<p>For those of you who are not familiar with FLIPPER&#8217;S, it is a famous soufflé pancakes chain in Japan.</p>
<p>FLIPPER&#8217;S opened its first outpost in Singapore at Takashimaya Shopping Centre, Ngee Ann City in Nov 2020.</p>
<p>FLIPPER&#8217;S Singapore obtained its halal certification for the Takashimaya outlet in September last month and our Muslim friends can also enjoy their popular soufflé pancakes.</p>

<p>Get transported into a cosy little Parisian cafe at Mother Dough, a Halal bakery-cafe that churns out arrays of impeccable, artisanal pastries. You&#8217;re bound to get lost in the mounds of fresh bakes set before you, but set your sights on their croissants. This cafe has certainly mastered the art of this tedious pastry.</p>
<p>Flawlessly flaky, buttery and crisp, their Almond Chocolate Croissant ($5.20) is stuffed with rich, luscious chocolate and frangipane cream. A generous studding of almonds seals the deal.</p>

<p style="text-align: justify;">There&#8217;s nothing too groundbreaking about an Australian-style cafe in Singapore. We mean, Singapore is basically filled to the brim with them. But, one that jazzes up into a swanky Asian bar by night? Now, that&#8217;s a head-turner.</p>
<p style="text-align: justify;">S l a t e . is the latest addition to Purvis Street, a small hip district that foodies flock to for a dignified brunch or laidback evening hangout. Opened by the team behind Miam Miam, this cafe-bar prides itself on its evolving menu which goes from hearty brunches to modern Asian tapas.</p>
<p style="text-align: justify;">The founding team had lived in Melbourne for about a year before moving back to Singapore, bringing back with them <a href="https://www.ladyironchef.com/2017/01/higher-ground-melbourne/">Aussie-inspired brunches </a>and secrets to a great cuppa.</p>

<p style="text-align: justify;">We dropped by during lunchtime and were warmly received by the very friendly owners.</p>

<p style="text-align: justify;">Their spacious interior is a blend of clean and classy vibes, finished with pops of blue to lend a touch of serenity.</p>

<p style="text-align: justify;">One of the first few things that&#8217;ll catch your eye is the hulking luminous shelf of spirits and wines that takes center-stage in the bar area. Their coffee machine sits quietly at the side, whirring away as it churns out flat whites and long blacks.</p>
<p style="text-align: justify;">Their lunch menu features small bites such as Seafood Fritters and Thunder Fries while their mains saw a mix of Asian and Western dishes.</p>

<p style="text-align: justify;">Our first dish was the Oxtail Ragout Rigatoni (S$16). Visually, it looked super appetising — a generous amount of rigatoni soaking in a jacuzzi of 8-hour-braised oxtail tomato stew and finished with a grating of Asiago cheese.</p>
<p style="text-align: justify;">Thankfully, it tasted as good as it looked. The rigatoni was perfectly al dente and had melded gorgeously with the sauce, which was well-seasoned and lightly spiced. The oxtail was really tender and had completely soaked up the essence of the stew.</p>

<p style="text-align: justify;">Sadly, the S L A T E . Chicken Rice ($13) didn&#8217;t fare as well. It wasn&#8217;t a bad dish, that&#8217;s for sure — succulent grilled chicken thigh, runny sunny side up and perfectly cooked rice. But, the whole dish didn&#8217;t seem to gel very well as a whole and felt slightly dull.</p>
<p style="text-align: justify;">We would have preferred if more flavour was infused into the rice and for a complementing sauce to tie the whole dish together.</p>

<p style="text-align: justify;">Although there were hits and misses, we thoroughly enjoyed our dining experience S l a t e. With their warm service, soulful food and great ambience, this establishment is just bursting with potential.</p>
<p style="text-align: justify;">We&#8217;re sure that with the right tweaks and improvements, they&#8217;ll soon be on their way to becoming one of <a href="https://www.ladyironchef.com/2018/08/bugis-food/">Bugis</a>&#8216; most flocked-to dining spots.</p>

<p style="text-align: justify;">If you were to look up the <a href="https://www.ladyironchef.com/2018/08/bugis-food/">best cafes in the Bugis area</a>, you would have a pretty hefty list. It&#8217;s definitely a hot spot for new openings with the abundance of shophouses and lots for retail and F&amp;B.</p>
<p style="text-align: justify;">Located at Jalan Klapa, near the North Bridge area and a few streets down of the famed <a href="https://www.ladyironchef.com/2018/10/haji-lane-food/">Haji Lane</a> and Arab Street, is Double Up Coffee. It&#8217;s a minimalist&#8217;s dream with stone seats, wooden furnishings and an overall industrial theme.</p>

<p style="text-align: justify;">First up, we definitely had to try their coffee. We ordered an Iced Latte, which they call an &#8216;Spro With Milk (S$5, S$1 for iced). We felt that their house blend of coffee was right up our alley – smooth, full-bodied and had a nice tinge of fruit lingering on our tastebuds as we sipped on the coffee.</p>

<p style="text-align: justify;">To complement our early-morning cuppa, we chose to have a slice of their freshly-baked Blueberry Crust (S$5.50). It&#8217;s an interesting pastry that we&#8217;ve never really come across before (almost like a cross between a baked galette and a pie). The pastry comes sprinkled in lemon zest and a dusting of icing sugar.</p>
<p style="text-align: justify;">The blueberry filling was what really blew us away. It wasn&#8217;t too sweet or too tangy – like a lot of pie fillings. It was balanced really well in between and had a great texture – not jammy and still having the mouthfeel of stewed blueberries. The flaky crust accompanied this filling harmoniously and we liked how it was accented by the brown sugar crystals that were probably pressed into the dough just before the egg wash-glazing and baking.</p>

<p style="text-align: justify;">Double Up Coffee is quite a great place to sit and sip on a cuppa with a friend, passing the morning. The cafe is quiet and the staff are pretty cheery to boot, so it&#8217;s well worth a short hike from Bugis station. If you&#8217;re into granite walls, minimal settings and a good cup of joe, you&#8217;re definitely going to love this cafe.</p>

<p style="text-align: justify;">The ever so popular Kyoto coffee chain % Arabica has finally opened their doors in Singapore at Arab Street! And at a pretty apt location we’d say. Striving to let people “see the world through coffee” as their philosophy, they have currently 36 stores in 10 countries.</p>

Our blend Caffe Latte (S$7) in short was aromatic from perfectly roasted beans which were soothed by the mellow creaminess of the milk. There was a pleasant bitter aftertaste that was not too overwhelming on the palate too.</p>

Earthy and smooth, % Arabica nailed the matcha to milk ratio, with the full-bodied milk harmonizing with the bitter notes of matcha.</p>
