French toast, smoked salmon benedict, sushi, salami, truffle pasta, slow roasted wagyu rump, roast duck, free flow of wines and sparkling, and a tasting table with more than 10 wine labels from around the world… Now, that is one brunch that is worth waking up to.

Be spoilt with the enthralling selection of live stations plus specially crafted dishes that are served to the table, and dine at the highest vantage spot in Singapore with a million dollar view of the city’s skyline. With Valentine’s Day just round the corner, you may be looking for a romantic dining spot to impress your date. We would recommend Stellar’s Champagne Lust Pink Brunch (more on that at the end of the post), which is a special party on 16 Feb. But first, allow us to share with you the highlights from Stellar’s Wine Lust Sunday Brunch.
With a melange of food choices from the eight live food stations – Sushi, Eggs, Salami and Salad, Meat Carvings, Truffle Pasta, Cheese Trolley, and Desserts – kick start your Sunday with a gastronomical exhilaration.
We suggest to start with the egg station. The offerings here include Omelette, Smoked Salmon Benedict, Crispy Smoked Bacon, Mini Breakfast Tacos, but what we could not resist is the excellent French Toast. It was so warm and fluffy and sweet that we could not resist a second serving.
Our eyes lit up at the Stellar Sushi counter. The nigiri and maki rolls were screaming at us. There might not be a comprehensive selection of sushi, but for what it lacked in variety, it more than made up for it in quality. And we would gladly choose quality over quantity anytime.
After inhaling a copious amount of wines and sparklings, we moved on to the Meat Carving station. Roasted pork belly with chilli apple sauce, Roast Duck, Slow Roasted Wagyu Rump, Spatchcock Chicken with peri peri, Rosemary Roast Leg of Lamb, accompanied by roast vegetables and sauces – this is the dream of every carnivore. The highlight for us is the roast duck, and it was so good that it would put most of the traditional roast meat restaurants to shame.
A fine selection of salami and saucisson awaited us next. If you want to feel less guilty about over-indulging, there is also a salad bar. But we say forget about your diet for one day and just enjoy yourself! The spicy salami is a perfect snack for your wine!
We absolutely loved Stellar’s truffle pasta served in two styles – creamy Carbonara and olive oil Aglio Olio. Perfumed with a strong hint of truffle, the fresh pastas were expertly cooked to al dente. Such is the quality of the food at Stellar’s Sunday Brunch that we were in a dilemma whether we should go for seconds.
Claypot Chicken Rice is popular in many Asian countries, and is usually an ideal dish for communal dining. Definitely not something that you would associate with Sunday brunch. So we were pleasantly surprised when Executive Chef Christopher Millar served us his rendition ala tableside style. Inspired by the Korean lettuce wraps, each portion of the claypot rice is presented in a crisp iceberg lettuce. Besides the traditional ingredients, he also added olive oil and chorizo to give the classic dish an unexpected but delightful twist.
In between stations, we also checked out the tasting table where guests can taste-test up to 10 wine labels. And if you find something that you like, the wines are available to purchase to take home at wholesale prices.
After what seemed like an eternity of pigging out, and having seconds of our favourite items, we found ourselves marvelling at all the desserts. One thing that stands out about 1-Altitude’s Sunday Brunch is helpful staff who are always on standby to help you with everything. The staff in-charge of the dessert station helped to plate all the desserts nicely – Hazelnut Praline Cake, Gateaux Fromage, Mixed Nut Tartlets, Tangerine Cream Puffs, Mango Pannacotta, Mini Assorted Financiers, Strawberry Crumble, and Almond Cookies.
Everything was a joy to eat. The Hazelnut Praline Cake was done just the way we like it with the combination of our favourite things – hazelnut, praline and cake all into one. The Strawberry Crumble served with creme anglaise was phenomenal – every bite was better than the previous, and we could not stop eating it.
That is not all. After desserts, look forward to an array of artisanal cheese served at your table.
