Two more weeks to Chinese New Year and Resorts World Sentosa (RWS) is all prepped and ready to ring in the new year with good fortune. As part of the Lunar celebrations, you can expect a whole line up of festivities, more than S$3,000,000 worth of prizes to be won and 8,888 lobsters will be served throughout Resorts World Sentosa’s huge variety of restaurants.

Now, we’re talking.

Be thrilled about sure-win prizes and a chance to win S$88,000 in cash, a brand new Citroën C4 Hatch, Poh Heng’s diamond jewellery sets and even a stay in the luxurious Ocean Suite with the Grand Lucky Draws* that will take place on 05 and 12 February 2017. Everyone will win a prize simply by spending S$100* (Mastercard® cardholders only need to spend S$80*) in a single receipt. Stand a chance to win RISIS golden eggs, Canon products, SilkAir air tickets and so much more!

Resorts World Sentosa is also treating you to amazing eats at their celebrity chef restaurants where reunion dinners are most befitting to be held at. There may be plenty of Lunar promotions out there, but this one at Resorts World Sentosa is pretty damn epic.

One of the major highlights this year is the massive lobster feast across the restaurants in Resorts World Sentosa.

Lobster is often referenced as the dragon of the sea. Dragons are known as auspicious mythical creatures in Chinese culture, in case you are still wondering why this “dragon feast”. Now, you can enjoy this luxurious seafood that will be prepared in various ways across the celebrity chef restaurants in RWS, including Japanese-style Lobster Gratin at Syun; Grilled Lobster at One Michelin-starred Osia Steak and Seafood Grill; and fresh and steaming hot Cantonese-style Lobster Congee at RWS’s first ever Supper Club.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins> <ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

Double-boiled pearl clam soup with snow pear and cordyceps flower; Pan-fried grouper fillet with purple sweet potato sauce and seasonal vegetables; Braised German Pork Knuckle with Foie Gras; and Braised scallops and egg white with Japanese noodles are all part of this magnificent menu.

If you prefer the usual steamboat, you can head over to Hard Rock Hotel Singapore.

Try the Prosperity Steamboat set that includes lobster, abalone, crabs and sea cucumber. Steamboat is a popular choice for many during Chinese New Year and the Prosperity Steamboat set (S$168++ for 2 persons) is just what the family will love.

Choose from the superior chicken, tom yam and spicy hot Sichuan broth as your base and you can cook a bunch of fresh ingredients that includes 600grams of lobsters, 6 Head Abalone, Indonesian Crabs, Kurobuta Pork, Hokkaido Scallops, Garoupa Fish Fillet, Oysters, Mussels, Sea Cucumber, Clams, Tiger Prawns, Pork Belly and more.

Also, you can alternatively choose to have your reunion dinner with an Asian buffet (S$88++ per adult and S$28++ per child) at the Ocean Gallery in S.E.A. Aquarium, one of the world’s largest aquariums. This is a unique experience unlike any other!

Kids will be thrilled to dine with the fishes and sea creatures in the massive aquarium. The best thing about the spread is that it is Asian-themed, with dishes from Singapore and the region. Enjoy Popiah, Kueh Pie Tee, Bak Kut Teh (Pork Ribs Soup), Vietnamese “Shaking Beef”, Peking Duck, Malaysian Assam Prawns, Java Chicken Noodles Soup, and Taiwanese Braised Pork Belly – just to name a few.

The festivities are not over just yet! Catch the popular Mulan The Musical at the Resorts World Theatre as a post-dinner activity with your loved ones. This Taiwanese musical has sold-out shows and achieved critical acclaim all over the region.

Hokkaido is one of the most popular Japanese destinations known for its agricultural produce and local delicacies. While it may be a popular holiday destination, some of us may not have the time and money to visit.

But here is your chance to experience Hokkaido from 18 to 27 November 2016, 11am to 10pm.

Think exquisite Hokkaido street food, an expansive array of premium sake and wine, exciting travel packages to Hokkaido for some winter fun and splendid creations at celebrity restaurants.

The 10-day Hello Hokkaido! festival held at Resorts World Sentosa will be bringing only the best of Hokkaido culture all the way to Singapore! Admission to Hello Hokkaido! is free and you can purchase your credits in advance here (from now until 17 November 2016).

Event credits can be purchased on-site from 18 November at a min. of S$20 with a min. top up of S$1 thereafter.

Here’s what you can expect from Hello Hokkaido! at Resorts World Sentosa.

GOURMET YATAI STALLS

A Japanese yatai street will be showcasing over 20 food and retail stalls where you can have your fill of Hokkaido Santouka Ramen, Wagyu Roast Don from Hokkaido Izakaya and Ohara Farm’s melon-flavoured soft ice cream (our soft spot!).

An exciting news for crab lovers—you get to choose between different varieties such as Blue King Crab, Snow Crab, King Crab and other Hokkaido specialities at the Crab Bash at the festival. Yes, we know! We are equally stoked!

