The vinegar black beans that Sir Haba produces contain several health benefits, and odd as this unlikely pairing may seem, it is actually a very versatile ingredient that you can apply in a variety of dishes.

Here are two easy recipes we came up with that you can incorporate vinegar black beans. The recipes ain’t anything near rocket science so anyone can attempt, we guarantee!

Black beans contain a wide variety of antioxidant and anti-inflammatory properties such as folate, magnesium, manganese, and zinc which are all nutrients associated with the preservation of cardiovascular diseases. Vinegar, on the other hand, acts as a detoxifier and it contains properties that enhance digestion and stimulate appetite.

Combining both of these superfoods optimizes the overall health benefits and nutritional values to the fullest extent, thus gaining two advantages with one single move.

The vinegar also softens the black beans, making them easier to consume, but instead of eating them plain from the jar which is often recommended, you can incorporate them into your everyday meals like what we did.

We created two simple recipes that fully bring out the flavours of Sir Haba’s vinegar black beans. Anyone can attempt them at home and we promise it will be a nutritious meal no less.

Vinegar Black Beans Recipe Steamed Fish

#1 CANTONESE STEAMED WHOLE SEA BASS

What You’ll Need:

1 whole sea bass
2 tbsp Hua Tiao Chinese cooking wine

Sauce:

3-4 tbsp of light soy sauce
1 tsp of sesame oil
1 tsp of sugar
2 tbsp of vinegar black beans
1 tsp of salt Salt
1 tsp of White pepper

Garnish 

1 stalk of cilantro
1 stalk of spring onions
2 red chilis
1 ginger

What To Do:

1) To make the sauce, combine the light soy sauce, sesame oil, sugar, salt, and white pepper and stir until salt and sugar dissolve. Set aside.

2) Next, season the sea bass with salt and pepper on both sides as well as on the inside. Make sure to not overdo it because the sauce itself contains quite a bit of salt.

3) Slice up a knob of ginger, chili and spring onion and lay them onto your serving plate. After which, lay your seasoned sea bass on top of the fish, add 2 tbsp of Hua Tiao Chinese cooking wine and 2 tbsp of vinegar black beans (with the vinegar) over the fish. Proceed to steam for 7-8 minutes.

4) After 7-8 minutes, remove the lid and pour the sauce over the fish. Leave to steam for another 2 minutes.

5) Remove your steamed sea bass and garnish with a mixture of fresh chopped cilantro, sliced chilis, ginger and spring onions and your healthy fish dish is ready to be enjoyed!

#2 MISO-GLAZED GRILLED PRAWNS WITH VINEGAR BLACK BEAN CRUMB

What You’ll Need:

4 – 6 large prawns
1 tsp of garlic powder

Miso Glaze

3 tbsp Miso paste
3 tbsp melted butter
2 tbsp mirin
1 tsp sugar
1 cup of water

4 tbsp vinegar black beans
1 tbsp Miso paste
1 tsp sugar
2 tbsp peanut oil

Garnish

1 spring onion

What To Do:

1) To make the miso glaze, heat up a cup of water in a pan along with your miso paste, mirin, and sugar. Allow the mixture to thicken and once it reaches a saucy consistency, add in a knob of butter. After the butter emulsifies and melts completely, set your glaze aside and allow it to cool.

2) To prepare your prawns like we did (this is optional), simply make an incision through the top of the prawns right down to the tail and push gently to allow the prawns to sit flat. Do not forget to remove the intestines!

3) Lightly rub some oil onto each prawn and season generously with garlic powder. Place your prawns shell-side down onto a smoking hot grill pan and allow it to cook. Do not be tempted to turn the prawns over just yet because what you want is to achieve those perfect grill marks.

4) Once the flesh of the prawn turns orange and white, brush your miso glaze over it and continue grilling for another 1-2 minutes.

5) To make the vinegar black bean crumb, simply pound 3-4 tbsp of vinegar black beans along with sugar, and 1 tbsp of miso paste in a mortar and pestle. Pound until it forms a paste and set aside.

6) Heat up some peanut oil and add in your paste. Allow it to cook for 4-5 minutes so that it develops a crispy exterior.

7) To bring the entire dish together, simply transfer your miso-glazed prawns onto a plate and garnish with some finely chopped spring onions as well as your beautifully crisp vinegar black bean and miso crumb.


We must admit that we had our doubts about vinegar black beans, but after realising just how many benefits a teaspoon of it can give and just how versatile it is as a condiment or main cooking ingredient, we have become converts and now eat it regularly!
