Think about how much a cocktail would typically cost, and you would know that you are beginning your meal with value already.

GREAT APPETISERS TO START THE BUFFET

Appetisers range from a fantastic Smorgasbord station to adorably plated small dishes. The latter really impressed us with the intricate plating, coupled with the use of premium ingredients.

Our picks are Alaskan Crab Meat with Mango Jelly, Tiger Prawn with Green Mango, Tuna Tartare with Avocado Mousse, Seafood Ceviche with Spicy Dressing and more. These spherical beauties sure whet our appetites with the freshness and clean tastes.

Not photographed here but another one you would enjoy is the gazpacho. We love our soups hot, but for gazpachos, anything goes. That refreshing, chilled tomato soup by Hilton Singapore tastes so close to the ones we’ve had in Spain.

The Smorgasbord section here is a little different – in a very good way, of course. The charcuterie will be thinly-sliced for you at the station itself, with care and precision. The meats that are included in this section range from imported whole leg of Iberico ham to Saucisson sec cured meat.

A good range of olives and pates are also available to complement the cured meats. We don’t know about you, but olives always get us all excited. There are pitted and stuffed ones here, and the chefs will gladly explain their region and preservation methods.

THE FRESHEST SEAFOOD – OYSTERS, MAINE LOBSTERS, SCALLOPS

Now, we have arrived at the truly good part and everyone’s favourite – seafood! What’s not to love about fresh premium seafood, especially when you can have them free flow? Get ready, because the spread will make your eyes pop!

Think freshly shucked oysters (3 varieties), fleshy Maine lobsters, yabbies (a type of crayfish), half-shell scallops and more.

Can we just say how much we love the oysters in particular? Most brunches or buffet spreads only serve one type of oysters, but Hilton Singapore will offer you three – the ever popular Fine de Claire, succulent Irish oysters and Pacific Oysters.

The seafood is also served alongside fresh sashimi and a sushi selection.

A LA MINUTE SELECTION

One of the reasons why we were immensely impressed by the selections here at Hilton Singapore is the a la minute selection.

The residential dish is Scotch Egg with Truffle Hollandaise Sauce. Scotch Eggs are extremely hard make, even more so to perfect it. Here at the champagne brunch, have it unlimited – all you want. The perfect runny yolk is encased in tasty and well-seasoned meat, then drizzled with fragrant black truffle hollandaise sauce.

Another a la minute dish that is also included in the brunch line-up is the egg cocotte. So hearty, so warm and the addition of savoury meats made the dish a lot more dimensional.

Well, foie gras lovers would be elated to know that pan-seared foie gras is also part of the a la minute selection – unlimited. Hilton Singapore’s version is served with an apple and passion fruit compote, and the sweet-and-sour mixture cuts through the creaminess of the piece of liver so beautifully.

INTERNATIONAL COOKED DISHES

Pizzas, Asian dishes and even beef pho? They will have you covered in this section. Grab either a Seafood or Mushrooms & Anchovies pizza. And if you want something creamy and comforting, go for the Seafood Fricasse with Bisque & Parmesan. The Pan-Fried Chilean Sea Bass with Orange & Fennel Compote sounds boring, but the sweet compote brought out the freshness of the sea bass so well, you’ll love the combination.

For the Asian dishes, dim sum is a must and Hilton Singapore offers both Custard Bun and Braised Pork Ribs, alongside wok-fried dishes such as Stir-Fried Garlic Prawns with Cilantro and Kam Heong Style Crab; bursting with flavours and wok hei, this might be where your grandparents would camp at if they prefer only Asian food.

MEATS, MEATS AND MORE MEATS

If you love  quality meat selection, you will be glad to know that Hilton Singapore’s brunch includes popular meats such as Premium Flank Steak, Lamb Chop and even Tenderloin. All cooked on an open flame charcoal grill, to your preferred doneness with a much loved smoky flavour.

ROAST MEATS 

If you like your meat roasted, fret not; like we said, there is something for everybody.

Think Herb-Roasted Baby Chicken, US Prime Rib and Roasted Pork Rack. Despite being pre-cooked roasts, the meats were not dry and we enjoyed the seasoning of herbs, salt and pepper.

AMAZING SELECTION OF CHEESES

We have never experienced a fuller cheese spread than the one here at Hilton Singapore. A selection of more than 20 cheeses are available on the cheese board, and boy were we spoilt for choice.