Where else can you find the best produce from Hokkaido than at Hello Hokkaido! itself? Shop away at the retail stalls, featuring seafood produce flown directly from the fishery town of Esashi. Soup Curry Okushiba Syoten will be serving its shrimp soup curry ramen—a dish which is unique to Hokkaido.

Ladies may like to take note that there will be cosmetic products using natural ingredients from Hokkaido on sale at the festival too. Also, keep a lookout for handcrafts from Hokkaido as well.

AWARD WINNING SPIRITS AT SAKE BAR

It is no secret that the Japanese love their sake and you have to try their award-winning brews to understand why.

The sake bar at Hello Hokkaido! will be offering sake from four world-class breweries—Kitano-Homare, Hakodate Wine, Grande Polaire and Nippon Seishu, which happens to be the pioneer of sake production in Hokkaido.

Nippon Seishu will be offering 5 types of sake, while Kitano-Homare brewery will be showcasing 4 types of sake at the festival.

There is also a Sake Social Event (19 & 26 November 2016, 3 to 6pm) where a sake sommelier will share more about the Hokkaido sake breweries. He will also give his tips on how to pair sake with food bought from the yatai stalls.

CREATIVE MENUS AT CELEBRITY RESTAURANTS IN RESORTS WORLD SENTOSA

Nine celebrity chef restaurants will be presenting menus with the most sought after seafood ingredients imported directly from Hokkaido; think uni (sea urchin), kani (crab), hotate (scallop), and ikura (salmon roe).

GOOD VIBES ONLY AT HELLO HOKKAIDO!

This is one multi-sensory festival that aims to please more than just your tastebuds.

From 18 to 20 November 2016, be entertained by musical acts from female pop singer Ayano Mashiro and five-member girl group Milcs Honmono.

Award-winning establishment TungLok Heen is internationally-acclaimed Canadian Chef Susur Lee’s very first outpost restaurant. The celebrated Toronto-based chef has starred in cooking TV shows such as Iron Chef America and MasterChef Asia.

Chef Ken Ling – who has been working alongside Susur for nearly two decades – currently helms TungLok Heen’s kitchen and a meal there means an impressive selection of exquisite oriental delicacies prepared with expertly finesse.

The Cantonese word ‘Heen’ literally means pavilion and is aptly named after the restaurant’s vision of providing discerning diners a gourmet retreat. Indeed, TungLok Heen has successfully merged traditional and contemporary Chinese elements into a chinoiserie-chic destination.

Located at Resorts World Sentosa’s Hotel Michael, TungLok Heen has hit all the right spots with its age-old classics, exquisite innovations and elegant ambience. It is also worth mentioning that the culinary team has put in tremendous efforts in plating every dish so beautifully – so keep your eyes peeled as we reveal our dining highlights.

The stunning 106-seater TungLok Heen is ideal for many occasions – a business luncheon or family dinner, and there are three gorgeous private dining rooms that are available for advance bookings.

You have to start your meal with the Chilled Fresh Abalone and Hokkaido Scallop (S$20++). Served with Yuzu Sesame Sauce and Yuzu Soya Sauce, these fresh molluscs are served atop a huge spherical block of dry ice and decorated with edible flower petals. Watch in awe as the fog dramatically unfolds your delicious ice-cold appetiser.

Who says you can only have Yu Sheng during Chinese New Year festive period? Over at TungLok Heen, customers can defy all traditions and tuck into the refreshing Singapore Slaw (S$18++) at any time of the year!

Singapore Slaw is actually Chef Susur’s signature dish. Inspired by the Yu Sheng, it consists of 19 ingredients and his special sauce. It has been featured extensively by several international media and is definitely something that you should try when dining at TungLok Heen.

Our idea of comforting soup at TungLok Heen is the Double-boiled Superior Fish Bone Soup with Fish Maw (S$30++ per pax). It is a nourishing broth that is packed with collagen and tonics. So rich this soup is, because you are really sipping the essence of all the premium ingredients with every spoonful!

The Roasted Irish Duck (half duck – S$35++, whole duck – S$60++) is a must-order. Popularly known as ‘London Duck’ – think succulent flesh, fragrant fats and glistening aromatic crisp skin. It is one of the best renditions we’ve had, and while plump, it was not over-the-top gross that will have you feeling sick.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

Fans of crabs definitely have to give TungLok Heen’s White Pepper Sri Lankan Crab (Market Price) a shot. The gigantic shellfish is loaded with wholesome crabmeat and packs a peppery punch with every bite.

The Grilled White Sultan Fish with Hot & Sour Consommé (Market Price) is perfect for sharing and it was a crowd’s favourite on our table.

For the uninitiated, the White Sultan Fish is rich in Omega-3 oil and it has very delicate flesh that brings out a unique sweetness and amiable savoury taste.

The large fish is dunked in a flavourful clear soup. The addition of peppercorn added a kick to the consommé, making it so addictive with every sip.

