The part of hire is fillet/ tenderloin and Katsu is pork loin/striploin. Naturally, hire katsu is more tender than rosu katsu. Bcoz of the fats present in the rosu cut, the texture tends to be chewy, while the former is more tender. ices last blog post..Xin Yuan Ji
