in between the layers of puff pastry and cream. I love how the puff pastry crumbled in the mouth together with the cake and cream.</p>

I am usually a generous person, and sharing is a form of love to me. But you cannot say the same for Strawberry Souffle because no one is to fight with me over that dessert. I would peg that as inhumane.</p>

<p style="text-align: justify;">Essentially an open-faced cream puff, the Berry Choux ($6) uses Flor&#8217;s special pastry cream, fresh cream and berries. However, I wouldn&#8217;t pay six dollars for Patisserie Flor&#8217;s choux pastry since I can buy two of the best cream puffs at <a href="http://www.ladyironchef.com/2010/02/03/best-cream-puff/">Tampopo Deli</a> for the same price.</p>

Atop the pie sat the rich-coloured mango, <!-- @font-face {   font-family: "Cambria"; }p.MsoNormal, li.MsoNormal, div.MsoNormal { margin: 0cm 0cm 10pt; font-size: 12pt; font-family: "Times New Roman"; }div.Section1 { page: Section1; } --> looking pretty from all angles and our appetite were instantly whet from its delightful appearance. But apart from its superficial beauty, we were not expecting Heaven from the tart &#8211; or what the chef calls a Pie.</p>
<p style="text-align: justify;">Let&#8217;s make this clear first &#8211; the mango pie isn&#8217;t the regular &#8216;perfect 10&#8242; dessert you would fall in love at first sight. The one that I had grew on me after a few bites. I was so greedy about them that I took to licking my spoon to get every last smear of the pie. It took the promise of a &#8216;good dinner&#8217; to stop me from placing more orders at the Japanese cake shop.</p>

<p style="text-align: justify;"><strong>Patisserie Flor</strong> is located at the slope, right before the rows of Duxton Hill restaurants. The Japanese desserts are reasonably priced around $5-6 for each slice of cake. For lucky ones who work at that district, it is such a blessing because you can now cultivate the new habit of popping by for a tantalizing dessert after lunch!</p>

<p style="text-align: justify;">Tiong Bahru Bakery is opened in collaboration with celebrity baker, Gontran Cherrier. It started with much fanfare in the now-hip Tiong Bahru neighbourhood (Eng Hoon Street), and added a second shop at Raffles City shortly after.</p>
<p style="text-align: justify;">Some say they have the best croissants, though we do not agree. Nonetheless, with a comprehensive display of bread, pastries and desserts, there will be something for every taste bud.</p>

They serve home-style cakes like Salted Caramel Chocolate Torte ($8.50), a rich chocolate torte with layers of salted caramel and dark chocolate frosting; Big Lub’s Carrot Cake ($8.50), a modern carrot cake with the addition of cranberry and coconut; and Triple Chocolate Cake ($7) – a delicious and addictive dark chocolate cake.</p>

The good news is, we no longer have to fly all the way to Kyoto just to satisfy our cravings. Tsujiri has its first outpost in Singapore at 100AM Shopping Centre. If you have not been, come here for their famous green tea parfait.</p>

<p style="text-align: justify;">Wimbly Lu is among our favourite places for desserts, and we go there all the time and have, by far, tried all the desserts on the menu. We love the intimate and somewhat rustic atmosphere, and the fact that all the desserts are so reasonably-priced is what had our loyalty earned. While some of the desserts did not impress, the waffle and root beer cake are reasons enough for us to return time and again.</p>