And there are skewers to share too. The Boston Lobster (S$76++) and Rock Oyster (S$8++) are cooked with cheese and herbs, and the Kurobuta Pork Loin (S$20++ for two skewers) and Wild Mushrooms (S$16++ for two skewers) come with a charred fragrance that is smoky with every bite.

More meat? The Char-grilled Marinated Lamb Rack in Lamb Reduction (double-rack – S$22++, single-rack – S$12++) served with Fresh Chilli Mint-Chutney sure didn’t disappoint. The delicate red meat’s gaminess has been significantly reduced by the herbs.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins> <ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

It has a mix of square tables for groups of four, huge communal tables for big groups, and a couple of private rooms for those looking for well, a quieter dining experience. Things can get pretty busy during meal hours, especially on weekends so visit at ‘non-peak’ periods if you want a more intimate experience. Lunch is served from 11am, followed by high tea, dinner and then supper; it doesn’t break or end until 1am (on weekends) so you can walk in anytime in between.

Now to the food. For those who grew up on Cantonese cuisine, this restaurant is perfect for birthday celebrations. Whether it’s for your old folks or even yourself, the menu has a selection of favourite dim sums and classic stir-fried dishes that is sure to get quite the reception from gourmands. They specialise in the Canadian Geo-Duck Clams Two Ways (S$268++) – Sashimi and Stir-Fry.

The Double-Boiled Chicken Soup with Cordyceps and Fish Maw (S$38++) is a comforting broth with very huge fish maw pieces.

As one half of the newest addition to the dining options here, Fratelli Pizzeria is the more casual and communal side of the entire establishment, offering sharing plates and a huge range of authentic Italian pizzas. Fratelli Pizzeria has an amazing ambience for get-togethers with friends.

We were oddly drawn to the Baccala Pizza (S$36++), a pizza topped with cod fish and potato mousse. The combination of tangy tomato base and light airy mousse was such a wonderful one. We loved the Mare Pizza (S$68++) too, which is a classic seafood pizza. If you prefer pasta, the Gnochetti Di Patate Alla Piemontese (S$30) is a lighter gnocchi option.

The Paccheri Alla Vittorio (S$32++, Vegetarian option) is the definition of a simple, fuss-free and delicious pasta. The Paccheri pasta is tossed with tomato sauce, fresh basil and parmigiano reggiano cheese – balanced flawlessly. They have a ton of different meats and pasta options for you to pick from.
#4 OCEAN RESTAURANT – BEST PLACE FOR PROPOSAL

Ocean Restaurant is helmed by the great IronChef Cat Cora. It is one of the most stunning places to dine at in Singapore and a great spot for a special occasion such as proposing to your partner.

With a wide and unblocked view of the aquarium, featuring a huge number of underwater creatures, the restaurant specialises in sustainable seafood dishes.

Start off with Oysters on Ice (S$29++) – done three ways with three different toppings. Then, move on to a starter of romantic Sous Vide Salmon (S$28++), before finishing off with a Pan Seared Glacier 51 Toothfish (S$68). The Toothfish was cooked extremely well and had a texture akin to cod fish – smooth and creamy. Aren’t you also surprised that prices are reasonable for the quality and ambience?

#5 OSIA STEAK AND SEAFOOD GRILL – BEST PLACE FOR BUSINESS LUNCHEON

Osia Steak and Seafood Grill is an Australian-style restaurant, focusing mainly on meats and grilled items. Great precision is taken to ensure that every dish put on your plate is done to perfection. Bring your friends or business partners down for a nice meal here and start off with the Hot Seafood Plate (S$128++), consisting of grilled octopus, king prawns, white wine clams and more.

Then, you can move on to your mains. Two particularly popular choices are Byron Bay Berkshire Pork Rack (S$56) and Mayura Station Signature Full Blood Wagyu Beef Ribeye (S$180++). The pork had just the right amount of fat to lean meat ratio and the Wagyu is basically melt-in-your-mouth – especially if you order it medium-rare.

#6 TANGERINE – BEST PLACE FOR HEALTHY DINING

Located inside ESPA, Tangerine is a quaint and serene cafe that serves healthy food that actually tastes out of the world. Food here are low in calories and naturally healthier for your body. Each dish is plated so beautifully, and they deserve a spot on your Instagram feed.

Healthy food is often associated with bland and unappetising dishes, but at Tangerine, the dishes are an explosion of flavours – especially the Scottish Salmon Fillet (S$32++). The salmon was done so well, we polished the plate clean. We suggest finishing the meal off with the Compressed Tropical Fruit (S$16), a light and decadent end to your meal that is simple but refreshing.

Earlier last month, we had the privilege to hang out with Celebrity IronChef, Cat Cora. She was in town for a week, and we were really stoked to host her. One of our lucky readers also won the chance to dine at the stunning Ocean Restaurant by Cat Cora at Resorts World Sentosa.

Together, we spent the evening sampling her new dishes, and the experience of dining at Ocean Restaurant by Cat Cora is like no other. Few restaurants in the world have the opportunity to boast about being part of an aquarium, and Ocean Restaurant by Cat Cora is one of them.

