It has become a tradition for us to dine at Spice Brasserie every Christmas, and we are glad that despite the pandemic, this year is no exception.</p>
<p style="text-align: justify;">Helmed by Executive Chef Robert Chan, a buffet affair at Spice Brasserie is a satisfying one that does not require you to break the bank. With safety measures in place, it will be an a la carte buffet instead. But this is not a shortchange, by any means. If any, everything will be plated and served to you and you can truly dine comfortably in your space.</p>

<p style="text-align: justify;">Spice Brasserie&#8217;s Signature BBQ Black Char Siew on its own will make us return for another round of buffet because it is so darn solid.</p>

<p style="text-align: justify;">What is Christmas without a good turkey? Turkeys tend to have a bad name for being dry and tasteless, and we&#8217;ve had our fair share of mediocre turkeys, but never at Spice Brasserie.</p>
<p style="text-align: justify;">Taking center stage at the buffet is this Traditional Roast Turkey Carving with Gravy. Just good ol&#8217; turkey with no-frills marination, roasted at the right temperature to retain the moisture and slightly charred skin for extra flavours. Sink your teeth into the tender meat and fall in love with the classic flavour; so good, you don&#8217;t even need the gravy actually!</p>
<p style="text-align: justify;">But hey, try the gravy anyway.</p>

<p style="text-align: justify;">For the uninitiated, mai ya tang is maltose candy. It is a thick Chinese syrup and is often used as flavouring and/or to give meat its glossy look.</p>
<p style="text-align: justify;">Needless to say, the Mai Ya Tang Glazed Ham with Pineapple Sauce at Spice Brasserie is a beautiful one. Just look at that glorious glaze! The ham was nice and juicy, with a slight sweetness in every bite. And don&#8217;t we all love free-flow ham, seriously? (Good) Hams are otherwise pretty expensive as they go by weight!</p>

<p style="text-align: justify;">Spice Brasserie&#8217;s rendition is one with thick chunks of egg &#8211; just the way we like it. It is tangy and sweet, not overly spicy, and makes the perfect dip for deep-fried mantou. Talk about having the best of both worlds &#8211; crabs and Christmas roasts! Fresh salmon sashimi is dressed in a marinade of lime and dried chillis, giving the silky salmon new depth of flavour. We simply devoured the sashimi – the lime and chilli marinade was just too addictive!</p>

<p style="text-align: justify;">Edge also plates up some seriously delectable renditions of our local classics. This year&#8217;s lineup includes Singapore Black Pepper Crab and Wok-Fried Kway Teow with Pacific Clams &amp; Eggs.</p>
<p style="text-align: justify;">Black Pepper Crab is a Singaporean favourite. Sweet crabmeat paired with a savoury pepper sauce that you simply can&#8217;t get enough of – what&#8217;s not to love? The fried kway teow is equally delicious – the charred &#8220;wok-hei&#8221; taste whilst prominent, still allows the flavour of the seafood shine through.</p>

<p style="text-align: justify;">The holiday lineup at Edge also includes a wide range of Asian cuisines. These Asian specialities will tantalize your tastebuds in the best way possible.</p>
<p style="text-align: justify;">If you&#8217;re a fan of spice, the peranakan Udang Masak Lemak Nenas is a spicy seafood curry with fresh prawns and tomatoes. The spice is strong but is balanced out by the sweetness of the tomatoes and the succulent prawns!</p>
<p style="text-align: justify;">You can also expect Saffron Turkey Tikka. Instead of the traditional chicken tikka loved by anyone who enjoys Indian cuisine, turkey is used. The juicy turkey meat is so wonderfully spiced and flavoured, it&#8217;s sure to be a hot favourite this season.</p>
<p style="text-align: justify;">The last dish hails from China – &#8220;Zha Jiang Noodles&#8221; with shredded cucumber and chilli. This Chinese cuisine classic is a mix of &#8220;QQ&#8221; noodles and a savoury meat sauce that&#8217;s impossible to resist.</p>

<p style="text-align: justify;">Our favourites were the tender Baked Whole Salmon, Crackling Roast Pork and the Grilled Beef with Roasted Potatoes! Not forgetting the umami-bomb that was the Beef Stew – fork-tender beef is stewed in a thick, rich savoury stew.</p>

Our favourite had to be the Durian Log Cake with such a fresh durian cream filling. Durian-lovers will have a new favourite dessert once you taste this indulgent log cake.</p>
<p style="text-align: justify;">If you&#8217;re someone who can&#8217;t go without a little alcohol in their desserts, the boozy brandy sauce for the Ye Olde English Fruitcake will have you craving for more!</p>

<p style="text-align: justify;">This is the station to worship and stuff your mouths full of sweet, chocolatey goodness, as they have a wide array of quality desserts, such as Nama Chocolates, petite cakes and chocolate pralines.</p>
<p style="text-align: justify;">Do not leave Edge without trying their amazing Nama Chocolates! They come in three flavours: Matcha, Rum Chocolate, and Raspberry. These tiny indulgent squares have a smooth, velvety texture that is dusted with fine cocoa powder. When we bit into them, they immediately melted in our mouths, oozing a thick, luscious filling.</p>