Any cheese lover will go gaga over this spread that includes premium selections – Parmigiano Reggano, Fromage Du Maquis, Lavort, Comte, Bleu D’Auvergene and even Persille Du Beaujolais.

Capri by Frasers might be at the extreme East side of Singapore, but it is precisely its location that we appreciate. Be away from the crowd, and just retreat to a lush oasis of tranquility and quietness.

Capri by Frasers does not have the best pool though, but that is fine because we were pretty happy snuggling under the sheets in the bright room that is filled with natural sunlight. Right smack in the middle of Somerset, the new Hotel Jen @ Orchard Gateway is our prime choice when we want a staycation at Orchard Road that will not have our wallets take a beating. Strategically located right above Orchard Gateway – where Phoenix Hotel used to be at – this is one swanky property that is surprisingly very affordable too.

The hotel is not your over-the-top kind of fancy. Rather, it is fun with a touch of modernity, and kinda sexy but nothing intimidating. Bright colours dominate the decor and furnishing of Hotel Jen @ Orchard Gateway, and the mood board is that of young and trendy.

The rooms are nothing too special, but that’s fine by us because the fluffy white sheets are comfy all the same, and we get a view of the bustling Orchard Road. Toiletries are at the bare minimum, so we’d suggest bringing your own. If you are a tourists, setting Hotel Jen @ Orchard Gateway as your base makes commuting around a whole lot easier.

Over in the bathroom, you’ve got your bath tub and rainforest shower. And have we mentioned how toiletries make a great impact on our stay? Boy, were we pleased to see L’occitane stocked in the shower room.

Very sexy, and very elusive. The Scarlet Singapore Hotel is one boutique hotel that we really like for many reasons. It is not the fanciest, but it has a mardi gras touch that makes the whole place so regal and somewhat mystical. There are no facilities in the hotel to speak of, rest for a rooftop bar that overlooks the Southern part of Singapore.

But a night’s stay at The Scarlet is ideal for couples who want to spend some quality time together while being away from the world. The room is not too spacious but it covers your basics, and the bed is surprisingly comfortable and had us snoozing our alarms for more than an hour! Best part of The Scarlet? Maxwell Food Centre is just a stone’s throw away, so you never have to worry about going hungry.

We have stayed at several hotels in Singapore, and InterContinental Singapore is one of our favourite experiences. Where do we even begin? The Fullerton brand is in our list, and when we were invited for a one-night stay at one of the best hotels in Singapore, it was with much delight and excitement that we packed our bags and checked in to the gorgeous 99-room property that is perched atop the waters of the Marina Bay area. Needless to say, the view is a stunning one – a panoramic one that overlooks the beautiful skyline of Singapore, including Esplanade, the Floating Platform and the iconic Marina Bay Sands.

And our humble abode for that night was the Premier Bay View Room with Jacuzzi – quite a mouthful, but in essence, The Perfect Room for a couple. We had all the privacy that we needed, and being located on the first level makes it feel like we were staying in a water bungalow. An afternoon of soaking in the jacuzzi and hearing the calm ripples from the waters is such an indulgence and one that is unique to our experience with Fullerton Bay Hotel.

There is also a rooftop pool on the 5th level for guests who prefer to swim around in the sheer space, and to make things even sweeter, there are pool butlers who go around with fresh towels and light refreshments like fruit kebabs. “Can you recommend me a decent and affordable hotel in Singapore with a good location?” I get this question a lot from visiting friends and readers.

If you have friends who are asking for advice on where to stay in Singapore, or if you are looking to go on a staycation during the weekend, Studio M Hotel is the place to consider.

Studio M Hotel is relatively inexpensive for Singapore’s standard. Furthermore, the boutique hotel is at one of my favourite areas, Robertson Quay, which has plenty of good restaurants.

While the nearest train station at Clarke Quay is fifteen minutes away, Studio M is still within the central area and you can easily get a cab to the city for less than S$10.

The stylish and modern loft-inspired room is nice for a romantic weekend getaway. It is also cosy and comfortable for families.

That it is in a good location, in view of the Singapore river and just steps from Robertson Quay and Clarke Quay, makes Studio M not just excellent, but convenient – definitely an ideal place to stay when you are in Singapore.

My only grouse is that they are extremely popular with locals during the weekends; we had to wait for a room even though we checked in late at 3pm. Moreover, the hotel has limited parking lots, so it might be difficult for locals who drive.