Dinner was great. We had a ball of a time together. And Chef Catherine is the sweetest lady.

In conjunction with Father’s Day, our readers were tasked to share their fathers’ favourite fruits with us, and the lucky winner (picked at random) will win a dinner for four at Ocean Restaurant by Cat Cora. Together, we sampled Chef Catherine’s new creations, and the cherry on top was the special dessert that Chef Catherine prepared using Dad’s favourite fruit. Pineapple and banana it was; very tropical, very local-like.

We started the day with a local-style breakfast to show Chef Catherine all that our Singapore hawkers have to offer. What adjourned after was a round at the wet market, where Chef Catherine shopped for fresh fruits – pineapples and bananas, of course. You have to read on to find out what the special dessert is, because it tasted out of the world and everyone loved it so much that Chef Catherine is considering to place that item permanently in the menu!

It was a typical Friday evening, but it was an atypical one for us. You have no idea how we were so looking forward to dinner because, it is Ocean Restaurant by Cat Cora! If you haven’t been, you really should. It is one of those places you must dine at before you die.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

As the largest aquarium in the world, Resorts World Sentosa’s S.E.A. Aquarium is home to more than 100,000 marine animals of over 800 species. And the restaurant is right next to and has an unobstructed view of the large aquarium. It is a fascinating experience to say the least.

So what should you expect from the new menu?

No better way to start your meal than with an amuse bouse of Fresh Oysters – Chef Catherine’s version is prepared with passion fruit and watermelon salsa. With this very appetizing and innovative fruity take, who is to say that oysters are just oysters?

The Torched Brown Trout “Farbio” with Smoked Eel is plated with crunchy cucumber and caviar vinaigrette. This appetizer of petite pleasures combines the freshness of the ocean with life’s simplicity.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

And then, we have the Sautéed Langoustines. God, how we had loved this one so much! The orange-pink lobster is as sweet as lobsters should be, and it is served with a light crustacean cream, baby fennel, leek and soft herb. Nothing over the top; just a rustic take on the crustacean to create a taste to remember.

You know you are in good hands when the chef does something as simple as corn soup really well. The Charred Corn Soup is surely the best rendition we’ve tried. And your ordinary corn soup is elevated when served with a beignet of blue swimmer crab. So sweet, so hearty. And the cherry, we mean bacon on top is the perfect completion.

From the mains, we sampled the Fresh Sustainable Fish. Farmed in New Zealand, we are all for sustainable food. This fish dish is prepared with burned butter-balsamic emulsion with capers, smoked chives potato and grilled red endives. Totally digging that crispy skin that made such a lovely contrast to the smooth, white fish.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

The star dish of the night had to be the dessert that was specially created with the bananas and pineapples. You see, they are really simple ingredients, but Chef Catherine did a brilliant job by creating a chocolate dish with banana ice cream, shaved peanuts and cooked pineapple. If you think it looks pretty, you should try it for yourself to know how it is actually much tastier than it already looks!

Chef Catherine, please put this dessert permanently in your menu.

Resorts World Sentosa has a belt of dining outlets for all kinds of budgets and occasions, and we never run out of options whenever we are in the compound. We have our favourites, but recent new additions and revamped menus got us all excited.

First up is Syun – a Japanese outlet helmed by famous Japanese Chef Hal Yamashita. Joining the line-up of celebrity chef restaurants, Syun – which means a season of new beginnings – focuses on modern Japanese contemporary cuisine. The Singapore outpost is Chef Hal Yamashita’s first venture outside of Japan. Singaporeans’ love for Japanese food knows no boundaries, and this is one place you have to check out. We will share more in a bit.

Meanwhile, Thai Chef Ian Kittichai – who has 11 restaurants, including his flagship Thai Restaurant Issaya Siamese Club in Bangkok – has taken over the role of consulting chef for Tangerine at ESPA, and he has introduced a brand new menu which highlights his take on spa cuisine. Spa cuisine is known to be light and healthy, but Chef Ian Kittichai has elevated it to a whole new level. We will also be sharing some of the highlights from his new menu.

Now, mark your calendar. It’s time to head back to Resorts World Sentosa for more gastronomical escapades.

SYUN

Syun imports the freshest produce from Japan for all their dishes, and freshness is guaranteed when you dine here. The environment is that of a casual one, with nuances of ancient Nippon charm, and heavy with wood elements. Private rooms are also available for a more conducive dining environment; otherwise, it makes a great place for a comfort lunch over earnest Japanese cuisine.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

We really love Syun’s set lunches. They are focusing more on Jyu Box sets, with Sashimi and Nigiri sets as well. . An upmarket fine dining establishment by a celebrity chef usually comes along with hefty price tags, but we were pleasantly surprised by how affordable Syun’s set lunches actually are.

