Is this the roasted pork? Kinda confused as you referred to it as char siew. Anyway, it looks amazing. I think I am a noob when I say I seldom see Chinese food presented in such a... posh way. Heh.

This all sounds delectable. I think that must be crab in the second picture, because it seems the most likely to be prepared the way you describe. The dim sum looks fantastic, too!

I admit I’m confused by the stuff in the last photo, mostly because I have no idea what beetroot juice is like. Is it sweet? What does it do?