The Chirashi Sushi (S$32) is a new-found favourite that will have us returning again and again. You have no idea how picky we are about our Chirashi-don, but Syun’s version won our hearts for its generous chunks of sweet sashimi and ikura atop plump Japanese rice drizzled with a ginger-like sauce. The gorgeous flowers you see are edible, too! All Jyu Box Sets are served with Miso Soup, Steamed Egg Custard, and Green Salad Yuzu Ginger Dressing.

Fans of Chef Yamashita will be pleased to find his iconic dishes such as Sea Urchin Rolled by Wagyu Beef (S$15); and the Grilled Cod with Saikyo Miso, Yuzu Miso Sauce and Dried Mullet Powder (S$28 for 1 pax, S$48 for 2 pax). The latter is our favourite side dish – flaky-fleshed cod lavishly coated with a sweet-and-savoury miso sauce, grilled lightly to bring out the essence and sweetness of the fish.

Another dish to savour is the Sashimi Salad with Yuzu Ginger Dressing (S$28). Sashimi salads can be found anywhere these days, but we always prefer a classic one with no frills but quality fish chunks/ slices, crisp leaves and a kick-ass sauce. Yuzu Ginger sounds just about perfect, because the tangy-spicy dressing seeps in to the fish without masking its flavours, and leaves a lingering cool citrusy aftertaste.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins> <ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

Poultry lovers should try the Tangerine Chicken Roulade (S$22). A light Thai-style dish that uses high-protein sous vide free-range chicken breast that is cooked to fork tender, it comes with sautéed bell pepper, fibre-rich lily bulb and white onion in a Thai Mandarin sauce. Its calories count is 310kcal.

The Asian Style Sea Bass and Salsa (S$22) deserves a shout-out too – lightly pan-fried sea bass sits atop shredded sautéed Napa cabbage, and drenched in an Asian style salsa and lime chili sauce for a tangy, spicy surprise. This fish dish is perfect for ladies with a smaller appetite, and it has a calories count of 364kcal.

Need some sweets that will not bust your slimming plans? Sure, there is the Guilt-Free Chocolate Mousse (S$18) that is low in sugar. With a melt-in-your-mouth silky bean curd and 70% dark chocolate mousse concoction, this is one of the best chocolate mousses that we’ve had, and it is not fattening! Guess what? Its calories count is only 287kcal.

Tangerine is a sanctuary that we’d think of whenever we need to retreat to somewhere calming. Away from the stress and problems in the city, a quiet and healthy meal at Tangerine meal is vital for the soul and mind.

Having a meal at a Joël Robuchon Restaurant is not just about the food; it is about the overall dining experience right from the moment you step in to the restaurant.

When Joël Robuchon was in Singapore back in December, we met up with him for an exclusive session to get an insight, as well as to experience the magic in the restaurant’s kitchen - the sacred ground of haute cuisine. It was an unforgettable afternoon – to interact with the humble man, and to catch glimpses of his talented team at work.

Most people have the misconception that it is expensive to dine at a Joël Robuchon’s establishment. However, that is not necessarily the case. Joël Robuchon Restaurant and L’Atelier de Joël Robuchon at Resorts World Sentosa have just launched its new weekend set lunches and the prices are super reasonable for the quality of food you will be getting, and the luxe dining experience.

JOËL ROBUCHON RESTAURANT

If you’ve always wanted to dine at a Joël Robuchon Restaurant, the Sunday set lunch (S$78, S$98, S$118) is a great chance for you to sample executive chef Michael Michaelidis’s cooking.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

The 3-course set lunch (S$78) includes an amuse-bouche plus an appetiser or soup, a main course, a dessert, as well as coffee or tea served with petit four. Highlights include our favourite Le Bar, a luxurious pairing of Sea Bass and Langoustine with Fennel Foam and Sea Urchin, and Le Bœuf Wagyu, Grilled Wagyu striploin with spices and macaroni stuffed with foie gras and mushrooms.

L’ATELIER DE JOËL ROBUCHON RESTAURANT

L’Atelier de Joël Robuchon also has three set lunches (S$48, S$68, S$108) that are offered every Saturday. At S$48, the 3-course menu is an absolute steal! It features an amuse-bouche, 1 appetiser, 1 main course, 1 dessert and coffee or tea served with petit fours.

<ins class="adsbygoogle" style="display: inline-block; width: 336px; height: 280px;" data-ad-client="ca-pub-1199323522078805" data-ad-slot="9464314347"></ins>

With 6 appetisers, 8 main courses and 3 desserts to choose from, it can be quite a headache trying to decide what to eat. So let us help you – the standout dishes include LA SAINT JACQUES, Scallops Carpaccio in duo of Capellini Pasta and LE VACHERIN, Manuka honey parfait, ginger jelly and mango sorbet.

We love how the new set lunches offer plenty of options in each category for everyone, and for the very fact that it is also reasonably-priced; nothing too exorbitant that you have to pay an arm and a leg for it. We will be making regular trips back to L’Atelier de Joël Robuchon for lunch from now on. No reason to say no, right?

There are the kind of places where you bring your date to for a private celebration, or for a team lunch. Then, there is also the list for more intimate experiences with friends and families. For Chinese New Year 2015, Resorts World Sentosa has two perfect options for everyone.

Want an elegant space with top-grade Chinese cuisine for a night of sheer indulgence? Feng Shui Inn is the kind that fits the bill. Mark this place down and consider it one of the places to feast at.

Apart from Lo-hei of several options, there is an a la carte menu. The Poached Seasonal Greens with Live Lobster and Black Fungus (S$38 for a small portion) is highly recommended. For something even more flavourful, try the Pan-seared Oysters with German Pork Knuckle (S$68 per serving). This dish packs a wicked punch and is good for sharing. And for the prettiest dessert? The Soft Layered Cake with Custard & Golden Flakes (S$48 per whole cake) will set everyone’s hearts aflutter.

There are also set menus of different configurations, and prices start from S$1,188 for 6 persons.

If you prefer somewhere quieter and romantic, Forest is for you. Helmed by Chef Sam Leong and his wife, Forest, this modern outlet offers exquisite Chinese dishes in a refined setting.

Dine with your discerning loved one(s) at Forest with a range of lunch and dinner sets. To begin, every set comes with a fruity salmon yusheng. Something fresh and something different.

But if sets are too much for two, there is also an a la carte menu, from which we really love the Four Treasures Soup (S$32 per person). Braised with fish maw, sea cucumber, conpoy and crabmeat and served in a young coconut, this is one soup that is luxurious and oh-so-sweet. Mains includes Boston Lobster that is wok-fried with green chives and fresh lily bulb (S$58 per person), Canadian Geoduck Clam (S$38 per person) and Marble Goby Fillet that is steamed with yellow bean sauce (S$34 per person). But we’d go for the Kurobuta Pork (S$28 per person) anytime – charcoal-grilled pork that is accompanied with asparagus, this dish is a fine mix of sweet and savoury.

Of course, there are many more dining options over at Resorts World Sentosa. You can find out more from their website, or like them on Facebook and Instagram for more updates. For reservations, call +65 6577 6688 or email dining@rwsentosa.com

EXCLUSIVE: Chef of the century, cookbook author, and restauranteur with celebrity restaurants and outlets all across the globe – Hong Kong, Las Vegas, London, Macau, Monaco, Paris, Bordeaux, Taipei, Tokyo and Singapore… With a total of 28 Michelin Stars, Joël Robuchon is one of the most famous chefs in the world. And one of our favourites too, of course.

We met up with Joël Robuchon when he was in town to visit Joël Robuchon Restaurant and L’Atelier de Joël Robuchon at Resorts World Sentosa. It was an exclusive session, and we spent a morning chatting with him to find out about his thoughts about the world’s food scene, as well as catching up on the latest updates about his business. We also had the chance to experience the magic in Joël Robuchon Restaurant’s kitchen - the sacred ground of haute cuisine – to catch glimpses of the talented team at work, and to learn from executive chef Michael Michaelidis on how to prepare a Salmon Tartare.

Here are the things that you never knew about Joël Robuchon, as well as a recipe of a Salmon Tartare by Joël Robuchon Restaurant’s executive chef Michael Michaelidis.

#1 WHAT IS YOUR KIND OF COMFORT FOOD?

Joël Robuchon: No matter which part of the world I am at, I’m always working in my restaurants, trying out new dishes and recipes. Unlike most people, I do not have the luxury of sitting down for a full meal. I do not have any favourite food. It always depends on the occasion, the season, as well as the mood at that point in time.

The thing that excites me the most is the ever-changing seasonal ingredient and getting my hands on the highest quality. It is currently the white truffle season, so naturally the dish that I’d like to eat the most now is a plate of spaghetti with a perfectly boiled egg topped with lots of white truffle.

#2 WHAT IS THE TOUGHEST DISH/INGREDIENT TO PREPARE?

Joël Robuchon: One of the most difficult ingredients to prepare is black truffle. In order to cook black truffle well, the chef would need to have a lot of knowledge and technique so as to treat it properly in order to preserve and maximise the flavours.

While truffle is now aplenty and the audience might be confused about the grades, a real chef who uses only the premium grade is not one who sweeps you off your feet the moment he dishes out his creation. Quality truffle has to be handled meticulously, and it should perfume the food in such a way that only upon mixing or cutting up your food, and putting it in your mouth, then would the flavours be released in full force. That is the test for every chef.

#3 IS THERE SOMETHING THAT A NORMAL DINER WOULD NOT KNOW ABOUT L’ATELIER DE JOËL ROBUCHON AND JOËL ROBUCHON RESTAURANT?

Joël Robuchon: At every Joël Robuchon restaurant, there is a huge amount of preparation work done behind the scenes that customers do not see; we call that the mise en place. From picking the best and freshest ingredients; to scaling, deboning and cleaning the fish; cutting the various vegetables; and preparing the stocks, our chefs spend a lot of time on the preparation, because we take pride in every ingredient that goes in to your dish, and we only want you to have the finest of our touches.

#4 WHICH IS YOUR FAVOURITE JOËL ROBUCHON RESTAURANT IN THE WORLD?

Joël Robuchon: Always the one that I am at now. So, it would be Joël Robuchon Restaurant and L’Atelier de Joël Robuchon. (laughs)

#5 WHAT DO YOU THINK ABOUT SINGAPORE’S DINING SCENE?

Joël Robuchon: Honestly, this is not an easy question for me because I do not have much knowledge of the restaurants in Singapore. I’ve been to a few restaurants so far but I am not the most qualified person to discuss this. But I do love all the local food that I have tried so far.

#6 WHICH IS YOUR FAVOURITE LOCAL FOOD IN SINGAPORE?

Joël Robuchon: I appreciate local food like chilli crab, black pepper crab and chicken rice because they are flavourful and have a lot of characters.

#7 ANY PLANS TO OPEN MORE RESTAURANTS IN 2015?

Joël Robuchon: Yes, I do have some new openings coming next year. In December, L’Atelier de Joël Robuchon will be starting its operations in the centre of Bangkok. And before the end of the year, we are opening another restaurant, La Grande Maison that will be housed in a 19th-century mansion in the Bordeaux region. Also, we are looking to open our first L’Atelier de Joël Robuchon in Shanghai next year. It will be located along The Bund, and it is a beautiful spot to dine while enjoying the true Shanghai beauty.

#8 WHICH IS YOUR FAVOURITE CITY, AND WHY?

Joël Robuchon: I have too many favourite cities in the world, but one of the cities that holds a special place in my heart is New York City because it is a place with so much energy. There are always new things happening in the city, with new trends to explore. I find myself very comfortable and inspired whenever I am in the city.

Tokyo, another place that I love, is the same as New York City but with a certain refinement. I’ve been travelling to Tokyo for the past 40 years and it never ceases to impress me.

London is also an exciting city with lots of activities and exciting restaurant concepts that are truly special and characteristic. I get inspirations there too.

Advertorial

As the annual RWS Food Affair is nearing (14 to 22 September 2013), the excitement builds up and everyone is looking forward to a week of feasting. Last weekend, a group of 25 readers and friends joined me at Resorts World Sentosa for a preview of some of the exclusive menus by the celebrity chefs, and it was a fulfilling day spent over good food and company at the dining destination of Singapore – Resorts World Sentosa.

If you follow me on Instagram, you might have seen a few posts of the tantalising dishes we had. Check out the hash tag #rwsfoodaffair and you will see everyone else’s posts too. For more details about the RWS Food Affair, log on to www.rwsentosa.com/rwsfoodaffair.

We started off with a 3-course lunch at Tangerine; a cosy spa cafe nestled in the tranquil ESPA. Helmed by Chef Sam Leong, Tangerine boasts a healthy menu that emphasises a lot on eating whole foods with maximum nutrition without compromising on flavours and aesthetics. We had the honour to have had Chef Sam Leong himself and Chef Forest Leong – his wife and Consultant Chef at Tangerine – introduce the menu of the day to us all. With Chef Forest Leong being a Thai, we learned more about her choices of inculcating Thai flavours to the dishes at Tangerine. And with that, everyone was filled with anticipation for a great lunch ahead.

Also, read more to find out about the 5-course dinner menu – a combination of Forest, Osia, and Executive Pastry Chef Kenny Kong’s RWS Food Affair menus served during the 9 days - that we had at Forest.

A refreshing serving of The Summer Green & Cress, Extra Virgin Coconut Vinaigrette was up first. The uncommon choice of using coconut as a primary taste is because we learned from Chef Forest that coconut oil is actually extremely healthy and we were all taken aback by surprise to know that it is a better option than olive oil.

For main course, we get to choose between Chef Forest’s Sous Vide Salmon with Olive Dust, Confit Tomato & Green Pea Mash or the Organic Lemongrass Chicken on Brown Rice with Pepper Tamarind Sauce.

The Sous Vide Salmon was everyone’s favourite. It was served at room temperature because the cooking is done at a temperature of 48 degrees celsius to retain the omega 3, a good essential fat that does your health wonders. The result is a fresh, flaky and smooth orange fish that is bare from seasoning rest for some olive dust, yet heavy on flavour from the fish’s natural sweetness.

The Organic Lemongrass Chicken is an equally appealing main course. The chicken is so cleverly prepared with soft hints of the famed Thai spice, but what stands out even more is the brown rice. Brown rice is something that most people would associate with healthy and bland food. But Chef Forest’s rendition changed everyone’s perception of the otherwise boring food. We suspect that Chef Forest added heroin to make them so addictive.

This is really the best reflection of Tangerine’s cuisine – to serve wholesome and healthy food without compromising on the tastes.

Dessert was an interesting Chilled Avocado & Chocolate Sorbet. Chocolate and avocado may seem like an unusual pairing, but trust me when I say that this is really an ingenious creation. Made from 72% dark chocolate, the sorbet is that of a rich and genuine yet not overly sweet chocolate dessert. And the avocado is made into a cream-like texture, and though some of the guests were not avocado lovers, they enjoyed it all the same.

Dining at Tangerine is indeed a guilt-free experience, and it is fast becoming my favourite cafe for healthy and affordable wholesome food.

We continued our indulgence with an exclusive 5-course dinner menu at Forest, and the menu is a combination of Forest, Osia, and Executive Pastry Chef Kenny Kong’s RWS Food Affair menus served during the 9 days.

Our dinner began with Chef Mike’s (Forest) Pan-seared Chicken Breast with Herbs & Apple Salad. Don’t be deceived by its seemingly simple appearance – it took us completely by surprise. The chicken is slow-cooked for 45 minutes at 50 degrees, resulting in one of the most tender chicken breasts we have ever had. The Thai-inspired Apple Salad complemented the Pan-seared Chicken Breast perfectly with its sweet and sour notes.

Next, we had Burnt Potato broth prepared by Chef Douglas (Osia). The earthiness of the burnt potatoes essence broth was balanced with the cubes of Black Angus Beef tartare and Bone Marrow, and while it is like a consomme, it is really an interesting dish because, who would have thought the simplicity and earthiness of burnt potatoes could make such a good soup?

The Steamed New Zealand Cod with Yuzu Mushroom Sauce (Forest) is yet another impressing course on the menu. The Yuzu mushroom sauce gave the dish lightness and did not overpower the freshness of the cod.

Chef Douglas’s signature Milk Fed Lamb Short Loin and Rib tasted as good as it looked. It was beautifully plated with Swede Carrot Purée, Romanesco, Garlic Cream Spelt and Tawny Port Jus. The milk-fed lamb short loin was buttery and milky, and it is perfect for people who are not fans of the gamey smell of lamb meat. Also, we appreciate the fact that the meat comes in two styles so that you can savour the contrast of the different parts.

And there is no better way to complete the meal with a serving of Sweet Temptation by Executive Pastry Chef Kenny Kong. It is a brilliant creation, one that stops you in your tracks and blows you away with the exquisiteness and complexity. The pairing of Yuzu Mango Cremuex, Gula Melaka Streusel, and Milky Lemongrass Sorbet is flawless, and every mouthful is a symphony of contrasting flavours and textures.

Chef Kong will be serving this dessert as part of the RWS Celebrity Chefs Dinner (S$288++/pax) at the Ocean Gallery on the 18 September. This is a very exclusive dinner for only 250 guests, and you will not only get to dine at the beautiful S.E.A Aquarium, but also get to rub shoulders with all the famous Celebrity Chefs, such as Joël Robuchon, Cat Cora, Sam Leong and more.

Advertorial

With more than 60 food & beverage outlets, Resorts World Sentosa (RWS) is the dining destination in Singapore. Whether it is a casual family dinner, a catch-up session with friends over a good meal, or a romantic dinner with your date, there are plenty of options to choose from when you are dining at Resorts World Sentosa.

Food lovers will be thrilled to know that Resorts World Sentosa is organising its inaugural RWS Food Affair from 14 to 22 September, offering specially crafted menus by six of its celebrity chefs – starring Joël Robuchon, Cat Cora, Sam Leong, Douglas Tay, Li Kwok Kwong and Kenny Kong. For regulars like me who have been to most of the restaurants, it is a good time to return to sample the new menus. And for people who have always wanted to try, but never had the chance, this is the perfect opportunity to finally dine at the celebrity chefs restaurants at Resorts World Sentosa.

Resorts World Sentosa has kindly extended a 15% discount to my readers – quote ‘ladyironchef’ when making reservations at the restaurants for RWS Food Affair. I am sure you are as excited as I am, so read on to find out more about the highlights at RWS Food Affair, or go to their website www.rwsentosa.com/rwsfoodaffair for more details. I will also be organising a food outing at Forest on 7 September, where RWS has specially concocted a menu just for you readers. More details to be released next week – I hope to see you for dinner!

There are many reasons why you should look forward to RWS Food Affair. First and most importantly, the celebrity chefs have lined up impressive menus that promise an epicurean experience that lives up to its reputation. Second, fans of Chef Joël Robuchon and Iron Chef Cat Cora can meet their favourite chefs during this period. Third, Chef Sam Leong will be holding a special masterclass that comes with a four-course lunch.

Last but not least, there are many exciting activities and food promotions going on during that week, including a Crab Dinner Buffet, RWS Stars Chefs Dinner Buffet, Asian High Tea Buffet and a Universal Studios Singapore® Madagascar Breakfast Buffet, where there will be meet and greet sessions with Marty. Gloria, King Julian and the Penguins.

Aquarium. The six celebrity chefs have come together to each create a course for this spectacular dinner, which truly showcases the gems of RWS’s restaurants.

You will be treated to Ayala Brut Majeur NV champagne upon arrival, and free flow of Penfolds Bin 2 Shariaz Mouverdre and Penfolds Koonunga Hill Autumn Riesling during dinner.
